We were delighted when 2019 World Porridge Making Champion, Lisa Williams, invited us to Stennets Community Cafe in Trimley St Mary's in Suffolk, to show us how she makes her championship porridge.
As well as learning how to make the perfect porridge, you'll get lots of ideas for porridge toppings, including Lisa's very unusual personal favourite - soft cheese and chives!

Learned from a B&B hostess in Ireland that cream and Bailey's liqueur make a really tasty porridge. 😊

Hello from Montreal (Canada) I watched this nice video loosing the track of time.... very nice! Unfortunatly in Canada it would not be easy to find this brand of porridge.... but will look around, who knows... It is the first time that I was aware of the "spurtle" to stir the porridge.... will look also for it... Thank you again for this touching videos... Best regards from Montreal !

What a lovely message Daniel. I think that you can get Hamlyns products from Amazon and BritGrocer in Canada, however they are expensive over with you. You'll also be able to buy a spurtle from the Porridge Mom (theporridgemom.com) - a previous contestant in the World Porridge Making Championships. They are made in Canada - however the shape is different from a Scottish spurtle, which is pointed at the end!

Loved that :) I had to smile at the cheese, chive & ham porridge - one of my favourites is to make cheese porridge by grating cheese and mixing it in (then sprinkling more on top). I've always thought it goes brilliantly with cheese and never come across anyone else that does similar!

That sounds amazing. My husband eats his with salsa and avocado. He sometimes will add roasted veggies. Why not! After all, oats are a grain and don't always have to be served sweet.

What type of cheese you use? You just grate a handful in and mix through?

@@_wormlet Usually cheddar, but as long as it melts ok I don't see why anything wouldn't work. Yup, just grate however much you want in in and mix through :)

I can't find this Primula cheese in Ireland. Would a Philadelphia Chives flavour be roughly the same?

It would probably be very similar - Philadelphia might be a bit creamier. Let us know how you get on!

How much in gramme's is one cup of oatmeal? 6 Cups, so that 1704 mils of water?

Do we know what sort of temperate to cooking? So in summary, two types of oats, water, add salt when bubbling and keeping stirring.

Hi David, bring your porridge to a gentle simmer, then leave it on a moderate heat so it is just simmering while you stir it. Lisa uses pinhead oatmeal and medium oatmeal, but you can just use one or other, or both together. Enjoy!

@@hamlynsofscotland5333 Hi, i've tried using both 25g of each, i'm finding the pinhead a bit hard. I keep them in water over night, only thing i'm thinking i'm not cooking them long enough??? thanks David

@@beckham7hall yes, you have to cook porridge longer if you're using pinhead oats, even if you're soaking them overnight. We usually cook porridge for about four minutes on the hob. I'd try ten minutes if you're using pinhead oatmeal. Good luck.

Keep trying to like it with water rather than milk, but just can’t enjoy it. Love it with milk and sugar tho.

Have you tried half and half? Works well - not too creamy if you're trying for something a bit healthier.

I tried this exactly as per this video ...... it’s probably my heathen English pallet but for me it was the worst bowl of porridge I have ever eaten, just tasted of salt and I ended up putting a ton of sugar and milk to sweeten and flavour and felt sick afterwards. Think I’ll go back to microwave made with milf and a little sugar.

You really just need a tiny pinch of salt - it shouldn't taste salty, it should just be enough to enhance the flavour of the oats. Even if you are adding sugar and milk, a lot of Scots would still add a wee pinch of salt.
