My goodness , as I was watching and salivating my 70+ Somali mother came in to the room and started to watch too. She was nodding along to every step of the process and when you started to smash the ready rooti to make it flaky and not become stale we lost it. She gave you the ultimate Somali mummy shout out by flicking her fingers together and shouting look at my nephew. I have studied and tried many of the roti recipes available on Utube (including those of the “Trini and Guyanese professionals”) all with mixed results. It wasn’t until I tried and followed your method and techniques that I was able to achieve my goal - to reproduce the roti my mother (Guyanese) used to make, which in my book was the best roti in the world!. You are the only presenter that has revealed the importance of a moist/sticky dough to start with while providing the volume of flour/ingredients to number and size of rotis which induce an optimum thickness. My hat off to your Sir, you have shared and delivered the definitive method for making the “perfect” roti and I thank you.

My grand children will ate it with butter, as I am rolling the first roti my grand daughter will whisper to me number 1 for me Nana, then num 2 3 4,at the end for dinner time they cannot eat.i have to make huge amount when visiting my daughter in Melbourne. We have it with curry or pumpkin leaves or taro leaves mostly with anything.thank you for sharing.

Great job. I honestly don't go through so much to make my roti, maybe because I do it the Indian way. As you said its technique that makes it, I don't use a roling pin and I actually double and open them when one side is bake, in that way I do two roties at once and they comes out pretty well.

Thank you for this amazing video! Your technique for rolling up and tucking in the layers is really going to help in the future. One thing I will add, though, is that what you have made is actually a paratha (pronounced pa-raat-haa). If there is oil or ghee added in the dough balls to make layers, or to fry the roti, this automatically transforms it into a paratha. Roti has no oil except for when making the dough from scratch. Parathas are delicious and yours look very tempting!

Yes, I'm aware there are many Indians in Jamaica, but again roti is not a traditional Jamaican food, nor is it heavily associated with the island. Many Jamaicans I know have never had it. I'm not saying no one there makes it, again, I know there are many Indians in Jamaica, but it's not as widespread as it is in Guyana or Trinidad and that's a fact.

Hey Morris - thanks so much for this recipe - the clap. The clap has been the part I've been missing in my roti prep. I used to live in Toronto and there was an amazing roti shop on Queen St., "Baachus Roti". They made this incredible roti - "The Number One" - which I've learned to make at home, but since I've moved out of TO, I'm having trouble finding a good roti skin, so I've been making my own, unsuccessfully. I'm going to try your "Clap Method" and see if it helps. The Number One has the following in it: Channa shrimp squash spinach and cheddar cheese, of all things. It is to die for. I can't wait to make it tommorrow with your roti bread recipe. Thanks again !
