Notes 1. You can make the pie crust ahead of time before you make the pie. You also don't have to pre-bake the pie crust if you don't want to. You could just freeze the crust. Make the filling and proceed to bake the pie. You will have to bake the pie on the bottom rack just to make sure that everything is baked evenly. Oven temperature remains the same 350 degrees. 2. This is a very rich pie. You can decrease the confectioners sugar by 1/2 cup if you like. You can add 1/8 to 1/4 teaspoon of salt to cut the sweetness as instructed in the video. 3. Also you may have a small amount of the Lemon filling left over (1/4 cup) or you can use a deep dish pie pa n to resolve this issue. If you add less of the confectioners sugar it will reduce the amount of the filling so you won't have any filling left over when you add the filling into the pie shell. 4. You can also use other flavors besides Lemon for this pie like Almond for example. 5. The entire pie is baked on the middle rack to prevent over browning and over baking of the filling and the crust. If you are not pre-baking the pie crust you will have to place the pie on the bottom rack of oven to ensure everything is baked evenly.

This is the most comprehensive step by step cooking instructions on KZfaq. What interests me is how clean Charlie's kitchen is when he is finished his recipes. This is not an easy task and made more complicated by the amount of cooking being done along with the heat and combining of ingredients involved. Most chefs have a crew to do this clean up work and still the range and oven look like a disaster area. Kudos to a real chef that cares as much about the preparation of his dish as he does about the care he takes for his equipment and area he does his work in.

I did this pie about 6 months ago and it was OUTSTANDING!!! About 3 months ago I decided to make it again except I modified it slightly and called it a citrus pie. Everything was the same as the original except only 3 cups 10x sugar but I added the zest and juice of 2 limes and 1 orange. There is still a lemon flavor but with the addition of lime and orange, it gives it a different taste but still OUTSTANDING. BUT, when I just want to make a lemon pie, NO CHANGES to the recipe. It is one of my GO TO pies if I want to WOW the picnic guests.

Charlie this is by far my favorite ever vlog on making a lemon pie. I had to save it on all three of my computer devices so that I can make it next weekend for my sisters birthday.
