So I made this perfect lemon pound cake that I'll make for the rest of my life!
Fluffy and really moist, full of fresh lemon flavor.

Lemon pound cake
Pound pan 22 x 8 x 7 (height) cm
Unsalted butter 110g (½ cup)
Sugar (granulated) 120g (½ cup + 1 Tbsp)
Eggs 2
Vanilla extract 1 tsp
Lemon juice 30g (2 Tbsp)
Lemon zest 1 Tbsp
All purpose flour 150g (¾ cup + 3 Tbsp)
Baking powder 7g (1/2 Tbsp)
Salt 2g (1/2 tsp)
Buttermilk 70ml (¼ cup)
- Lemon Syrup
Lemon juice 55g (3 Tbsp + 1 tsp)
Powdered sugar 25g (2 Tbsp + 2 tsp)
- Lemon Icing
Powdered sugar 100g (½ cup + 3 Tbsp)
Lemon juice 15-20g (1 Tbsp + 1 tsp)
Please prepare ✔️
* Prepare butter and eggs at room temperature.
* Prepare lemon juice and lemon zest from 2 lemons.
* Make buttermilk.
* Preheat the oven to 175℃ (347℉).
- How to Make Buttermilk
* Add 1 tablespoon of lemon juice (white vinegar is possible) to 60ml of milk and stir lightly. Let the mixture sit for a few minutes until it starts to curdle.
1. Put softened unsalted butter in a clean bowl and loosen gently. Add sugar and mix well for about 4-6 minutes until smooth.
2. Add in the eggs one at a time. Add vanilla extract, lemon juice and lemon zest and mix.
3. Put all the dry ingredients (flour, baking powder, salt) in another clean bowl and mix, then sift half of the amount into the batter. Add all the buttermilk to the batter and mix, then sift the remaining flour and mix until incorporated.
4. Pour all the batter into the prepared pan and bake in an oven preheated to 175℃ (347℉) for 45-50 minutes.
5. While the cake is still warm, pour the lemon syrup on the top. Cool in the pan for at least 30 minutes, then place on a wire rack to cool completely.
6. Prepare the lemon icing. Add lemon juice little by little to the powdered sugar to make right consistency. The icing should be thick and not runny.
7. Pour icing over cake and cut it after it hardens completely.
