The Wife and I have tasted Kent cooking and I’m telling you this man is better then most when it come to wood Chuck cooking. Tamales Pro Tip: The following morning after making and eating tamales, have them for breakfast. Take the tamales out of the corn husks and place them on a medium-hot pan with some oil. Cook them for a few minutes on each side until they start to brown. This makes the masa get crispy, giving it a great texture. Serve them with a few fried eggs and some homemade salsa. Now you can have tamales any time of day.

I saw the thumbnail, read the title and immediately imagined Taco Bell-style "Mexican food." I was going to write a negative review and just be plain ignorant. Sometimes, as a Mexican, I forget that stereotyping doesn't just happen one way; it goes many ways. Plus, it saddens me and angers me that many in the U.S. want my culture, but they don't want my people. 🤷‍♂️ I stuck the video out and guess what? Those tamales look very, insanely similar to the ones my mother makes. Then it dawned on me: I was going to leave a negative comment for a video done by a gentleman who is happily sharing in my culture and sharing my culture with everyone. This here gentleman is the kind of person we need more of nowadays. One who shares in, shares and enjoys other cultures. We are all, after all, as they say; human. Mr. Rollins, you have yourself another subscriber, amigo. Although I did not post a negative comment after all, I sincerely apologize for having stereotyped you. I have been humbled in the biggest way imaginable, sincerely. I look forward to your next Mexican recipe. Thank you, and may God bless you and your loved ones, sir.

@@needtoknow1989 I mean yes, I’m an ok cook and I still make errors like that. It takes a lot of skill, practice, and attention to detail to cook food “perfectly” It’s easy to cook something passable and I’ve made plenty of, we shall say, passable meals. It takes repeated practice to get every detail right. I spent years watching the egg station guy at a breakfast buffet make sunny side up eggs, my favorite style, and I would time him, watch how he set his burner, etc and even after that I can only get them right maybe 75% of the time.

We have something very similar in Puerto Rico called Pasteles. We also make them a lot during Christmas and fill them with meats and other Caribbean ingredients. Only difference is our masa is made from plantains and are wrapped in plantain leaves and wrap them a second time with parchment paper and tie them up because we boil them instead of steaming, that way no water gets in. Always good with some hot sauce. Never had tamales before, but I sure will next time I get a chance. Saludos! To all our Mexican brothers and sisters!

I had some of that plantain with red sauce and pork drppings over rice and or red kidney beans. Delicious. 1982 Killeen Texas, Borencan Music block Party. Roast pig on hot coals underground. An experience I'll never forget. ❤

@@alg1335 It may have been green bananas, after punching holes in the bottom of a coffee can to use as a grater. We grated the green bananas/plantains and wrapped the grated substance into 3-4×2&half blocks with appeared to be corn husks. Might be another name for corn husk, but that's what I called em. Tied them off with cotton string one way and then the other and boiled in water for about 30 minutes. The time may be off a bit. Please forgive me It's been nearly 41 year ago.

Kent , is a master chef under a cowboy hat! I grew up on a big farm and had to move to the big city for work , and watching Kent cook , is pretty dang cool. I'm a crappy chef ( in fact I'm terrible ). BUT......watching Kent cook his stuff , really gives me something to shoot for. Cooking up authentic Mexican food , can be some of the best food on the planet! The Mexican people should be extremely proud of what they brought to this world , and I'm extremely thankful for what they gave the rest of us. Thanks again Kent!

For some of us, Tex-Mex food goes back to our earliest childhood memories, and I'm Anglo. I have never fixed homemade tamales, though. -- I can buy fresh frozen tamales at the grocery store from either a local (in-town) company or from a regional company (I think that one's based in San Antonio.) -- If you have never had real tamales, look for them online, or make some homemade. They are warm, hearty, homestyle favorites, and people will take them in their lunchboxes to work sites. -- Chicken, beef, or pork are the most usual fillings, but I've seen black bean (frijoles negros), spinach, and "roasted vegetable" tamales. (The roasted veggies are onions, bell peppers, and a mild pepper, maybe poblano, and a couple of other veggies. Tamales are a traditional family thing for many people for the holidays, Thanksgiving and Christmas, where mothers and grandmothers, aunts, uncles, dads, grandfathers, and the kids all will help make them, and visit. Feliz Navidad a todos. It is part of the Southwestern and cowboy / vaquero tradition that formed this part of the country, from Texas to California. we are stronger together. Our differences are us richer, just like spices in cooking.

Tamaulipas Mexican making Texas home here. My mom and sister have been making tamales all their lives. I've helped but never tried making them myself. The masa you made is the same consistency as my mom's. You used almost the same ingredients as my mom. The end result is just like my mom's. The tamal just slides off the husk. I will try your recipe and surprise my mom 😁

I have a mexican friend that iv known since i was 6 years old. Every Xmas id go over to his house and help make tamales with hs 3 brothers and 3 sisters. Good times and the tamales too.

Your show brought back memories of when I was kid and hot tamales were a MAJOR production around Christmas. We rendered down hog heads in large pots. I was one of the little helpers with a spoon smoothing the masa on the corn shuck. One of the tricks to waking up the camino and dried peppers was the slightly roast the spices in a skillet for a minute or two. It was an all day production that started before dawn and ended when I fell over from exhaustion. Some tamales were ckicken relleno, some had white raisins and peanut filling, but my favorite were the pork.

When I was a custodian,a group of Mexican drywall company owners had a big overnite party in my center.women did the cooking.tamales ,the whole nine yards.they fixed me a plate,good stuff.

My mother and I make either Mexican or Salvadorian tamales. We make tamales from different flavors every Christmas eve. Your tamales look delicious and you are doing an excellent job making them. Thank you for showing everyone who isn't Mexican that there is more to our food than just tacos and burritos. You can make tamales with different fillings such as chicken with green salsa, cheese with jalapeno, sweet corn, sweet pineapple raisin tamales, Strawberry. This Christmas eve I made Mexican tamales with green salsa and strawberry tamales, my mother made chicken tamales with red salsa and cheese tamales.

Brilliant Kent! My sister and I are from a Border Town and recently took the plunge and made about 3 dozen tamales. Green chile pork, beef with chili paste like you made here. So GOOD! I have no idea how that would taste like and, living in Germany, it may be complicated to get some corn husks. But I'll manage somehow. I definitely like to cook something which I've never done before and which no one around even knows of. Kind of like when I've made the Cowboy Enchiladas which Kent showed me how to do. That was a hoop and a half, by the way, I had made way more than we could eat, gave some to my neighbors (as Kent told us all, be a good neighbor) and these folks now have practically ordered me to do more. Thank you so much, Kent and Shannon and the Beagle and every good soul in your household for bringing love and a full belly to the people around you and for inspiring people to do so as well all across the world. we have been making tamales for many years, taught to us by our grammas and great-grammas. Your recipe and style are spot on! You and your crew should also win an Academy award for every catagory available. We laughed when we saw the mcguyver created tamale pot because we rig our pot in the same manner. Best video ever! Kent I have been craving some Christmas Tamales for some time. A close friend's mother made them every year and I always received a big bag of them each Christmas. They were something special. Sadly she passed away and the tradition seems to have gone with her. I think I will have to surprise the family with a batch of your recipe and give back a little. My birthday is in a few days and I asked to make dinner for my family. They were very confused for obvious reasons but being a kid who grew up in Texas and now living in Canada I want to bring a little bit of nostalgic memories and I have found the perfect video. Well Tabasco is amateur sauce for us Mexicans, we eat tamales with a really super hot salsa and if you have a hangover, this is the remedy tamales and super hot salsa, you'll be fine in a couple of hours. Merry Christmas.

Chopped Grill Masters where he came in 2nd place to Ernest Servantes. Chopped Redemption where he again came in 2nd. He was also a judge on Kids BBQ Championship-Cowboy Campfire. He was undefeated on NBC’s Food Fighters. Unfortunately, with wife Sharon by his side everywhere he goes, I don't think he's looking for another sidekick. Sorry man.

We boil our corn husks. It softens them and kills any small bugs hiding in the husks. My mother in law calls them ojas. This is also good with venison and pork roast mixed.

I'm in Texas, specifically the Rio Grande Valley. Around here we love cream cheese tamales, chicken with cream cheese (doesn't taste well with pork), fresh jalapeño slices with cream cheese. Of course regular pork is yummy too. You ought to give them a try.

@@lcastano44 yeah we make those cream cheese jalapeño. When we get tired of rolling them and still have ingredients we make "tamale balls". We roll the masa around the meat into a ball and then toss em in the fryer.

Awesome! I'm from southern New Mexico so tamales are THE christmas food around here. Every Christmas Eve morning my family gets together and we make about 50 pounds of these things and by Christmas night they're all gone. Everyone should give them a try!

Anything naturally made is always better for ya, it's that fake stuff they try to get you to buy that's bad like that oil crap made to look like butter, only use real butter!
