Tarte Tatin made from dough. I made 5 apples this time, but if you use 6 or 7 apples, the apples will be packed tightly and it will be a volumey finish.
The materials and procedures are as follows.

·Cloth

Unsalted butter 50g

・ Apple caramelize
Granulated sugar 50g (for making caramel)
A little water
Unsalted butter 40g
5 apples
Granulated sugar 50g (sweetened)
・ Cream cheese whipped cream
Fresh cream 200ml
Cream cheese 100g
Lemon syrup 30g
【procedure】
1. Add flour, butter and salt and rub them together to make a powder.
2, Mix egg yolk and water to make egg liquid
3, Add egg liquid to 1.and mix without kneading.
4, Wrap the mixed dough together and cool in the refrigerator
5, Peel the apple and remove the core
6, Put granulated sugar and a little water in a pan and make caramel over low heat.
* Be careful of the heat as caramel is easy to burn.
7, When the caramel is colored, turn off the heat and add butter.
8, Add apples and simmer while entwining caramel
9, Cover with parchment paper and simmer over low heat for about 50 minutes.
10, Stretch the dough chilled in the refrigerator larger than the size of the mold, and cut it out to the size of the mold with a kitchen knife.
11. Fill the mold with apples without any gaps and cover with the dough.
12, Bake for 30 minutes in an oven set to preheat 200 ° C
13, Cool the baked tart, wrap it in plastic wrap and chill it in the refrigerator overnight.
14, Cut the tarte tatin removed from the mold
15, Add cream cheese whipped cream to finish
