Lentils are nutrition powerhouses legumes, flavorful and inexpensive. A staple in vegan and vegetarian recipes, they’re loaded with plant-based protein. Making lentil tempeh is easy, but needs extra care in cooking because lentils are soft beans and easily disappear into pulp if overcooked.
One cup of cooked lentils contains:

Francius, whenever I try Lentil tempeh, I tried with lentils like moong, red lentil. They always end up smelling mild yeasty, similar to fermented bread. I could only imagine some yeast activity causing the starches in lentils to convert into alcohol, but I am not exactly sure what is causing this. I am not complaining, as the smell is not offensive like some tempeh I had made in my earlier days which smelled like a Urea(dry fish smell) due to my nonexperience with not controlling the temperature. It has now been taken care of, and tempeh comes out fresh. But would love to hear your opinion on why lentils could be smelling slightly yeasty, in my case.

Hi, Tomato. The French green lentils I used are nice. They contain less carb so they don't smell yeasty. I don't know about red lentils. Do they contain more carbs? That is true, the starch causes the yeasty smell and taste. Francius

@@francius1003 This will be my next try. I love tempeh so much, I want to try all the possible beans and your videos are fantastic. Looks easy and quick, no dehulling. From the video I understood that you leave the lentils in the incubator all the 24-36h, you don't take them out after 14-15hours like soia tempeh? The answer to the question above makes me doubt I got it right. Please help me!

@@corniola1308 Hi, Corniola! You don't de-hull lentils because the beans are soft beans, you will crush them if you dehull them. Also, lentils don't produce a lot of heat like soybeans, so no need to take them out of the incubator after 15 hrs.

it is good. one question is keeping 31C in process is very hard, because the tempeh in fermentation the temperature is still warm up to 37C around, the cooling is wanted or not ?

Yes, you need to take your tempeh out of the incubator after 15 hrs of incubation and let it cure at room temperature.

hi, is there anything more you can tell about how the lentils shoud be cooked and how they should look and feel like to get perfect tempeh? also, its mind-boggling for me that they take only 20 mins to dry out, what is your room temperature? do you use fans? do you move the lentils when they are drying?

Hi, Okkoson! Do not over cook lentil. Lentil is a soft legume, easily dissolved into pulp if overcooked. Boiling them for 15 minutes is enough. After boiling you can test by pinching with your fingers and it will easily squeezed. Air drying is intended to get rid of the wetness, not to make them dry like raw lentils. The fermentation process needs moisture. You don't need fans to do it, just room temperature. Stir the lentis may help. Enjoy your lentil tempeh! Francius

Hello Francius, At what stage do you switch off the incubator? How do finish the tempeh at this point when my house is very cold here in the UK (leaving the lid open)? The room temp is now 14 degrees C, so what can I do? Also, can I make tempeh from sprouted uncooked lentils with shell removed? Many thanks

Hi, Lizzie! For lentil tempeh, you don't need to switch off the incubator. In my video, I keep the inoculated lentil for the whole 36 hours in the incubator. The reason is, unlike soybeans, lentil doesn't produce their own heat much during incubation. No need to open the lid either. So, 88F (31C) all the way through 36 hrs. You can't make tempeh out of raw sprouted beans because the fermentation needs beans nutrition which has been used by the sprout to grow. Just fresh lentils, cooked as shown in my video. @@francius1003 Hello Francius, many thanks for your reply. If I add some sugar just after sprouting the lentils in some water for a few hours would this compensate for the reduced carbohydrates lost in the sprouting process to enable me to make tempeh from sprouted lentils? Lizzie

@@LizzieJD Hi, Lizzie! You can always experiment with sprouted lentil. It's a good experiment so you will get the real experience. I never inoculate sprout beans myself. Is there any reason why you want to inoculate sprout lentil? Francius

@@francius1003 Hello Francius, I wanted to sprout the lentils because of increased nutrition and decrease anti nutrients due to the sprouting process. I also wondered if the raw sprouts could be fermented so that the tempeh would be a firmer texture. I have just put some in the incubator to test this out, so I will update you when and if it works. I’ve just had a failed tempeh due to adding chia seeds in a batch of chickpea tempeh (the beans were cooked as normal). The chia seeds absorbed all the moisture and no sign of any growth, just dry cake! I won’t be using chia seeds again! Have you tried adding pumpkin seeds or sunflower seeds to any of your experiments? Would the seeds need to be soaked? Have you tried adding flaked almonds and would these need to be soaked? Lizzie
