The classic Lo Mein sauce recipe as used in most chinese food take out restaurants, and as far as I know it, is... From a 120 year old west coast recipe.. as follows: Lo Mein (捞面) sauce for 1/2 lb. egg noodles • 3 tbsp chicken stock • 1½ tsp oyster sauce • 3½ tsp soy sauce • 1 tsp mushroom (dark) soy sauce • 1 tsp Shaoxing wine • ½ tsp sesame oil • 1 tbsp sugar • 1 pinch granulated garlic • 1 pinch white pepper

How to make the perfect lo mein... Go to the store and buy pre made lo mein noodles. Good luck with that here in Italy. I'd have to fly to England.

Fresh pasta made with egg would work well. Just cook it al dente as you would for a pasta dish.

I agree, Olive oil has a VERY low smoke point. its unsuitable for stir frying, which requires high heat.

@@maniswolftoman Even though we see Lo Mein in so many places, it actually originated in China, as a wheat flour noodle dish. It is unclear exactly who invented the process of mixing water and flour to make noodles, but the Chinese have been eating them for over 2,000 years! This takes us back to the Han Dynasty (206 B.C. - 220 A.D.).

Any good cook should know that you can’t use olive oil in a wok. The smoke point is too low.

Evoo, yes. But virgin olive oil can be used to cook with. In Alain Passard’s Art of Cooking with Vegetables many of the recipes call for cooking with virgin olive oil over low heat. But a regular olive oil that has been refined with a heating process is perfectly fine to cook with. Any good cook can see you are mainly speaking out of ignorance.

that would be following a recipe, not cooking. make it with what you like- over all every ingredient combined should be the same volume or less than the starch, in this case noodles.

some chinese buffet have different taste of lo mein....The one I like the most is the one with pepper and onions gosh I can't find online who makes that lo mein....It is very spicy..

Yes! I've added a little sugar to the sauce, and it's quite good. No more than a tablespoon.

Why can't these types of videos always come with a printable option? Even in the description all there is is a list of ingredients, most of which don't come with measurements and even those are incorrect (they even forgot to mention the carrots), and no instructions to print out.😑

After dunking the lo mein in ice water, how did you dry it off? Looks perfectly dry before applying oil...

he laid them on the stone to increase surface area and there fore air flow. get a ceiling fan or a window ac in your kitchen- and if you cant be bothered stick whatever you want dried in the fridge and turn the temp down, most anything that has temp control leeches humitdy from the surrounding air.
