Nut butter was one of my main reasons for buying a Vitamix. And I got very frustrated! Making nut butter just didn't work without adding large amounts of oil, which I did not want. I saw so many videos and recipes for Vitamix nut butters that did not talk about optimal nut amount or the need of roasting them so I even went as far as getting my Vitamix replaced thinking i had a defective device. Then I tried it following your instructions, and I almost immediately had perfectly smooth almond butter!

Thank you for this video. I have been making almond butter in a Cuisinart for over 12 years and finding it a tedious, time-consuming, messy business which I dreaded....so I invested in a Vitamix. My first two attempts at almond butter in the Vitamix were catastrophic. I thought I'd made a very expensive Vitamix mistake until I happened upon your video. I saw immediately all my mistakes. Voila, perfect almond butter in about two minutes flat! THANK YOU.

I made almond butter before I watched this. It turned out okay, but not very creamy. Wish I'd watched this one first. This guy has some experience and evidently has made the mistakes (and knows what each does to the butter and the process of making it). I looked at several other videos within the last 15 minutes, and this video is the best. My mistakes were 1) adding a little honey and oil before blending the nuts, 2) not using the tamper while blending, and 3) adding water when the butter was clumping. It still turned out pretty good, but next time I will do it this way. I've bookmarked this. I hope people who attempt to make this using the other videos I watched, will find this one and do it right.

I know it can be a little challenging getting all the butter out. Why not make smoothie? Great video. Thank you. Question. I have a 64 ounce. Is that S-series?

Ever since I got the newer Vitamix with the shorter but wider container, I have not been able to successfully make Almond Butter. I just tried a few minutes ago. I bought a bag of whole almonds from Costco. Measured 4 cups of nuts into container. Started it at 1 and ramped up to 10 in 5-10 seconds. The tamper was just barely touching the conglomerate but I was able to push it around a bit on the edges, I added 1/4 cup of Canola Oil. After about 1 minute the almonds had all been pulverized but I ended up with a dry, playdough like mess. The almond paste got very hot and after 3-4 minutes I considered it a failed attempt. I can still use that to add to smoothies, but it certainly bears no resemblance to smooth creamy almond butter as you show in your video.

The trick seems to roast your almonds first (let cool completely) and use enough almonds depending on container size. I’ve tried this, but without roasting my almonds and perhaps not using enough of them…

You can make it in the regular container, and it actually works better with the wet blades than with the dry blades.

QA: Better to buy ground almonds pre-packaged. One pound is a *large* pound! One pound of ordinary almonds will grind to much less mass.

I don’t know why my blender gets super hot when I try to make almond butter, it also takes a very long time to reach the smooth consistency :/ I let my almonds cool for like two hours before blending them.

It’s normal for the machine and nut butter to heat up quickly. You’ve got to really get busy with the tamper to make it quickly.

Maybe your almonds were less roasted? You can add some oil if it doesn't get creamy.

Do you soak them? Have you tried to do a nut butter with non roasted almonds?

These are not soaked. If you soak them, make sure they are completely dried/dehydrated before trying to make nut butter. If you use non-roasted almonds, the easiest way is to add some oil. It is possible to blend non-roasted almonds without oil, but it will be more difficult and take a long time.

My vita-mix instantly starts to heat up when I make nut butters and the motor emits a smell like it’s burning. I wouldn’t buy the vita-mix again.

My first vitamix I had that problem the first time I tried almond butter but my nuts weren't roasted enough. Try peanuts first because no oil or roasting needed.
