How to make zucchini stuffed with chicken.
Hello everyone in today's video I show you how to make zucchini stuffed with baked chicken, an exquisite complete meal, which you can accompany with any side dish such as salad, rice or potatoes. Zucchini is also known as squash or zucchini.

Baked chicken stuffed zucchini.
Yield: serves four.
Ingredients:
2 chicken breasts.
4 round zucchini.
2 medium onions, diced.
1 cup approximately of peppers (the colors of your preference) I used red, green and yellow.
½ cup of crushed tomato.
To taste:
Garlic, ground paprika (also known as paprika), cumin powder, salt and pepper to taste, grated Parmesan cheese.
Preparation:
- Clean the chicken well of skins and fat.
- Wash the zucchini with soap and water, the skin is very soft and edible.
- Place the chicken in a tray that you can take to the oven, add garlic, salt and pepper.
- Cover it with a piece of aluminum foil and bake it for about 25 minutes at 180°C / 350° F.
- Let it cool a little and cut or shred it into small pieces.
- Cut a small cap off the zucchini a few centimeters below the stem, spoon out the inside of the zucchini, set aside in a bowl.
- Put about two fingers of water in a pot, add a spoonful of salt and place the zucchini with its cover so that the skin softens a little, cook for 5 minutes and let them cool.
- Cut everything you removed from the inside of the zucchini into smaller pieces.
- In a frying pan place a splash of oil of your preference, add the chopped onions and sauté until golden brown, then add the peppers and continue sautéing.
- Add a spoonful of crushed garlic, the ground paprika and the ground cumin, stir with the rest of the ingredients.
- Add all the zucchini that you removed from the inside, the zucchini have a lot of water content, cook them with the rest of the vegetables until most of the liquid evaporates.
- Add the shredded chicken and the ½ cup of tomato, sauté until the mixture is quite dry.
- Place in a tray that you can take to the oven a drizzle of oil so that the zucchini does not stick, place the zucchini, and fill them with the chicken stew.
- Place a little grated Parmesan cheese on the top and bake them in the oven for 5 minutes until the cheese browns.
- Serve them hot with the lid as a garnish.
