When it's hot we have to be more careful. In the summer, the greens have to be refridgerated after being processed for at least 8 hours before packing.

Curtis, as a student of operation management and quality control. You can test this, but I know by running equivalent tests that you will save double the time and save on space by going from step 1 thru to step 10 in one cell station. Pack ur product like u do, before putting it down label your bag, and go straight to your distribution box, close your box and label your box with your final content. This will save you from touching your product multiple times and from having extra space, which both lead to waste; aka MUDA. At least half of your packaging time will be saved by applying this concept. Cellurizing your workspace will also allow for more efficiency. When I finish my bachelor's degree in two years I will be reaching out to you to come and help consult your business. I am happy with your work and thank you for the education you provide for me. some more farm tours would be good content this winter, farmer interviews, etc. Another idea that'd be cool would be a video about crops you are proficient in growing but not necessarily stuff that you focus on growing now within the profitable mainframe, I'm thinking about back when you used to grow a whole bunch of things for your CSA, it may help farmers who are looking for areas to grow their product line or a niche product to create an advantage. Also, if you get tired of farming content and if it's interesting to you, you can do some killer gardening content, basically opinion pieces on what you like to grow and why. Its always nice seeing rare varieties and stuff too. take care curtis catch ya soon

Hey Curtis, if your label maker can print a single strand of labels you can save even more time applying labels by folding down the paper side just enough to expose your first label. Apply the label by dragging it across your bag, and with a little practice you can have the next label slightly exposed and ready to go, all in one quick motion. This method is much faster/easier than pealing each individual label.

How do you keep your bags or clamshells from getting condensation on the inside after putting in cold storage? The ones I wash go on a drying table with a fan above and are packed very dry... and still get condensation. I worry about that affecting shelf life. Do I need to cool the micros in the fridge before packing? They are grown in a temperature controlled area that is average 78*F. Thanks for any advice.

That would be over kill. Stuffing greens into a bag is the same for shoots as it is with greens.

I was also wondering about this. More about how many ounces you would sell at the market or to grocery stores and if you use the same kind of bags or packaging like clam shells. Never mind. It's all on page 181 in your book! I just got it today and haven't been able to get my nose out of it :)

Anyone with sealing tape issues here? I've used this bag sealer and if my greens stay in the fridge for a night, the tape detaches from the bag. It's quite frustrating. Bags look pretty clean, but since I have problems with the tape, I've started to tie simple knots. I like how it looks like with tape on, so please share if you overcame this issue.

Uline bag taper, model H-167 for about $20 shipped on eBay , Powerseal makes a powder coated model for about the same $$, and a stainless steel model that I ordered for less than $40 shipped, also eBay.

hey Curtis ! when the time is appropriate how about a video on how to sale to a grocery store. I know there is selling the product in with management,checking product in at the back door and location of your product. is there a person that orders from you or do you inventory your product in their store and order for them? just a video on your process, if possible, would be cool. I’m wondering how do you feel about perforated clamshells? Whether it’s for home delivery or farmers market says examples. I’ve seen lots of videos from other folks just randomly who only use perforated packaging and I’m just not sure which way to go. I also noticed that your bags are quite full of air. I was wondering if anyone has tried eating the roots with the microgreens? I have seen fodder growing vids that says the nutrition is in the roots. They also grow without soil so there would be less cost there.

More of a business question: How do you go about registering as a business (legally)? What office/government agency do you go to? Did you need a lawyer? What's the process? 2. I know you don't grow fruit, but do you know anyone who has done this on a small/urban scale? How do they do it and what do they grow? 3. You've mentioned the importance of knowing your market in the past. How did you do your market research? Surveys? Just talking to folks? (Sorry if you've answered this in the past and I missed it.) 4. How many man-hours per day does it take to run each acre you're on? Thanks again for your videos and for all that you do! I'd like to see a video on the flow of soils. Another video said the microgreens medium is peat and vermiculite. So it comes in as bags, gets mixed, used, then probably composted. Then what happens to the compost? I can guess but I'd like to see the whole trip.

I was wondering what you do with produce you have left over - not sold or excess. Do you turn it into a higher priced product, dried food, chutneys or do you compost it?

Put it in the compost for the most part. I'm not interested in making value add stuff with leftover product. Not to say that it isn't a worth while thing to do, i've just got other things I'd rather spend my time on, like making videos ;)

hi Curtis! Which advice do you give when you have to package within a 5% range? In Europe you have to package this exactly.. only way you don't have to care about is, if you weigh directly everything before selling or you sell things like a bunch...

Great vid! Helps with packaging. One very important question. Notice that the bag is like a ballon in a sense. Is not oxygen a bad thing in packaging? The store bought greens fill the bag or hard container leaving very little room for the atmospheric air. It's understood that potential customers do not want flattened greens. Yet the greens in commercial packing are not flat either. Just an observation. Not hating/trolling.

No. Lots of companies ship microgreens, but you need cold storage transport.

Flood your storage container with a more purified gas than dirty air... it will settle into your storage container forcing oxygen out, it's almost free. It will double or triple your food life. Making it keep and taste as fresh as it is now. When foods such as crisps are packaged, the bag's empty space is filled with an inert gas such as nitrogen to prevent the food spoiling too quickly. Many of these inert gases are heavier than air, keeps it simple.

He uses organic processes but is not certified organic. Based on the book and recommended varieties he uses a mix of heirloom and hybrid seeds but no genetically modified seeds.

I picked my bag taper on ebay...got lucky and picked a barely used one for $1.40 with $6.00 shipping. Search "Supermarket Metal Trimming Blade Plastic Bag Neck Sealer" You will find some good deals, also you can find the 3/8" tape on there for the sealer also.

Being and organic farmer is there any regulatory concern with handling the greens with your bare hands when there is not a hand washing sink near by? When we do all of our organic processing there is major focus by our auditors to reduce human contact with any product, and we are required to have dedicated hand washing stations in each room where we are processing? We require our people to wear GMP gloves at all times because trying to enforce hand washing practices gets to be tough to manage. On a side note, we do not work with raw produce, but I would think the regulations on that would be even tougher because our product goes through a kill step (Cooking).

Curtis is not certified organic but rather uses mostly organic processes. Based on the things he's said in his videos he isn't organic because of crazy constraints like how many sinks you have to have.

I've given up commenting on this subject because every place is different. Generally though, being organic has nothing to do with health codes.

Oh trust me, I know exactly what you guys are talking about! The regulations are ridiculous and in my opinion have very little impact on Food Safety! Unfortunately we are in a situation where our biggest customers require the certification.
