It looks like this will be a great year for wild mushrooms - I have already had a great harvest of several different species and we aren't even halfway through August.
Now, when I find a huge abundance of mushrooms, I try not to be greedy - and I always leave some to grow on, or for other people to gather - but even doing that, I had more than I could use immediately - so this is an excellent opportunity to dry some.
This video deals with just the process of preparing them for drying - further videos will deal with storage, and using dried mushrooms.

Congratulations you are a great conservationist it's exactly what you should do when you find an access. When I pick I will take only half at the very most if there isn't enough by the look of the area for half being enough that I won't pick any if half equals too much and I'll pick a quarter. Once in a while I will bring around a couple of baggies with peat moss mixed with vermiculite and a little calcium additive and sprinkle it on the area where the mushrooms are gone growing. The next time I come they are always more plentiful. Cultivating the wild is an interesting kind of strange concept but it helps a little bit at a time

Chanterelles are nice dehydrated, but probably better pickled :) they get kinda tough this way.

impossible to passively air dry these in the SE U.S. Probably the year this video was posted, we had a flush of rain that lasted 30 days. Ringless Honey were popping up thick as carpet. So much that it was actually making me nautious to go outside the aroma and spore count was so high. I had no way to mass dry them; so between fighting the humidity and the shroom borer maggots, i couldn't really save much of them. Pounds of mushrooms. Would have been a lifetime supply. I have no idea how the natives would have done it passivly. It had to have been done with fire and stones, but when it's been raining a month straight finding dry wood would have been a task. They would have had to have traded for them with folks from dryer climates. We have stuff here that doesn't mind the rain. I just try to do small batches in the oven.

Agarics dry very well. And the flavour intensity increases 10 fold Even shop bought agarics benefit from drying

Hi! I know I'm rather late to this video but if there is any chance that you do read this please reply! I do buy store bought mushrooms because I don't have the option to go mushroom picking The ones I buy are quite dirty and I don't think just brushing off the dirt would be sufficient enough Is there any way that I can clean them completely and dry them?

To be completely honest - you *can* wash mushrooms and it will be OK - they may take a little longer to fry and you may lose a little of the flavour. I prefer not to wash them, but this is just a personal hangup of my own. I generally find through that brushing them or wiping with a moistened kitchen towel is sufficient to remove dirt. If they are too dirty for that, maybe buy your mushrooms somewhere else. For large, open-cap white mushrooms, you may see some brown staining on the caps that isn't dirt at all, but is in fact spore print from other mushrooms when they were growing together, or from being packed together.

How do you call the yellow variety? In Italy we call them Galletti, there are lots of recipes you can make with them

We call them Chanterelles. I think in France they are Girolle. They're really delicious - one of my favourite mushrooms

I am new to shrooms.I thought you had to use a dehydrator but i guess not.

how do you actually dry them. do you put in an oven?

I just left these racks in a warm airy place for a few days and they dried naturally. I use an electric dehydrator now.
