Shelley shows how to roast peppers, which are a great addition to sandwiches, soups, sauces, salads and pasta.
Pepper (i.e. poblano, red, etc.)
1 teaspoon grapeseed oil, olive oil, vegetable oil or corn oil
Rub the pepper with the oil and place directly on open flame of gas stove. Alternatively, you can roast on a sheet tray in the broiler of your oven. Rotate occasionally so that the pepper blisters and chars on all sides. Place pepper in Ziploc bag or glass bowl covered with plastic wrap. After about 20 minutes, remove the charred skin from the pepper and seed. Do NOT rinse. Store in the fridge until ready to use.

Roasted some bell peppers and then stuffed them with shaved roast beef, caramelized onions, and provolone cheese draped across the tops. Finished with a peppercorn olive oil drizzle. So delicious. Thank you for the tip!

A quick follow up. I have just done this, your method was entirely successful and easy to do. Also cheaper than using an oven. You are quite correct about the peppers losing flavour by washing the charred skin off as you peel. I found a blunt, flat sided knife best for removing the charred skin. I used the roasted pepper to make hummus, it was delicious. I can post recepi if wished.

@@choppingblock You're so welcome! Max's Roasted Red Pepper Hummus. Soak a cup or so of dried chick peas overnight. Rinse. Cook and simmer for 20 mins in a pan with water just covering, till tender. Add an uncrushed garlic clove (or two) a minute before taking off the stove, thus avoiding a raw garlic taste. Leave for half hour, drain but reserve some cooking water. Into a mixing jug add a splash of olive oil. Couple of sun-dried tomatoes from a jar, with a splash of the accompanying oil. Juice of one small lemon or half a large lemon. Splash sweet chilli sauce. Not a nasty cheap one. Level t-spoon paprika. A little hot chilli powder to taste (or a fresh chilli) The cooked chick peas with a little water. A large roasted red pepper prepared as above (thank you Chopping Block!) Sea salt and freshly cracked black pepper to taste. Wiz all up in a blender but do not over blend, leave some consistency. Add some remaining cooking water if it gets a bit stiff, but there's lots of water in the pepper. It should be slightly runny but certainly NOT watery. Finally mix in some fresh herbs, finely chopped (eg basil, parsley, coriander) (I also add a secret ingredient, my own slow cooked red onion chutney, which isn't actually necessary but who knows?) Some people lightly fold in a little more green olive oil before serving to make it look attractive, also some fresh basil leaves or thyme. I like to serve this with thin toasted, crunchy sourdough and lime/ lemon wedges. I promise you it's lovely, but try it for yourself! Great as a relaxed starter for a dinner party, or to share as a light lunch. Best wishes, Max (The roasted pepper makes it!!)

Yes, that should do the trick. Be sure to wear gloves when working with habaneros!

I'd like to ask a couple of silly questions 1 is the burner on full blast 2 roughly how long each side and 3 are you using a wok burner. Looks awesome thanks for the video

+lordcaptain73 There are no silly questions! Yes, the burner is on high. No, it's not a wok burner, just our regular stovetop burner. The time will depend on the size of the pepper but you want to completely char it on all sides. So, you really can't overcook this one!

I have a question - about how long would the refrigerated roasted peppers last? Perhaps a week to 10 days at most?

Yes, we'd recommend using the roasted peppers up within a week.

It depends on how much time you have! They can sit for as little as a few minutes until they are cool to the touch, or you can leave them on the counter for a few hours.

The purpose of roasting peppers is to remove the skin, soften the flesh of the pepper and add a smoky flavor to whatever dish you use the peppers in.

in the midst of trying this, only I forgot the grapeseed oil........I'll have to do that next time, but thanks for the tutorial. I also placed it in a paper sandwich bag, which should engulf the pepper in it's own essence.......so to speak, ;)

Nevermind! I just noticed the text below the video. This is my first gas stove. I am excited to try fire-roasting. It never occurred to me to simply rest the peppers on the burner; years of electric range conditioning!
