i tried it on non-stick pan, thin pumpkin slices, using indian mustard oil and sambhar masala , low flame. very tasty roasted pumpkin.

Even before finding a video that's more or less how I was roasting pumpkin, maybe at lower temperature of 180 C. However, it did not turn roasted, but like boiled. So I decided to look for a video and found yours. Looks great but was the oven set on grill? I don't manage to get that grilled look that I get with the other veggies

Question - do you grill/broil it, or have the oven on bake? And how long? I was thinking no oil would dry it out -- it turns out okay w/out oil? I don't like to use oil much, so I'm glad to hear you have had success with this.

2:40 400 degrees *Fahrenheit* I did it at Celsius and it went all black.

I attempted this with sea salt, black pepper and garlic salt and it tasted plain ...I really need to use this recipe next time ,also the pumpkin I used was a white one the way my fiance and I ate it was with Ranch it helped.

Very occassionally, a pumpkin's taste may be bland. I've had that once (out of the 100 times I cooked pumpkins). Maybe it was just bad luck!

just butchered a pumpkin. tough skin so had to use force.Once spit, I thought that the easiest would be to cut the skin off the "meat" using my bandsaw (blade cleaned first with some alcohol 70% methyl) But my wife said no so now I am only one eating this stuff. Adding brown sugar, nutmeg and salt and pepper made it edible with some taste, I will reluctantly do this again since the pumpkins sit outside the front door proudly exhibiting Thanksgiving. The Native Americans didn't have bandsaws, but the had hatchets. Next year maybe.

I've been using California olive oil for the past two years. California produces a LOT of good/excellent olive oil. And wine, and rice, and cotton, and avocados, apples, berries, and all sorts of foods. And we also have an abundance of really crazy people too, and rocket scientists, electronics experts, and some very good surfers, etc.

most people roast their pumpkin at 350 - 375 and this video mentions nothing about the exact pumpkin you must use. You need a local organic pumpkin specifically for cooking.. ideally between 4-8 pounds terrible video

Tom Sutherland you can eat pumpkins that aren’t specifically for cooking. We used striped ones they tasted great.
