We lived in Spain for 6 years. The Jamon Serrano was a staple in most bars and restaurants. It was kind of gross to walk in during the summer and they usually had a little cup hanging below it to catch the fat that was dripping off from the ambient temperature because most places were not air conditioned.

You may be shortchanging yourself, especially with cured meats, as it can be used as part of the curing process so not necessarily still present - sort of Iike when you make a yeast bread and put a little honey in - the yeast consumes the sugar and it’s no longer in the finished product. And it’s often used in such a small amount that it’s listed nearer bottom of the ingredient list. Check the nutrition facts to see how much added sugar shows. I’d far rather see a minute amount of sugar than a bunch of preservatives on a label. BTW, this is coming from someone who tracks her sugar and tries to stay below 7 grams a day. Most days I’m under.

Just wanted to say how much I appreciate these Costco runs dude! Since "The Rona" struck I've been doing 99% of all my grocery shopping at Costco. I eat frozen brocolli, and frozen ground sirloin patties, eggs, some hard cheeses (Parmesan), taco seasoned ground beef (strained to remove most of the fat), with salso, guacomole, etc. I found some salmon patties as well and using them cause you recommend fish and I'm not eating much. Love to hear your feedback on the frozen salmon patties. I bought that same Thanksgiving Turkey brest last week and some mashed parmesan cauliflower they had as well. Not bad keto T-giving meal.

So glad, you did this one! Like many, I've been leaning towards turkey, thinking that ham was worse. The turkey that I get from Walmart isn't too bad. No nitrate, nitrites, but it does have sodium phosphate...which, I'm glad you covered. Thankfully, I've already, been eating them as you suggested, with the turkey slices and aged cheddar slices by themselves. I roll them up into pinwheels. Love your meal prep videos, as well. 😊

Keep in mind that "healthy" ham is corn-fed (at best) so there's still a limit to how 'healthy" it can be. Given that, and given that "lunch meat" is pretty much for eating with wheat, I give it a pass-and I used to eat a lot of ham in sandwiches. Now I go right for the leftover steak, right out of the fridge.

I get the uncured black forest ham because of all the affordable $/lb options, it has the least amount of ingredients versus the pastrami and smoked ham. I just don't understand why you would say "no" to the uncured black forest ham but "yes" to the Genoa salami even though the salami has dextrose, and two kinda of nitrites. you always say no to nitrates. Even though the Genoa salami and the Italian dry salami have the same ingredients, you said no to the Italian dry. Very confusing and inconsistent.

Kirkland can‘t call his ham Black Forrest ham cause this name is protected by law for the Original Black Forrest Ham and Bacon coming from pigs breed, raised and slaughtered and the ham and bacon made in the German Black Forrest, they have to put produced in the manner of the Black Forrest Ham or Bacon. By European Law only People from the German Black Forrest can use the label Black Forrest for their products is it ham, bacon, spirits like cherry liquor, Black Forrest Cherry Cake or the famos Black Forrest cuckoo clock. All other products from other countries yep includes other German states and counties too have to put on their products „produced in style of ...“ if they make the same product. This is like Parmigiana Reggiano a protected label by the European Union for a specialty product.
