Southeast Asian immigrants brought the practice of shrimp drying to the New Orleans area back in the 1800s. My grandparents were commercial shrimpers off the coast of the Gulf of Mexico, and I have French-speaking Creole ancestors who worked on the dried shrimp platforms here in the marshes of South Louisiana. We still enjoy them today. I grew up eating them like candy!

Definitely my favourite ingredient. I use dried shrimp in nasi goreng, mi goreng, tumis sayur, and many many other dishes. Like a magic it turns ordinary dish into very goood one! Wish you a very good day Azlin

Just ordered an 8oz bag of medium-large dried shrimp for $30 on Amazon. The price seemed high, but when I tried to find a better deal, everything else was rated as inferior quality, so I stuck with the higher price brand. I also ordered 2 green papayas and everything else needed to make *som tam* .😋

They're definitely fairly costly outside of Asia. Enjoy the salad. So, so many recipes in South East Asia use dried prawns, you're going to be spoilt for choice!

Thank you sm! Just received several packs of udang kering from relatives in Sabah and literally have no idea how to use and keep all of these😅 a question though; do we have to clean/wash the udang kering (mini ones) before using it in the cooking?

Awesome, I'm really pleased to be able to help. Nope, you don't have to wash them or clean them. You'll see some people saying to rinse them first, or even to soak them to get rid of excess salt. But the whole beauty of these things is their concentrated sea salt flavour. We don't use much, just a little, so the salt is never an issue. Those really, really tiny ones get used whole, head and everything. I hope that helps. Any questions, just drop a line.

Yes, definitely. They are pretty potent, aroma and taste wise, so I'd start small and build up the flavour as you see fit.

I found dried shrimp but it has head and shell. Can i use it in similar manner? Should I throw away shrimp head?

Hi there, yes, you can. And you don't have to take the heads off, use them as they are.

My wife , who is Indonesian, just made me pancakes and i(white American dude) sit down to eat and suddenly a smell comes from the kitchen( right next to where I’m sitting ) and nearly knocks me out of my seat! What was it?… DRIED SHRIMP!! Let me tell ya, that stuff ISNT FOR WHITE PEOPLE! If you’re white…RUN! That stuff smelled like she was cooking up month old roadkill on the stove and suddenly I didn’t want my pancakes. I very passionately asked her what she was cooking for the dogs. Let’s just say we now have a deal where she doesn’t cook that while I’m in the house or in the yard outside. My question is: what’s wrong with normal shrimp?

Haha, there is a whole lot of difference between fresh shrimp and dried shrimp. The first is eaten as is, cooked in whatever. The second is an essential flavour ingredient. Ask your wife about shrimp paste (terasi in Indonesian). You thought dried shrimp was strong, for want of a better word. My kids run for their lives when I toast shrimp paste before using in a recipe.
