Men's Cooking - Paweł Horąży
Composition:
- 300 g of wheat flour type 550
- 300 g of rye flour type 720
- 450 ml of warm water ❗️
- 50 g wholemeal rye sourdough
- 1 tablespoon of olive oil
- 1 teaspoon of salt
1. Mix both flours;
2. Multiply the leaven: 50 g of leaven + 150 g of mixed flour + 150 ml of water;
3. Set aside for 12 hours (overnight);
4. Mix the risen leaven with the remaining flour, water and salt;
5. Knead the dough thoroughly and leave to rise for 3 hours;
6. Place on the counter, form a loaf, and place in the basket. cover and leave to rise for 3 hours;
7. Place on a baking tray greased with olive oil and make cuts;
5. Bake for 50 minutes at 220°C.
