Chocolate Vanilla Castela Cake

Material:
4 egg yolks
1/4 teaspoon salt
1/2 teaspoon vanilla
60 ml milk
50 ml cooking oil
65 grams low protein flour (cake flour)
10 grams cocoa powder
1/2 tablespoon milk
Meringue Ingredients:
4 egg whites
1 teaspoon lemon juice
70 grams sugar
Topping choco chips to taste
Pan size 16x16x7cm
Bake at 150-160°c for 70 minutes

Eu fiz parecido com esse. Não pode fazer sem banho maria, pois a massa fica ressecada e se colocar mais água do que 1 cm o bolo vira pudim. Acredite em mim, coloquei muita água e virou pudim.

В рецепте нет разрыхлителя или соды, но можно добавить. Я добавляю разрыхлитель. На это количество 1 чайная ложка с верхом. Получается хорошо даже в мультиварке.

У нас не получилось почему то? Хотя делали все по рецепту , но он не поднялся вообще. Может что то вы не досказали? А в общем большое спасибо за ваши старания

This cake does not use baking soda which helps to rise the cake , you are not suppose to deflate the batter so you mix the cake very gently when mixing the egg yolks and egg whites try to watch other recipes to get the better idea.

No, cake flour include both baking powder or baking soda, with any other additional ingredients the brand could have added while all purpose flour is just plain flour nothing else

After baking very carefully remove from the oven without bumping it. Let it cool to room temps slowly. Or start with cupcake versions and practise with egg foam cakes. Egg foam based cake recipes are challenging and you must be easy with them while baking and cooling.
