The problem with Gordon's isn't the ingredients. It's that he used a fireplace where he can't control the temperature. So he burned the bread while not melting the cheese. If he just used a stove like normal it would've been great

As a Swiss I have to say Raclette is my favourite type of cheese (besides Gruyère). It melts nicely, tastes like proper cheese (unlike the Emmentaler, that gets exported, it's way too young and tastes like nothing, proper Emmentaler tastes bitterish and has a hint of vomit), can be used as it is, melted or as coarsely grated on top of pasta. I use it as an universally applicable type of cheese.

And it probably didn't help that he used firmer cheeses, which have a high melting point. Which is fine when baked on/in something but on a grilled cheese softer is better. American cheese for example (while I don't classify it as cheese) is a good choice. BUT don't choose something that'll melt TOO fast as by the time the grilled cheese is done the cheese will be in the pan and not on the bread like you want it to be. (I haven't finished the video so IDK if he explained this)

When using Mayonnaise, you can't use Kewpie. You need to use standard Slavic/Americanized Mayonnaise because it has more oil and not so much sugar as Kewpie. It won't burn as fast, and you'll get less of s sulfur taste etc. because of the Oil vs Egg Ratio. ^u^

As a French guy that grew up eating Croque Monsieurs / Croque Madames, that recipe was so weird lmao First off, in France, we have Croque Monsieurs cheese directly in supermarkets, so for this part, I would say any cheese is good if you don't have the same thing. Secondly, we don't make a sauce at all... at least where I'm from, the recipe is easy as : Take your bread (pain de mie), you can put creme fraîche on the bottom if you want, Then on top you put the Jambon de Paris, or ham, followed by your cheese, your bread, and a bit of Gruyere or Emmental on top. Finally to cook it you either have a machine for it, or you simply put it in the oven for like 10 minutes. And for the Croque Madame, you simply put a sunny side egg on top of it. So... yeah, recipe felt weird but might have to try it :)

What I learned from this is that you can only really be satisfied by experimenting and finding out how YOU like to make it. For me it would probably be cheese, well cooked onion with a drizzle of vinegar and a pinch of salt. The bread would be toasted just a bit first so I can grate some garlic into each slice (using the bread as the grater), finish with warm tomatoes and probably a light layer of non fat cream, again, warm so my teeth won't act up.

Best grilled cheese hands down is white bread with American cheese and thinly sliced banana. Key to a good browned grilled cheese is light on the butter but get it to all the edges on both sides. Stack bread slice, American cheese layer, thinly sliced banana layer, American cheese layer then bread and toast till golden brown. Sounds weird tastes divine.

Pro tip. Wash your pan and season it. Put a bit of salt in it and get it hot moving it around. Dump salt in a dish to use another day. Add peanut or high smoke oil and put over medium heat until hot but not at smoke point, you kinda have to guess. Remove from heat. After its cooled down a little your good to use it and nothing should stick. Rinse and wipe clean. After a dishwasher or micro sponge I suggest seasoning again.

here's a Brazilian recipe for a (ham and) cheese sandwich that tastes really good first get some cheese (could be any type of cheese, but here we normally use mozzarella or cheddar) and some ham (also any type, but I recommend smoked ham) then on a white bread, put one layer of cheese and a layer of ham. repeat until your heart tells you to stop and close it with another slice of bread. then you just put it on a George foreman grill until the bread looks good and the cheese is nice and melty we call it a "Misto Quente" (literal translation: hot mist) and it's really good

My favorite way to make grilled cheese isn't even by grilling it. I toast the bread, then, layer cheese onto each piece and bake it for about 5 minutes after until the cheese melts. “I trust josh with authenticity” Ha XD The recipe is about as authentic as a Disneyland castle, even if I’m sure it’s perfectly tasty. A croque monsieur is usually much simpler : take two pieces of white bread, slaps some ham in between (and yes you would use one of those thin layers he used but that’s about the only authentic part of his recipe), some grated cheese on top (usually Gruyère or emmental), then in the oven at 180C till the cheese got its crust. You can put butter on whichever side you please, and you can stuff more cheese inside the sandwich, but it’s really nothing more than that. Making a béchamel or whatever for a dish like that is kind of overdoing it to the max (which granted is Joshua’s while shtick but still ^^).

11:51 i figured the lumps mix in better on lower heat. i think the reason joshs didn't burn is because he used more milk which cooled his pot down

I had heard that grated cheeses like those could melt, and they'd be mostly right since they could melt well in low heat, but again, it depends on these types of cheeses.

A tight crumb means a denser, thicker, less airy baked good. It means there was less rising during the baking process.

I'm craving a grilled cheese right now, but not the radioactive one. The garlic butter was a genius idea, good job bud!.

It's a lot easier to make the cheese slices into "bread" on a silicone baking mat in the oven. I use all kinds of cheeses to make it, but the harder the cheese the better it works.
