Happy Bettyversary! It's been one year since I joined my friends Cooking the Books, Ginger Snap Kitchen, Jim's Kitsch Kitchen, and Unboxing Betty in cooking a recipe from the 1971 Betty Crocker Recipe Card Library! To celebrate, we've each picked another recipe to try out, mine is Oven Porcupines!
These easy meatballs have rice mixed in and can be made in the oven, or simmered on the stove (it's summer, can you guess how I cooked mine? 😂)

INGREDIENTS:
MEATBALLS:
1 pound ground beef
½ cup uncooked rice
½ cup water
⅓ cup chopped onion
1 teaspoon salt
½ teaspoon celery salt
⅛ teaspoon garlic powder
⅛ teaspoon black pepper
SAUCE:
1 can (15 ounces) tomato sauce
1 cup water
2 teaspoons Worcestershire sauce

I'm so glad the recipe was 50 years old and not the meatballs themselves. These turned out so wonderful Maikoh! The Betty card challenge was how I first found your excellent channel a year ago, and I'm so glad I did. This was lovely. Nicely done my friend!

😂😂 So happy with how them came out! They’re very similar to some Mexican meatballs my mom makes, slightly different seasoning and more of a tomato broth than a thick sauce, but also delicious! 😋 Aw that’s awesome! I’m so glad you came by, I loveeee you channel!! (Sorry, I’ve been so behind on videos lately! 😅❤️)

Love that you browned the Porcupine Meatballs in the skillet! This is one of my favorite Betty Crocker recipes and you prepared it perfectly. 👍👍Thanks for sharing. New Friend here!

Yeah the browning really gave them some extra flavor and helped keep them from just being grey boiled meatballs 😂 This was soo good! It actually reminds me of a similar Mexican recipe my mom makes, fairly similar but with more of a broth than a thick sauce and some more Mexican flavors! That hair just has me cracking up every time I see it, lol. But I'm loving this anniversary celebration a year later with these meatballs. Seems like with the rice already in there you can just eat them by themselves instead of over pasta with a side of vegetables and/or a salad. They look scrumptious!

😂😂😂 It’s always fun to play around with the wig, though I definitely always regret looking so goofy once I’m editing 🥲😆 These meatballs were really good! There’s serving suggestions on the card, which might be nice if I had made the meatballs tablespoon sized like it said 😂😅 but they’re perfectly filling on their own too!

Thank you!! So glad you enjoyed it! Ooh orange is a fun color, based off a quick google search, it looks like the orange one MIGHT be from 1975? I could be wrong though! Love these recipe librarys though, lots of creative recipes! 😋 Bahaha thanks, glad you enjoyed the hair 😂 Was trying to get a 70s-ish hairstyle, and my hair’s not long enough haha

Thank you!! They came out really good! This recipe card library has some really good recipes (and some not so great ones 😅) This looked like one that would be really good, wasn’t feeling brave enough to try anything like an aspic yet 😂

It’s really good, makes them more hearty! My mom makes something similar, a Mexican version with different seasoning and more of a tomato broth than sauce! 😋

Haha thank you! I trimmed down last year’s a little bit to make it fit, I just love how it turned out! Bahaha the wig 😂 These porcupines turned out really good! So far, all good recipes from the library.. I need to try an aspic some time 😆😆 Loved doing this!

Haha, I enjoyed them! The recipe card says it can be served with buttered green beans, lettuce wedges with Frenchaise (¼ cup French salad dressing and ½ cup mayonnaise), and squares of Pineapple Upside-down Cake, I was tempted to make the whole thing, but I hadn’t read that until I was cooking and didn’t have everything 😂

Haha, yeah, because the rice in them almost looks like a porcupine’s quills 😂 It’s very similar to a recipe my mom makes, except the seasoning is a little different and there’s more of a tomato broth than a thick sauce. Very tasty! 😋

You are making it much more difficult then it should be to prepare. You should be able to make this dinner in less than 20 minutes. Take 1 lb of ground beef add black pepper garlic salt garlic powder and dehydrated onions ( large pinch of each but easy on the garlic salt) and a large Fistful of rice. Mix them all together and make the meatballs all in a large pot. Once the meatballs are rolled up add one can of tomato soup (not sauce) and half a can of water. On the stovetop heat on high covered up until it starts boiling then reduce heat to medium then let it stew for 10 minutes covered. Once the 10 minutes are up your meal is done. Serv-on white rice or mashed potatoes. Done simple.

Yeah that seems way easier! 😂 I usually try to follow vintage recipes as closely as possible, on the first try, at least, just to really experience it as closely to how people did in those days! I’ll try it this way next time though, definitely making these again, they turned out so good!
