People think using that bug is super gross but modern-day food coloring for red specifically still uses that bug they just say "natural food coloring" instead of telling you it's a bug.

I love this series! A note: the frosting needed to be whipped with a whisk! It was a "meringue" recipe, so you beat the egg white(s) until they're foamy, slowly add the sugar in, then beat until you have fluffy, white frosting that forms a peak when you take the whisk out - it will look like the top of a lemon meringue pie. You should be able to spread it like a regular buttercream icing. It feels like it take about six years to make if you're doing it by hand lol, but you can do it! It's odd Mrs. Lincoln left out more detailed instructions - she must have assumed that anyone reading her cookbook would just automatically know how to make a meringue?

Extremely in depth instructions on boiling water, no instruction needed for making a meringue. I love old cookbooks.

i think it might have been a recipe for royal icing instead of meringue, because royal icing is usually made just like she did it. also 1 egg white, which i’m pretty sure was the amount in the video, isn’t really enough to make a meringue big enough to cover an entire cake.

@@noaheverett9647 that could be! I've seen old meringue recipes that just call for 1 egg white (an old 1860s cookbook I have just calls for 1), and her comments about "soft peaks" and beating for up to 10 minutes made me lean more towards a meringue over royal icing, but you could be right!

It gets worse when you go in college. Every professor goes this is the book we will need this semester. The book is usually written by the professor , surprised Pikachu face. The worse thing is that you use only a couple of chapters from the book. 😂 😂 😂

@@theodoralazy1941 god bless the hearts of my University and Department professors. As they never made us buy any of their books. One of them even gave each of us our own copy of their book for free so we would do good on the exam. Blessed woman. But my sis at different University had exactly opposite experience. Most of their teachers forced them to buy their books or they would automatically fail them on exams.

Not exactly... 140 years ago was the end of 19th century. Some women were already sciencists then. First female noblist (in Science) was rewarded some what near that.

Red velvet cake is actually different from chocolate cake. In other recipes, the reaction between the buttermilk, vinegar, and cocoa powder are what give it a red (almost maroon) color rather than dye.

I kinda get the feeling that Mrs Lincoln's notes on boiling whatever sound like what one first learns in physics (or science or whatever you want to call it). It's like one's first science textbook. That's pretty cool actually.

Ladybug in French is Coccinelle, so it’s a beetle like a ladybug (hence the red colour). There was a big deal made a few years ago because Vegans found out that Starbucks used this Cochineal in their strawberry drinks!! Not ancient. Pretty commonly used!

We also use Cochineal, for the red colour in most Red Candy. So the "Natural" colour, usually is by the Cochineal. A lot of candy in general don't have the "natural" colour of the colour the fruit makes, as they tend to be not as vibrant as the candy is. Can also be used in different types of lemonade to colour them deep red.

Hi Hannah! You should source the cookbook called Out of,old Nova Scotia Kitchens. Some of the recipes date back to the 1700s. I use it all the time and they are amazing! SO good!

Love the idea of edible history....I started reading Patrick O’Brian’s books on Jack Aubrey (Master and Commander) and I kept running into foods that he was fond of. Napoleanic era cuisine was unknown to me, and I found myself learning about Plum Duff, Spotted Dick, Eccles cakes and trying to make a Bakewell Tart.....Jack was not exactly a gourmand, but the intrepid sea captain in His Majesty’s Royal Navy certainly had a sweet tooth...

You'd be surprised how many weird ingredients there are in common, everyday foods. Just because something sounds a bit gross doesn't mean it ruins the whole dish.

Cochineal is still used in most red dye food coloring wether it be liquid or powder! Cochineal extract , carmine and carminic acid are all used for labelings used in food products! Cochineal are also used in lipstick.
