As a brewer, here's some advice. You never use distilled water in brewing as the yeast needs the minerals dissolved in regular water to perform correctly. More you know

That is the reason why it doesn't taste good. Water is a crucial ingredient in brewing.

I use well water. simple rule of thumb is if you like the taste of the water, you'll like the mead. same for the honey. I prefer a local clover

I totally agree. I was a homebrewer for 10 years. I made mead, hard cider, and a lot of ales of all different types.

ive done some brewing of beer, wine and meed. almost everything has been drinkable. this just hurt is so many ways it not eve funny!!!!!

A few mistakes here. -You din't let it ferment long enough -You used distilled water.

There were WAY more than a few mistakes, of that you can be totally sure!! I have been a Mead maker for more than 30 years! It was painful watching her mess up in just about every way possible! There was no way that any of what she made was going to result in a drinkable end product!

@@mikesmicroshop4385 the pliney the elders mead MIGHT HAVE come out as 'small mead' or 'children's mead' i.e. honey water and not alcoholic. I've been mead making on and off for 20 years, and yeah, almost painful to watch.

The biggest mistake was boiling it. You can't get a natural fermentation if you pasteurize it before it starts...

As a mead maker, this is the first time watching edible history where I was just aghast about how wrong she got it. Other than honey and water, nearly every step taking is the incorrect way to ferment mead. Not gonna thumb it down, she tried. But this will be the first edible history video I did not thumb up.

My husband is a meadmaker. You did great by using sugared honey, which gives it a richer honey taste. Now the rest isn't so good. After placing the Pliny's in a carboy, you need to put a one way aeration top on it to let the gases out or it can explode during fermentation due to the pressure build up. The detritus needed removed from the Meathe before placing in the container, or it'll be too strong (as you found out.) It also needed an aeration top, especially with the yeast. It also seemed like a lot of yeast for the amount of mead being made. If you really want to try some good mead, find a meadery close and go sample. My favorite is cyser, which is water, sugared orange blossom honey and apple cider. You can buy a few commercial market ones, such as Camelot, as well. Mead made well is an absolute joy to drink!

I've been making mead for 20 years. When I make a brew using modern yeast (bread yeast or brewers yeast) I let it sit for at least 3-4 months before racking it off and letting it set another month or three. When in doubt, age it out. 'a fortnight' is 10 to 14 days. also, I REALLY wish you had used airlocks. the Pliny's had started to build up pressure (you could hear the hiss when you opened it) and that could have turned into a bottle bomb. Instead of a cap, cover the opening with several layers of cheesecloth and tie it on (if you want to be period accurate, but personally I'd put a rubber bung and an airlock on it.)

@@animesoul167 better than sealing the jar, yes. better than using an airlock? NO. I have a two year old Chocolate mead that I need to bottle, and 5-gallons of Elderberry mead that's still bubbling after 7 months in primary fermentation.

As soon as I saw her cap it off and not use an airlock, I jumped down to the comments. Question, I have a mead I'm making with apples in it. It's on day 5, should I remove the fruit at any point? I was thinking of leaving it for 2 months to see how it goes, first time here.

@@Breniiful I've used Elderberries before and left them in for the duration of Primary. Apples are nowhere near as strong of a flavor, so as long as nothing molds, go for it.

WTF with that crazy amount of yeast? You could make 200 liters with that! I use 1g for liter for a rapid fermentation, normally way less.

Can we get a re-do on this one with help from a mead maker? Seems like it’s more complicated than cooking up a dish; there’s so much science involved! I’d love to see how it’s meant to be made.

Mead is easy to make. You literally just put 3 pounds raw honey, water, and 5 grams of yeast in a 1 gallon carboy with an airlock on top for 2 months to be sure it fully ferments and ages at least a little and it will be fine. Depending on your type of yeast it may come out a little dry but add a little honey and it’s good. Ec-1118 will ferment all the honey very easily then you’ll need to add a little to sweeten it after about 2 months to be sure all the yeast had died off

@@nathanhowland666 Louis Pasteur (the pasteurization guy) invented the airlock, and records exist of mead going back to the Bronze Age. Civilization including brewing existed long before modern methods.

The reason the Pliny recipe didn't work is because she tried to introduce cooking and modern science tech into a no-cook, tech-free recipe. Rainwater naturally contains wild yeast. Distilled water doesn't. Raw honey also naturally contains wild yeast, but she killed it all when she cooked the honey on the stove. There are always trace amounts of wild yeast floating around in the air. If she'd left the fermenter open, some wild yeast might have gotten in. But instead she sealed it off with an airtight cap. No yeast = no fermentation.

With that much honey, you would have needed an airlock. That proves you didn't ferment it right - it tasted much better in the past!

Mead "can" be awesome. But it really depends on how you're making it. I made one that was just Honey, water, yeast and yeast nutrients. For yeast nutrients boil one pack of yeast and add it to the mix.Yeast will cannibalize that stuff. I used a champagne yeast so it was a bright bubbly beverage that packed about 12-13% alcohol.

p0pp4 yeah, me and my fiancé made some about a year ago and it was alright, we put apples and cinnamon in it and it tasted pretty good, but it went bad fast so that was kind of disappointing. It was a fun project though!

@@MsStarSwordPlays Fun facts: because you used both cinnamon and apples, you could call your mead either an apple metheglin (apple flavored spiced mead) or a cinnamon cyser (cinnamon flavored apple mead).

I make a 'traditional mead' with 3lbs honey, teaspoon of bread yeast, and water to make a gallon batch, and it's pretty good. of course I've been using that for the last 20 years or so, and I have airlocks out the wazzoo, so I MIGHT have a little experience at this 'hobby' I did an 8% hydromel last year for my brother, and Capicamel (jalapeno mead) that's Awesome. I've done a couple of sack meads, but I think my best was the Elderberry mead. I have a 5gallon batch of that going right now

If it is still sweet , then it hasn't fermented. Try adding some yeast next time. Natural honey will usually produce its own natural yeasts but maybe your honey had been treated or pasteurized.

Several errors were made but the two easiest things would have been to use regular purified water and add an airlock. I guarantee the results would have been different without sacrificing the spirit of the recipe.

Could, after the quarantine, you remake this episode with an expert, I think with the fermentation it would be helpful, and less nasty. Also try a store bought mead. They're very good. I make mulled mead in a crock pot for christmas parties.

Mead can be an amazing drink if you stick with fruit and/or sweet spices to make it. For ones with items like veggies and parsley in it, those are much more worth using as cooking wines than actually drinking them.

11:50 Well, it probably has alcohol in it because the yeast was left to consume the glucose in the honey. This process produces carbon dioxide which can make a drink fizzy and alcohol. This process is used in making alcohol.

I've brewed mead myself a few times before. I would say it's better as 1 portion of honey and 4 portions of water (hot water). Makes it less sweet, and also not that much yeast, just round 10-20 grams of ale yeast for a litre of honey and put the yeast in when the mixture is cool down. And you definitely have to keep them brew for a much longer time than above, round 1 month. Using airlock is a must if you want a really fine mead, when it stops bubbling, you know then it's done. Then when you bottle it, you might want to use a bit of sugar to make it fizzy. If you do, after bottling, keep them sit for another 4 weeks and then try them. I guarantee you, that it would taste amazing!

I find the flavor of the mead is much improved by adding additional honey after primary fermentation. This will sweeten it and also a secondary fermentation will take place that will the brew fizzy. Make sure you use bottles rated to take pressure, or they could burst. There is a bunch of other steps I would recommend you take during the cooking phase too.

I agree with many others! Definitely revisit this with proper instructions and equipment and time! Most meads need a minimum of a month to be drinkable, and a year to be great!

Fun Fact: Bees eat honey for its sugar, the thing that they eat to get protein is something called "Bee Bread", which is a mixture of polen and a bit of honey and then its let to fermeant for a few day to let it rise.

This is the first Mead making video I found that uses is the measurement for a a single gallon instead of like a 6 gallon bucket makes it so much easier for the measurements

We call it Tej in Ethiopia, and it is one of the best alcoholic beverage for me. Very simple ingredients: water+honey (3 or 4 water volume to 1 honey, depending on honey thickness, the more concentrated the honey, the more water needed) and a yeast source, we use dried woods of "gesho" also known as "Rhamnus prinoides", but any yeast source should work, especially ones used for beer or Moonshine in US. Lastly, It should at least be fermented for 2 months or more . I think the producer didn't like it, because it didn't ferment long enough.

Add a tablespoon or so of the yeast to the Pleny's mead and wait a week or two. (You'll want to put an airlock on the bottle so it can outgas.) Then mix it about 70/30 with grape juice or (better) red wine. It'll be delicious. (Even with the extra brewing, it's not so horribly sweet.)

I made this once. I mixed honey with warm water, added some bloomed yeast, some crushed orange and raisin. I placed this in an empty gallon spring water bottle. I then taped a balloon to the mouth of the bottle. When the fermentation started, the balloon inflated, and I pricked it with a pin. A few months of waiting, and I tried some. It was over a decade ago, so I forgot what it tasted like, but it had a kick.

Whats the honey to water ratio in the 1669 recipe? How long did you cool the fennel and parsley? How much ale yeast did you add?

I tried orange mead wine recently, super sweet but not bad! I was gagging at the thought of fennel and parsley incorporated. Seriously try mead wine!

So cool to see Hannah Hart again. For some reason she disappeared from my feed a long time ago. I miss the cheesy jokes and the occasional cheese consumption. Loved the shout out to my drunk kitchen. But yeah, as a mead homebrewer, I could tell both of these recipes were going to be bad.

Fyi, you didn't let the fermentation go to completeness, among other things. Fermented properly, both of those should be rather good.

In an attempt to make mead I boiled, ginger then added some honey and lemon and then stored it in a warm room for about 2 weeks...and it can out pretty good but very STRONG.

Sounds good. Someone just posted a "Danish mead recipe from 1616" in the reddit mead group that has pepper, ginger, grains of paradise, cloves, galangal, and cinnamon for spice. By the way, you need to stir the mead with the magic mead stick... the one with the dormant yeast dried on it. It's a historical thing, look it up.
