I've found that there have been recipes in medieval times for their own version of chicken soup, called 'Cinnamon Soup' where they make it somewhat similar to a modern chicken soup, but with no noodles, and add small portions of cinnamon and ginger. Surprisingly, just adding cinnamon and ginger in small amounts to regular chicken soup, it tasted twice as good than I was used to. Never go without either now if I do heat up some soup.

The why of the Capon is because the texture of the chicken is more fine, when the male chicken is castrated at the age of 4 months he grows bigger than the usual not castrated ones, so his texture is inproved as the food your making with it. Love from México, xoxo.

I love cinnamon in meat! it actually balances gamy meats perfectly, i also use lavender regularly in savory cooking, and sugar (it's amazing how much more meaty beef or chicken or pork are with a hint of sugar thrown in). highly recommend trying those, it sounds weird, but it tastes great!
