Your cake is wet and falling apart because it doesn't have any kind of binding agent in it. In a normal, not gluten free cake, gluten is the binding agent that keeps the cake together and gives it that spongy texture. Gluten free flour doesn't have that natural binding agent so you have to add it in. I would recommend using potato starch. It has a neutral flavor so you won't taste it in the final product. Don't give up on your baking dreams! You can do it I believe in you ✨

i think people are forgetting that the “ice cubes” was actually just MILK WITH YELLOW FOOD COLOURING IN IT so the cake was just swimming in COLOURED MILK

Pastry chef and Taurus here, and I am triggered at the lack of rule following here Lol Vegan, gluten free cake (which is my speciality, actually)- These cakes are TIME SENSITIVE because of the chemical reactions needed for the substitutes to work. Once it’s mixed you have to hustle to get it in the oven right away. King Arthur makes a great 1 to 1 flour that already has binders in it to help. Idk what that egg replacer was but it was 👏🏽too 👏🏽thick! Unsweetened plain coconut yogurt, bloomed chia seeds, or applesauce all work great as egg replacer in cakes too. Marshmallow fondant- ALL you need is the marshmallows and powdered sugar. I DONT KNOW WHO TOLD YOU TO USE SHORTENING BUT I WANT TO HARM THEM. Melt your marshmallows in a double boiler and then keep kneading in powdered sugar until it’s fondant! IF ITS STICKY ADD MORE POWDERED SUGAR, NOT SHORTENING LIKE A MONSTER. Your attempted pixel cubes- isomalt would be a *dangerous adventure* for you but it is the easiest for decorations like that
