Welcome to Bring Up Berries! Today we are going to prepare a super healthy, delicious, and perfect orange and coconut cake for these upcoming dates. This cake is so good that you will not believe that it does not contain sugar or gluten. The ingredients that you are going to use are basically oats and fruits, which, as you already know, are very nutritious and healthy, so you can eat it all by yourself without feeling guilty.
INGREDIENTS
🌱1 cup (100 gr) shredded coconut
🌱 1 cup (150 gr) dried apricots or if you don't have the dried fruit of your choice or dates.
🌱2 cups (500 ml) orange juice
🌱3 tablespoons orange zest
🌱3 tbsp coconut oil
🌱3 Cups (250 gr) of oat flour
🌱1/4 tsp salt
🌱1 tsp baking soda
🌱1 tsp baking powder
In the video I give you the measurements in cups and grams, so you know that the cup I use is 250 ml.
FROSTING OR CREAM
🌱1 cup (150 gr) of cashews
🌱1/4 cup (60ml) hot water
🌱1/4 cup (60 ml) lemon juice
🌱1 or 2 tablespoons sweetener, I am using liquid monk fruit
