There was another shortage in our local small store and often certain foods do not get restocked for months. I appreciate shows like yours where we learn how to make things for ourselves. We haven't had sausage rolls in our freezer section in our store for about 5 months and I have a real craving, so will make your recipe this weekend. I like making my own breadcrumbs. When my homemade bread (all kinds of breads, buns, assorted bits from the freezer) is not that fresh anymore (either from breadbasket or freezer), I break up the bread onto a cookie sheet and crisp it in a low oven and then use my food processor to make the crumbs. They go into a bag and are kept in the freezer to add to recipes as needed. It is actually much cheaper making my own than buying those little containers of it in a store.

I have been using the cheese grater method for a long time and just today I watched a baker put flour on the stick of butter and grater first in order to keep it from sticking! 🤯

Yes, breadcrumbs! They're one of the not-so-secret ingredients for my mom's homemade patties because she adds minced vegetables and tofu (a way to sneak in more fiber and good nutrients for my picky brother) to the meat. The squeezed and crumbled tofu makes the mixture a bit lighter, and eggs act as the binder, while the breadcrumbs absorb the excess liquid from all the ingredients. The seasonings are simply pepper, garlic salt (sometimes replaced with soy sauce, but it does add a little more moisture to the mixture), and a generous splash of rice wine to reduce the gamey smell.

I’ve never been to Ireland unfortunately, but I am planning a trip within the next 18 months for six weeks to visit, Ireland, Scotland, and England. I just made these and I can't thank you enough for this tutorial! Everything turned out just like you said it would. I whipped up some honey mustard sauce to go with mine. I just have to say, I made these sausage rolls the other day and they were SUCH a hit wit my family! I used store bought pastry and some sausages and minced two cheese Russians with the onion bread crumbs and pepper and they were really nice!! Thank you so very much for this recipe!

Thank you for sharing this recipe. Sausage rolls are just about my favourite food. I love them warmed up a bit but often I prefer them cold. I also prefer them to be cut about 5 inches apart. When I hike or travel I always try to make sure I have a couple of sausage rolls wrapped up in my coat pocket. Whenever I'm in a bakery I always check out the sausage rolls. I've noticed that as I age it's becoming a lot more difficult to find bakeries that still make sausage rolls and the ones that do still make them don't seem to know how to make them properly. Home made sausage rolls are consistently wonderful.

Watching this video brought tears of nostalgia, remembering the Irish Nuns of my Elementary School feedings us sausage rolls & scones. Of course the Irish soda bread as part of our Irish meal for Saint Patrick's Day! God Bless them for imparting in us their Irish culture. I made your recipe for the first time and it turned out wonderful. I have a metal rolling pin and I keep it in the freezer which helped in keeping the dough cold. I shall use the dough recipe for empanadas and fruit tarts. Thank you so much.

Thank you girl this is Mona Clark my irish-american daddy who's in heaven today would dearly love those sausage rules rolles I'm speaking in a mic I can't see good and so forgive the misspellings or misplace words or and no punctuation I have to use it but I just had to stop and say thank you and God bless you and and I've never been to Ireland but all my people on my daddy side are Irish to the core and it goes back as far as they keep records and one of my sons did a check-up years ago couldn't afford all the the checking on the DNA but they found out it does go back that far and I know Saint Patrick's day was really big in our home when growing up and so whenever it rolls around it feels very special to me at 67 I just hope I'll be able to see Ireland before I leave this earth and the Lord takes me home but I can guarantee you my heart's there with the culture and with the people and will always be genetics and DNA don't lie I also had an older brother who is 11 years older than me he's in heaven to his birthday was actually the day after Saint Patrick's Day and so it was a double blessing in MarchI'm glad to see you on this cricket phone again I lost you for a while I didn't couldn't find your your podcast but I'm glad to find you again thanks again God bless

I’ll be making these! I love your version of the quick puff paste. In culinary school, my pastry instructor made something like this, and always called it a “blitz.” I am also wondering if you are going to weigh in on the Kerrygold PFA issue in NY and CA? Until they resolve that issue, I’ve switched to other European butters.

I know exactly what you mean girl. I left Ireland nearly 34 years ago. The food OMG I miss it. Luckily I can get a lot here in the Netherlands and I make a lot too thanks to you and others that show me how😁

It was amazing!!! I made 2 batches 1 pork & 1 beef. I also made a gluten-free batch as well. I added Mirepoix to the meat mixture as well. Thanks Gemma!! It was a hit❤

Expat Kiwi butcher in PA. In the ole days... butchers and bakers used to be next door or at least close by. Butchers used the old bread for sausages; so no surprise they would be selling bread crumbs. Sausage rolls are big in NZ as well along with black and white puddings. The problem here in the US is getting the sausage, not for me obviously, but English style sausage is milder than the Italian and German styles more prevalent here. It's also emulsified, and that gives the texture that's hard to get with an American fresh sausage.

For a bit more of an emulsified sausage texture, put chunks of cold ground meat in a stand mixer. Tends to make the cooked sausage a bit rubbery to the bite tho'. Can also adjust seasonings while mixing. Mix on low then medium speed. Occasionally zap a sample in the microwave and taste for seasoning and texture.

Yum yum yummy ❤ I was recently back home in Ontario Canada and was able to get sausage rolls from the Elmvale Bakery, soooooo yummy. Now with your recipe I can make in New Orleans 👏🏻👏🏻👏🏻Do you have a meat pie recipe?

Oh these look scrumptious! I would take Ireland over L.A. any day. Frankly, anywhere over L.A. any day. Sorry. 😐I’d be going back in a flash! We’ve been there three times and are in love with Ireland. Hoping to go back sometime. 🇨🇮☘️☘️☘️
