guys lets get something straight, just because a product does not yield the result you expect does not mean i did it wrong, i didnt show every single thing i did in the sharpening process because its boring and this is not an instructional video it is a comparison, for those wondering yes i did create a bur and yes i did got through all the steps properly, and this was the result, and it was a great result it was just slightly less then the $130 sharpener. could an absolute master have got a better edge? absolutely, but i am the average consumer and thats who im comparing these things for. anyone who is a knife sharpening master isnt watching youtube videos to decide which sharpener is better but the average consumer is and for the average consumer the $130 is a better option for 1/10th the price

amen sister. Ive been wanting one of those belt sander gizmos for years. I think I might have get me a black friday one at cabelas this year! My kitchen knives are literally awful, like embarrassingly dull and jagged. As far as your 100 grit surprise, I have used an actual belt sander flipped upside down to sharpen chisels for years and Im telling you even with an 80 grit belt I can get them extremely sharp. 120 grit belts will leave them razor sharp and quite accurate/straight... I have gotten a ton of side eye from that technique but Im tellin you with a little practice it works great.

I see these comments on hone with leather. I think what they mean is to strop the knife after sharpening to remove burrs. Anyway your comparison was eye opening. That belt sharpener sure looks good.

Stropping is usually not used to SHARPEN the knife. It is to remove the burr. Similarly you can also drag the edge along a piece of wood. It'll get knocked off. Then give it a couple quick polishing swipes on the stones. Leaving the burr on can go both ways, the burr can be so fine it's the sharpest thing ever, until it's knocked off. Or it can be bent to the side and feel duller than it should. All of that said: polishing stones no longer remove enough material to form a burr (it removed micro scratches) and none of the above should be necessary.

Not only does the 130 dollar sharper get the knives a lot sharper, it's less manual labor to just pull it across while the motor moves the belt :p That's an added appeal for a lot of people.:p

The 1000 dollar knife sharpener takes off a lot less metal than than the work sharp. Your knifes wont last as near as long. Tho I agree that the 1000 dollar knife sharpener is not worth the price.

Yeah 1000 dollars for that is quite crazy to me. Also the stones seems quite expensive for it, and its kinda crazy it doesnt come with full set on that prize. Eventually you would have to buy new ones too as those wear out.

The other issue is heating the metal which can damage the tempering. That's why stones are the best for sharpening good steel.

@@jorlejoca I thought the same thing until I actually used one. The belt doesn't run fast enough to put enough heat into the metal to take the temper out. Not even close. Plus you can vary the pressure you're putting on the blade, so if you see it heating up at all you can back off a bit.

You are absolutely correct, for 99% of people the worksharp will be amazing and do everything they need and more. I have a worksharp KO edition myself + the blade grinding attachment and strop belt kit and it's amazing! There's however a few differences that matter to the last 1%: The worksharp makes the blade run very hot, so there are pervasive concerns that the heat treatment of the blade could get damaged and that knives sharpened with the worksharp are more brittle and will dull faster. Second is that the worksharp will always produce convex edges which could be undesirable for some. The last thing is that the wicked edge is aimed at enthusiasts who will have high grit finishing stones and strops with compounds going up to 160000 grit. As mentioned, the worksharp leaves a convex edge, so you can't easily put it on a higher grit stone afterwards and even stropping can be more difficult. In other words, the worksharp caps out at 145 while with the wicked edge you can attain single digit numbers, you just need more stones and strops and accessories for finishing touches.

Turn the speed down and keep the blade cool.with water. You don't need sparks. Dry after you cool with water. If the blade is changing color you're doing it wrong

I disagree with a lot of what you said. The heating the blade up to detemper the steel is completely false. It's not going to detemper the steel unless you are negligent. 2 convexed edges are going to be just as sharp and just as polishable as V edges.

Im a knife maker and it really is about technique. I own both of these sharpeners, i got the work sharp when I first started and ya it gets them sharp but the edge geometry is awful and inconsistent. Its good for hunters because u can just run it through real quick and its a decent edge. But when I started getting better I really wanted to wow my customers with the quality and sharpness of the edge. I tell you what those 2 sharpeners arnt even on the same league. Not even close. I can get a knife so sharp that hairs literally pop off your skin. So sharp you can cut receipt paper standing on its own. Tyler is treating it like a kit you should just buy and instantly get amazing results but thats not what it is. Its not for beginners and its not something you just pick up. Its for professionals. It comes with a dvd or should have came with one and you need to watch over and over and practice and learn all the features and learn how to set up the knife. You dont just pop it in the vice and go to town. There is more to it than that. Its a process. I have nothing against his review, i just think hes thinking because you drop a grand on it you should just be able to pick it up and be pro but thats just not what it is. Keep practicing and watch the vids that go with it and I promise you it will blow that work sharp out the water. It seems insane to spend that much on it but as a actual knife maker the this paid for itself so fast. The sharper edge made people want to buy more because u cant buy a knife that sharp at all. And i have made a ton on sharpening other peoples kitchen knives. I also do maintenance on the knives I sold to people. I do it twice free and the rest $20. I get alot of repeat customers from this. As a newbie dont buy this. Buy it if you plan on giving it the time and if you are a maker or a enthusiast.

Am sure you are right, it’s clearly not a kit just to use in the kitchen for normal use; it’s more for people like you, who are knife sharpening enthusiasts, but with all that said the $1000 knife sharpener could definitely use some more user friendly upgrades, like the handle not holding all types of knife as it was wobbling when sharpening, they could also put some more brick grits as it only went up to 1000 grits as the higher ones are required to be bought

You are right. I still think the wicked edge is too expensive. I went with a kme and I can whittle hair only going to 600 grit. It's all about understanding how to sharpen in the first place. I see a lot of people jump into these guided systems before they even know what a burr is.

MidnightHDGamer when set up right it doesn’t do all that wobble stuff. Its already as user friendly as it can be and still be so precise. If you want those results and you want to spend 1k on a sharpener that can do that you need to be willing to do the work to set it up and get those results. In the kit they include everything you would need. Most knives you really should only use up to 1000 grit. They are going to be used and get dull anyway so the super mirror polish is a waste. For 99% of knives 1000 grit is just fine and razor sharp. The stone is high quality and expensive so if they took it to 5000 grit the kit would cost $1500 instead of 1000. I rarely take it past 2000 so 1000 is completely fine. No matter what sharpener you get you will never achieve those results without putting effort into it.

I'm really pleased with this! It works like a charm kzfaq.infoUgkxDcr-y2Pf6xdnrFHrSP7dl9kpKaCozcSQ Takes less time than my old electric sharpener because it can take more off the knife faster, and then it smooths out nicely with the finer grit polisher. I don't know how long it will last before the grit wears away, but I wouldn't mind having to replace it every once in a while.

I own the work sharp and it's a beast. The guide also comes off and you can use it to sharpen tools like axes and such. Great video Tyler keep it up 🤙

As someone who commented last time, I agree it’s not bang for buck, but as I said, that $1000 sharper is meant for an accurate edge, it’s not finished, that’s why it only goes to 1000 grit… that comes from every chef I ever worked with… also ignore the haters mate, good job Tyler.

I've used loads of sharpeners and by far my favourite are the mdf wheels with silicone carbide on them. Really quick and really sharp.

You can hone with cardboard too, not as good, but its cheaper and it works. Or just use the bavarian edge that he already has. That is a honer not a sharpener.

Tyler, the WorkSharp sharpener has the pivoting head so that you can sharpen tools. Such as lawnmower blades and axes, where moving the sharpener will have more control than moving the (awkward, heavy, or curved) blade to be sharpened. (The angle guide should come off as well, to help facilitate the tool sharpening process)

I may be mistaken but I believe on the high dollar sharpener you use the peg type insert and only sharpen one side and set the angle and work it to a burr or wire and then adjust and sharpen to an even edge on the other side, not using both side simultaneously, but I may be wrong, either way it looks like you got a very nice edge on the knife

On most high dollar sharpeners you actually do that, but this high dollar sharpener is mainly designed for using both sides simultaneously.

@@Qballl I can't give you a numerical number but u will say a good polish strop job will make edges cut much cleaner, especially on maintaining an edge, I use jewelers rouge on my straight razor and it's dangerously sharp after a strop

Tyler, you should also try out the worksharp precision adjust knife sharpener, it's only $50 but you can also get the upgrade kit that has more stones with the sharpener for like $130 I think. I personally use this sharpener to sharpen my knives 👌

The kit is like $80 or so bucks. The whole setup is about $130 if you buy the elite kit which comes with everything. That’s not even mentioning the after market parts that let you use so many different stone grits and brands.

Yesterday I watched your $1,000 sharpener vs a Work Sharp $4 video. Today I discovered this one, which is more meaningful to me as I have a Work Sharp KO and would be lost without it. Having said that my favourite method is sandpaper which is not for everyone as that requires skill. I regards to the $1,000 model, to me that wouldn’t be worth a flip, unless there are attachments that you didn’t mention and even so I still question it. My sword blades wouldn’t fit into the vise which seems a little rinky-dinky. Not to mention trying to use the stones on something as short as my shorter machetes without numerous repositions. I have Work Sharp KO as mentioned earlier. That one will handle everything from my kitchen knives to ≈32” swords. I’ve got an antique kukri with a 13mm spine that is shaving sharp, try your $1,000 on that. As for you not figuring out the advantage to rotating the Sharpening Cassette, remove the Sharpening Guide group and then rotate the Sharpening Cassette to a suitable angle and then sharpen free hand if necessary. The narrow purple belt (6000) was designed to be used on hooks and serrated blades. If the fine belt is too coarse for you try it worn or get a leather one. I’ve saved my worn-out fine belts to us with a polishing compound such as white or red jeweller’s rouge. In both videos I get the idea that you don’t fully read the instructions. I’ll take my Work Sharp any day over that $1,000 klunker.

I LOVE my ken onion work sharp! It also puts a convex edge on them instead of a straight one which lasts a bit longer. Also, they head rotates so that you can freehand it to sharpen things like axes and lawn mower blades. You take the angle guide off and then you can hold the sharpener in your hand and run it along a blade.

@@GAR45TH I'm sure he is looking up how to use the items he buys. If I spent $1000 on a knive sharpener. I would do some research first forsure. He doesn't go in looking for negatives. He uses these products so if we want them he let's you know what to do and not to do. Like the tip where the knive holds in. For a thousand dollars that shouldn't be like that. I'd rather spend $130 now instead of $1000 because it works better for less. He helped me save.

And that is exactly why the vice on the expensive sharpener has those two pre-determined depth gauges, so that the knife can sit higher and the sharpening stones don't make contact with the vice.

So one big thing about the Ken onion sharpener is that it completely changes the profile of your knife edge from a flat edge to a convex edge

The main benefits of something like the Wicked Edge comes from being able to get very accurate angles and allowing for precise micro bevelling. It's definitely a tool geared towards the high end enthusiast and professional maker/sharpener, and the price reflects that. Shame to see the vice grip didn't do you justice, I have used the cheaper model (I don't personally own one, just got to spend some time with one) and I really enjoyed it. Would love to see your take on something like a Tormek if you like powered sharpeners!

The WE also allows you to easily repeat the exact bevel that the knife was sharpened to the last time. When I sharpen knives I charge $5 for the initial sharpening and $3 for subsequent sharpenings.

Thats with any sharpener, the point of the edge pro is ease of use and consistency. You can take any sharpener and make a knife sharp to be honest, hell I've seen a 5 dollar knife sharpener do it with like 100 passes. Really tbh I'm not a fan of the edge pro, I think they charge far to much for the product and the stones. My tsprof cadet works pretty good for half the price, had a kme which I liked but it was way to finicky for my likimg

I don’t like how the work sharp rounds tips off and you can also get uneven sharpening causing dips along the edge of you aren’t careful. It also removes too much material. I always use stones…gets sharper and knives last longer that way.

I used mine on cheap kitchen knives first or cheap knives. Now I can get mirror finished edges with my Ken onion work sharp with the polishing belt and I am very good at doing it now. It takes practice to be perfect. You gotta practice how to do the tip. It just takes time.

I'd rather have a bandfile, clamp the knife in a vice and then bring the sander to the knife instead of vice versa. More control; this is how I sharpen all my yard tools.

Yeah, Ken Onion sharpener with the blade attachment is a huge upgrade to that system. No rounded corners. Stones are good and dandy but they take more time. Especially when using whetstones, having to clean and flatten them. Just general maintenance can be tiresome. I personally like both Edge Pro system and Work Sharp but for different principles.

I could be wrong, but I think the benefit to the $1,000 sharpener is that the knives will last longer. The $200 sharpener is sanding off more metal to get the edge. That's largely a guess on my part based on limited sharpening knowledge and experience. A pro knife sharpener probably has better ways to justify the high price. Personally, I'd stick with the $200 sharpener or even the $5 sharpener Tyler showed in another video.

I have both. The wicked edge needs the diamond stones broken in before you can really put an edge on a knife. The way the diamonds are bonded to the paddles is they aren’t uniform and the lose ones will need to flake off during the first usages. I have the leather strop paddles with it and it works fantastically. Either of them I can get an amazing edge but the WE wins out. The knifes will cut hare running it above the skin no problem.

I think you did a great job giving this an unbiased comparison between these 2 sharpeners. You showed the results and even gave the more expensive sharpener a less duller blade to work with and it fell flat. I love the work sharp Ken Onion

Hey love the video and you are bang on for the majority of people but I do think you are missing a point, not saying its done intentionally but it is an important one for those who use expensive knifes regularly. Belt sanders remove a lot of material quickly, it would be substantial If you imagine a chef having his knife sharpened once every month or two the knife would wear down pretty quickly using a belt sander. You also have to be careful not to change the profile of the blade which is easily done with a belt sander. That is the main reason sharpening stones are still so popular you get great sharpening with minimal material removed. As belt sanders are almost always used when a knife is first made to put its first edge on. Every tool has pros and cons and it does hugely depend on the situation and type of knife to say which one was best for everyone.

Oh not saying a £1000 knife sharpening device is worth it by the way I use normal flat sharpening stones that cost me £70 and i have sharpened my wusthof knifes for the last 10 years on the same stones and both the knifes and stones are still going. So my advice would be learn a skill do it cheaper than both those devices for years to come no power cord, belts or wobbling clamp needed. 👍

true whetstones /diamond/ ever other freehand sharping stone removes alot less material than beltsanders. also you need to polish your edge to remove the previous gritt scratches :) for optimal performance

In the latest Project Farm video called Russian vs Usa knife sharpener he used the wicked edge knife sharpener on a dulled knife and got a result of 85. His stones went no higher number than yours.

I’ve used the worksharpe before. The one downside I have against it, is that it’s a lot easier to mess up the blade. Because the belt is spinning so fast, if you aren’t careful, 1 pass is enough to mess up the blade, then you have to spend a lot of time and possibly remove more blade then you wanted to fix the blade. That’s why I prefer hand sharping using the lansky or the manual worksharp sharpener. I don’t sharpen too many knives, so having a motorized sharpener isn’t a pro for me.

The sharpener I use most is cheap, and works great. It is the Smith's CCD4 3 IN 1 Field Sharpening System. It keeps my knives sharp, and ready for work.

If you're interested in it as a kind of hobby I would recommend going straight to whetstones for hand sharpening. You'll learn a lot about the mechanics and develop skill.

As a knife enthusiast, and as somebody that enjoys sharpening knifes, I can tell you the 1000 dollar sharpener is better, but since it isn't powered it will take longer. It also needs some honing oil to get the best results, along with proper technique learned only through experience.

The $1000 knife sharpener is definitely better if he were to just get the higher grit stones for it. I wouldn't say it's worth $1000 but you can definitely get a sharper blade with it over the worksharp

Theres something about having something elegant simple and humble that doesn't need electricity that is appealing. If the jaws worked and I was really into sharpening knives I would get the 1000$ one and pay for the extra grits. It would be a nice countertop piece and it would probably last a lifetime. The belt sander one belongs in a workshop not so much a kitchen. Love your videos man I watch all of em

I'm sure there's something very satisfying about using that $1000 sharpener and maybe there's a bit of technique to it where you could get things sharper (though I doubt you're gonna do much better than Tyler in this video) but the price tag is insane for what appears to be literally just a vice, some moving arms and sharpening stones.

I have a ken onion edition. I quit using it becuase of the diffrent directions u end up sharpening at depending on which side of blade. So u end up fighting the pull anf the push of the belt. Just not ideal so i do freehand

Your 1000$ one requires use of mineral oil on the stones. If you don't use the oil it won't sharpen correctly.

Tylor please read this. When you did the arc with the batteries. Here is a idea. Take a pencil sharen it. Remove the eraser and cut back some of the wood to expose the lead of the pencil. Place the + on the lead of the penci and ground on a metal plate. Use the plastic PVC pipe as your hande to hold the pencil. It may act like a carbon torch.

If you want to try free-handed sharpening, the best sander I've used is the 1x30, because it is so mobile. The belts I use are 600, 800, and 1000 grit. Finished with a leather strop, the edge makes the hair jump off of my arms.

Im with you for any kind of practical use. The only thing about the wicked edge is that it produces a straight edge vs the convex edge that the worksharp does. A straight edge brought up to the same grit as a convex at the same angle will be technically sharper, but the convex is stronger.

The best way to test how sharp a knife is to let the weight of the blade cut into a strawberry with no unbalanced forces applied and you'll see a massive difference between how sharp an edge feels compared to how sharp it actually is, a4 printer paper tests end up dulling the knife and aren't a consistent representation as the paper is too thick it carries the blade through (magazine paper is much thinner and against the grain is a great test as most knives without being that sharp won't pass through it), tomatoes show nothing to do with sharpness just how thin you wanna make them slices unless you do the same test with it as you would with the strawberry it could be a decent indication. Quick edit, when you dropped that tomato on the knife and did the slicing without holding it that was quite a bad performance on the knife usually you can drop it within a foot or less and it should cleanly cut, (not quite sure which one it was the 165 or 145). Also i don't think you should do both at once but it probably is designed to be used that way i've never used one before but if you do one side the same way you would use a whetstone then strop after stroping is what gives the knife the sharpness the way you;re doing it if i'm not mistaken is grinding the metal as that certain degrees which flattens the apex out on both sides which gives no burr

I own both the Work Sharp Ken Onion (WSKO) and the Wicked Edge (WE) sharpeners I do not yet have the blade grinding attachment for the WSKO but am leaning in that direction. If I had it to do over, I would go with the WSKO with the blade grinding attachment and perfect my technique. I also have water stones but find that for me, I don't want to spend that much time perfecting and maintaining my sharpening technique. I like easy, quick and effective. The additional stones for the WE really add up.

I think you are not realizing some of us have knives worth more than either sharpener. Not just monetarily. The belt sander is going to take a lot more steel off, and reduce the life of the knife. Plus, until you use the other one as intended (properly) you can't judge it.

If it makes you feel any better about dulling them, I regularly drop my $430 BRS Venom Alphabeast on cement and recently had to regrind the tip because it completely chipped off about 1/8 of an inch haha! As long as you can sharpen a knife, it doesn’t matter how badly you dull it

The little guard is for the knives that are too thin its to elevate the knives that when you put them in the vice to the bottom the cutting edge is under the level of the top, that's why the knives your using wobble with the little bit in they are too high

I'm mostly curious how the higher grit stones would do, personally i'd go for the cheaper belt sander style, but still curious to see the maximum potential of the $1000 knife sharpener, and it would be cool to see like a $400+ knife like Miyabi Black, or the $230 Yoshihiro Mizu Yaki Blue High Carbon Steel, but IDK how well these videos actually do for you or if that would be worth it, but it would be cool to see.

Ironically, Worksharp make a $50 sharpener that works the same way as the $1,000 one lol. You should test the $50 vs $1,000! I love both of Worksharp's electric and manual $50 one! Also, you shoud strop them a few times to really see a more accurate and sharper knife. 10-20 strokes on a peice of leather does wonders!

I use a $25 chef mate knife sharpener. It works great, does the job, and it fits nicely in a drawer. I use a thick folded wet paper towel to clean it, and test sharpness. The sharpened knife can cut through a good chunk of layers.

You absolutely MUST strop the knives after sharpening. Otherwise you're only testing a burr. Strop both test knives and then test their sharpness. Keep up the good work! Love your channel!

High carbide steel is the other place where the diamonds take the cake. Some carbides are harder than aluminum oxide that the belts are made from. Sharpening then will wear down the belts and causes edge retention issues as it weakens the steel vs. cutting.

I have always used wet stones and leather and I can get my roughly $100 knives to be insanely sharp but it takes a lot of time if I damage the blade for some reason and have to re sharpen the blade. I also sharpen knives for friends and family for a fee and i'm really considering buying this work sharp sharpener just to make the sharpening process on the other peoples knives much simpler and still end on a strop and i'm pretty shure that I can get a knife just as sharp that way in considerably less time than it takes to use my wet stones. thank you for the video, it was a really good tip and i'm buying that sharpener when my next salary comes.

Technically you are supposed to use a leather strop after sharpening to get rid of the burr that forms at the edge of the sharpened area. Especially when grinding with the stones to the edge of the blade. If you grind from the edge of the blade to the spine of the blade the leather strop isn't needed because the grinding stones take away the burr that forms. The ceramic stones can be used to finish the edge and get rid of the burr that forms instead of leather too if you're sharpening in the direction the wicked edge forces you to. I completely agree though the wicked edge is not worth the money. The work sharp or a carbide sharpening tool can achieve the same sharpness as well as just sharpening a blade by hand.
