I'm adopted from Bulgaria. I went back a few years ago to visit my old orphanage. The orphanage was in Pleven, and I have always loved Bulgarian food but when you have legit Bulgarian food in the country of Bulgaria, ITS 10 MILLION TIMES BETTER. I have made so many Bulgarian dishes. It's good stuff.

I've seen your other videos on Plovdiv and I agree with your sentiment that it might be your favorite European City. Except for the amphitheater, there aren't many grand spaces but it is a cozy place...I never used that word for outdoor spaces, but that's what these places feel like. It draws you in and you just want to hang around them because of how they make you feel.

You can eat the "Patatnik" any way you want, traditionally it's served as addition to main course, but can also be appetizer. This type of bread is actually not typical in the Bulgarian cuisine, it's more popular else where, like Middle East and South/Central America. I'm guessing there is a brick oven somewhere at the back where they cook the patatnik, and have decided to take advantage of it and use it for baking other things like the flat bread. Bread usually comes in a loaf or traditional "pita", which is a cob loaf, and in both cases is much thicker. Rolling the dough flat would allow it to bake much quicker though, which is great if you want to have freshly baked bread in a restaurant

This is our special word , so hard to be explain, because this is a Way for Living . Yes, exactly :). This is the way, how you feelin, chiling, when your mind 'fly' around the things, when your head is empty from the everydays sh*ts, when you just want to get fun , to take a breath ... so, it's a little bit like ''nirvana'' , but more cool ! Oh, the irony and how you missed it although it was all along you the whole trip. I am talking about the painting in your intro and to quickly add: Now British people are falling in love with Bulgaria too :) Do you guys know what is the painting behind you and what it represents and who is on it? Do you know that you were all around him during your trip. You were around him in Sofia, Plovdiv and literally in the Rila monastery? I see that it grabbed your attention but you didn't check its history :) The painting shows an Irish, whose request to be buried in Rila monastery was granted. Up to this day he is the only foreigner buried there. He is James David Bourchier, the BG wiki page with translate has more info on him where you can understand why his request was granted.

It became Philippopolis before Roman times. It was named after Philip II of Macedon when he conquered the city. Romans came few centuries later, but I think it remained Philippopolis.
