Is lupin flour keto-friendly? Lupin flour comes from the lupin bean, which is a legume similar to a peanut. It’s non-GMO, and it has a neutral taste. It also has a great texture that’s very similar to other flours. It has been consumed in certain parts of the world for a very long time, and it’s loaded with antioxidants. Lupin flour is even very low on the glycemic index.
In 1/4 cup (31.25g) of lupin flour:
• There are 12g of carbs
• There are 11g of fiber
• There is 1g of net carb
• There are 2g of fat
• There are 12g of protein
Lupin flour is also unique in that it doesn’t have starch. You could actually use it in making keto-friendly pasta, bread, and cookies.
Lupin flour also has nutrients, such as:
• Vitamin B1
• Magnesium
• Potassium
• Phosphorus
• Iron
• Zinc
• Calcium
Lupin flour does have some lectins and phytic acid, which some people are sensitive to. But most people shouldn’t have a problem with it.
So, is lupin flour keto-friendly? Yes.

Lupin is awesome! It lowers blood sugar! I’ve been baking with it for months and still in ketosis! Great recipes online.

PSA: Before thinking this lupin flour can be replaced 1:1 -think again! It is very bitter used like this! This flour will add a lovely texture to your baked good in a small amount. Start off with replacing just ¼ of your almond, coconut, or the flour of your choice. Once it's cooked, you'll be able to determine if you can tolerate more lupin flour or not. If you don't detect bitterness, up the lupin flour amount on your next recipe!

I actually did use this exclusively for my keto crackers and my keto bread but I added Monk fruit and everything but the bagel seasoning to drowned out any bitterness it was brilliant!!

Try to find "sweet lupine flour". The bitter taste is much reduced compared to regular lupine flour.

Just soak in water until bitterness is gone. Keep rinsing and throwing bitter water as you go. The outcome is absolutely delicious. Of course my comment is 2 years too late 😂

We call it chocho here in Ecuador, you cook lupin with salt. It's very dense in protein and great with tomato, onion, lemon and salt.

This makes me so happy! I started using Lupin Flour because the texture is the closest to flour and it makes great keto friendly cookies. I want to try it for bread and cobblers next! Thank you Dr. Berg for your expertise. I am 65 and am on zero medications, not even Tylenol or Ibuprofen. I follow your food advice regularly and am trim and don't have the bellies other females my age do!

I used it in cookies and it was awful. Like a bitter burnt bean. The whole batch went in the garbage after my husband and I spit out the bites we took. 🤮

I've been cooking with Lupin flour for awhile now .. mix it with a little almond and flax meal for breads . For cakes drop the flax and put a little coconut flour. Lupin flour is almost a 1/3 the calories of almond flour. Big thumbs up from me ..👍🏼

How does it do to thicken a sauce or gravy? I got arrowroot flour and while it does thicken liquids, it has a weird sheen and texture, too much like snot lol!

@@alison5072 I've only been cooking for a few years .. most of the recipes on KZfaq ..for cakes just swap out the almond flours for say 60 % .. make sure you keep some almond and coconut flour to suit your tastes .Lupin flour takes a little getting used to. Great for calorie restricting. if your looking at losing weight or just staying on keto diet . Choose recipes with no fat or some fat .. you can also use cocoa powder as a flour to disguise the taste of the Lupin . we all have different likes and dislikes of what we can tolerate . I'm still working on weight loss I choose a lot of lower fat options .

Try zanthum gum for thickening .. start with 1/4 teaspoon .. if your wanting a nice creamy gravy .. cook cauliflower up - not to over cook it .... butter to taste and use a stick blender to get mash potatoe texture . Eat it as is or blend it with meat or veggie broth for a gravy . Oh yum .. very healthy .

It is uniquely high in protein and dietary fiber. Each 1/4 cup contains just 1 net carb, and is high in antioxidants! This type of flour is gluten-free, and also vegan. Although lupin flour has been consumed for centuries, it's becoming more popular now to use in keto and low carb baking recipes.👍

Check that pre before you used...I read the flower ones are not same variety and are not edible

lupin is quite known in the middle east from long ages, it is superb food, we boil the hard seeds. until it became soft and then we add salt, olive oil and some vegetables to make salad, or we dip the cooked seed in the mixture of salt and cumin as a snack.

We call lupin bean tormos in Lebanon and we like to eat it as a snack of course you have to soak it first for few days to get the bitterness out then boil it before consuming with just salt but never used it as flour i’m not on keto but I’ll definitely try it thank you

Thx Dr. BErg for this informative video.....been using lupin flour for almost a year. Tips: Buy Sweet Lupin Flour..there's no sugar in it, just the species, bit lighter in colour, and not as bitter.don't use it at 100 percent, I use 3/4 c. almond flour to 1/4 c lupin flour. My first recipe of biscuits with 100 percent lupin flour were bitter, cuz the bean is bitter.... a tsp of Swerve or other keto sweetner cuts down the bitterness. If u have a peanut allergy....not recommended. Good texture with bread and cookies, pizza....didn't like. fyi

I Don’t Sugar Coat on KZfaq has a bread recipe using lupin flour that is great! She got her start from another lady and she mentions that in her bread tutorial. The lupin bread turns out good most of the time (she has changed the brand of lupin flour she uses now), but the originator of the bread recipe, Deidra, turns out awesome every time! If you haven’t had these breads you are really missing out.

Can you soak, sprout, or ferment lupine flour to deal with the anti-nutrients? I'm nickel sensitive and it usually helps reduce my dermatological reactions, but it also helps with lectins and such if I do it to seeds and beans.

Hi Dr Berg, Loved your video and have already used quite a bit of ground lupin (Carrington Farms) to make side dishes like couscous, tabbouleh salad, grits, etc. I love it. I agree with everything you say and have been on keto a long time. The thing is, I have noticed after consuming ground lupin or lupin flour, that my fingers tend to ache within an hour or two, and may be inflamed slightly for the rest of the day. Since keto is all about cutting down on inflammation, do you think this could be a non-keto-friendly food for me? I love it so much, but don't know if perhaps I should be avoiding. PS, I have no peanut allergy.

Lupina brand is the only one that is any good. The others taste like dirt. I've been using it on Keto for over a year and it's a game changer! Gives baked goods the great texture we've been missing with almond or coconut flour alone. I find it works best to swap out half the almond flour in any recipe to create a 50/50 baking flour mix.

Yay....less almond flour and coconut everything. Neutral taste is a plus ....yet if have nut allergy it is a no. Looking fwd utilizing more lupin flour in more recipes.

We used to boil and eat it as a snack. But I've been depriving myself from eating it a year ago since I started keto. Now I'm glad that I can eat it. 😃

@@TheEMC99 we buy it dry. We soak it in water over one night. Then we boil it in deep water for one hour. To remove the bitter taste we soak in in water and change the water every now and then. After that we put some salt and eat it.

I use lupin beans for cooking but it different way of cooking compared to the other beans .....It has a little bit of bitter taste. And it is High in potassium 😊❤

Can you make a video on Teff flour. We Ethiopians can not live without injera which is made of Teff. I know it's not low carb but it aides in some weight loss.

Wonderful! I've been using it. I don't think I eat enough for any lectin impact. A tablespoon or two can't be that much. Since I'm keto i take two slices of bread but end up putting one back because I'm full. I rather like the lupin bread and rolls. The recipe I use has both almond and lupin flour. I've not tried noodles yet. I've been using those konjac noodles...they're okay, not great.

My question is about Whole Wheat Einkorn flour. I’ve been hearing about it and recommendation to make KETO BREAD? Could you do a video on Einkorn Flour and explain the nutritional value and MACROS? I appreciate your videos very much they started me on KETO and I’m very happy with the results.😂

Hello Dr. Berg, Please make a video about these two ideas: 1. Does carbs really cause diabetes or is it high omega 6 oils in all of our foods now 2. After you have a 70-80 blood sugar, should you carb cycle to prevent physiological insulin resistance

Insulin RESISTANCE IS a cause of diabetes type 2!!! And you get this if used to eat high carbs food. Omega 6 though provokes inflammation, so replace it with Omega 3, DHA more precisely
