Dunning-Kruger effect. The more incompetent they are, the more confident they get. Conversely the more competent they are, the less confident they get (up to a point, when they recognized how good they are when at the top, which top chef like Ramsay is).

I heard somewhere she eventually closed the place down due to external or personal type of reason :/ she has her own YT channel though. She cooks on their with her daughter. Sad to see a great place go. Imagine the energy of that place combined with delicious food. Would definitely be a place to go for comfort food.

@@wildfire7766 I think the point is more that usually we see these owners and/or chefs dig in their heels before he even eats, saying the food is perfect and if he comments he's dead wrong in advance. Why ask for the help then? This lady just "hopes he likes it" and says thank you when he compliments it. When he says there are things he would change she responds with "that's fine, and we're happy to hear it". She asked for his opinion, and unlike most of the people on the show is willing to take it from the beginning.

No they made an effort because it's Gordon. The food he was served was the freshly made stuff, but when they serve customers they cook in advance and freeze it and reheat it, which is why the place was failing. They were cooking amazing food and then ruining it by throwing fresh food into the freezer, because she couldn't afford to pay her cook to work full-time. After the show the restaurant turned a very small profit for a couple years and people were happy with the food but then she suddenly closed down due to "personal reasons".

I remember the entire episode so well. Gordon helped her to grow her business with some useful advice and she actually did end up buying a bigger place coz she had so many more people coming in, but then the restaurant just started reheating frozen food for everyone and quality dropped down big time. Gordon was very disappointed that even though her business looked like it improved, the quality had gone downhill. Gordon is so damn logical. I have admired him for years and this show truly is one of my favourites

It is incredibly difficult to keep a restaurant's standards up day in and day out. I've worked in many kitchens myself and the owner turnover rate is insane. Even the best one who know food and how to run a kitchen eventually experience burnout and find something else that's more relaxed. If they don't do that, then turning down quality and resorting to quick, cheap substitutes for their menus is usually their go to resort. It's backbreaking, neverending and often very thankless work. If you make high quality food and you have success with that, it's possible for you to eventually become a victim of your own success. The people keep pouring in, more and more each day, all of them expecting a decent meal because that's what you became known for and you have to keep up with demand day after day, with the work piling up and never ending. Nobody can keep that up indefinitely. At some point, you either need to delegate to another cook you can 100% trust to cook your meals according to your specifications or you need to downsize or, as is most often the case in my experience, sell the business to someone else and do something different with your life, as was also the case for this owner.

This lady is legendary, this episode is like 15 years old and it’s from before Ramsey ever started making tv in the US. As far as I know this is the only food he ever said he liked on any episode of the UK or US version and not only liked it he ate ALL of it. The successful places are less likely to pull the crap we see on these shows and that’s why their food tends to be better and people go there, hence no need for Gordon to show up. The worst sanitation conditions you can imagine are from places like Applebee’s or Chili’s or Friday’s, corporate places someone like GR would never go to cause why would he. But just keep that in mind. The corporate overlords don’t pay their managers shit relative to what other managers at non corporate places get so they don’t worry much about cleaning or cross contamination. You’d be shocked if you went in the kitchen of some applebee’s.

I think it's just "his thing" like that is what made the show popular was him losing it and swearing and shouting. Made it more dramatic.
