if she was making a point about the ingredients, I would understand. some ingredients just take ridiculously long amounts of time to prepare, to grow, to ship. however to say that it can't be done every day, and then just not, oh I don't know, order fresh fucking ingredients *all the time* when needed, is just bad ownership. and it's disrespectful to the very culture she wants to empower, if unintentional.

I think what she means is that some foods can't be cooked every day. Simple foods like chicken can. However, kidney beans for one of jamaica's most famous dish "Rice and peas" can't. The beans need to be soaked overnight and most people let meats such as oxtail, goat, etc marinade overnight as well.

@@shantalle.8888 that’s why I’m culinary school you learn to have mise en place and prep everything out as far as you can. we have to take food safety classes also so we learn what meats can be left seasoned and ready to be cooked when the order comes in. versus sauces/dressing that have to be thrown out after a couple hours

Pretty sure u can cook stuff fresh every day even if it takes days to prep. You dont wait for the food to get eaten before you start to prep more. U just keep prepping days ahead so each day there is some ready to go.

What's crazy is, this type of stuff on these shows and clips happens in a ton of restaurants. Even your favorite restaurants have some dirty little secrets. I've worked in 12 restaurants from family/casual dining, up to fine dining. And out of those 12, one was completely immaculate, 2 were decent, and the rest all had issues hidden from the customers and brushed under the rug by management.

I worked at a restaurant that was so cheap that they used to make us serve stuff we dropped on the floor anyway. We would have to cut the mold off of the cheese and still use it. Nothing from the salad bar was changed until it went bad and a customer complained.
