Recipe:
1 1/4 lbs Boneless, skinless Chicken Thighs. (or any cut), Cut into 1-2 inch pieces.
1 Cup Julienne Carrots
1/2 Cup (1 Med. stalk) diced celery
1/2 Cup (1 med) diced onion
1 Teaspoon dried Thyme leaves
1 Teaspoon minced Garlic
1 Carton (4 Cups) Chicken Broth
1 Can Cream of Mushroom Soup
1 Package (16 oz) Gnocchi (not frozen)
1 Package (9oz) Frozen peas (thawed)
Cook chicken 5-7 minutes in skillet, until brown and no longer pink.
Mix in all ingredients except Gnocchi and Peas.
Cook on low 8-10 hours.
Increase heat to high, stir in Gnocchi and Peas.
Cook 30 minutes longer or until Gnocchi and Peas are tender.
(If using frozen Gnocchi, be sure to thaw first)
