● Been craving for this delicious donut since the pandemic started. So what i did was I replicate the famous Avocado Dicaprio from J.co donut ♡ and I'm more than satisfied! 🥰

🍩Ingredients
▪︎Bomboloni
• Milk 279g
• Instant Active Dry Yeast 2 tsp
• Sugar 81g
• Salt 1tsp
• Whole Eggs 5 pcs.
• All-Purpose Flour 750g
• Unsalted Butter 113g (Softened)
▪︎Filling
• Fresh Avocado 1 pc. or Powdered Avocado 1 tbsp
• Heavy Cream 200g
• Sugar 2 tbsp
▪︎ Coating
• 90% Dark Chocolate 100 - 200g
• White Chocolate 250g
• Avocado Extract 1 tsp (Optional)
• Vegetable Oil 2 tbsp
• Green Gel Color
• Yello Gel Color
🍩Instructions
1. In the bowl of a stand mixer add the flour(spooned and leveled off with a knife), salt sugar, yeast, milk, and 5 large eggs. Mix everything together on medium-high speed using the hook attachment.
2. When the brioche dough begins to come together add softened unsalted butter. Continue mixing at medium-high speed for about 8 minutes or until the dough becomes smooth and elastic.
3. Place the donut dough in a greased bowl and cover it with a kitchen towel or plastic wrap. Then let it rise in a warm place for about 1 hour, or until it doubles in size
4. After the brioche rises, punch it down, reshape it, and let it sit again in the refrigerator overnight.
5. For the chocolate sprinkles use 90% dark chocolate to achieve the bittersweet taste from j.co. Break the chocolate into small pieces; this enables the chocolate to melt more easily, with less chance of scorching.
6. Put the chocolate into the bowl and melt on for 30 seconds intervals, stirring in between each interval. Remove from microwave and stir. The temperature should be between 100-110°F. If necessary, reheat for 20-second intervals then reheat for another 20 seconds until melted. The chocolate will thicken and become cool, shiny, and smooth as you continue stirring
7. Have two sheet pans lined with parchment standing at the ready.
Pipe the sprinkle batter on the parchment in a series of parallel lines. You can pipe the lines pretty close together. Continue piping until you've used up all the mixture.
Set the trays of sprinkle-lines in a safe place and let them dry for 30 minutes. Gather up the lines into a bundle, then use a knife to chop them into sprinkle-sized bits.
