I'm no vegetarian but lemme tell you this looks tasty. I'm trying to cut down on the amount of meat that I eat in a week with 1 veg meal per week. This is perfect!

Atinuke Ladipo It really is. Lots of room for tweaks & experiments too. A slightly different version (from the website) is one of my faves: a different bean combo, smoked paprika, & a mellow or smoked chile, for flavour not heat. That's the BBQtastic version but either one is a veg-stravaganza! (I use the cooking time to prepare the rice [I find brown rice nuttier & more interesting, but that's just me...] and mounds of guacamole.) This recipe's a keeper, & whichever variants you try, you will not be sorry - I promise!!

This is probably the only “AD” that I not only watched (and enjoyed very much) till the end but did so in 720p even though I am always about conserving my phone Data. lol I absolutely love Jamie Oliver and adore that he embraces all kinds of cooking and food lovers. You can tell cooking for him is an absolute joy because his energy transfers to the viewer.

Thank you for the inspiration Jamie! I watched it & had similar ingredients on hand so I whipped up my own version tonight...instead of sweet potatoes cubed, I had roasted yams that I mashed, did a few different types of beans, topped it with shredded cheddar cheese, plain yogurt & shredded romaine lettuce & served it with slices of toasted crusty bread! My hubby devoured it all & didn't even miss the meat, so thank you again for the inspiration! 👌👐❤😉

I just made this and it turned out good! I couldn't find the chili peppers he used, so I use a green serrano pepper and two red fresno chilis. I diced my sweet potato smaller, used an orange instead of yellow bell pepper, and I also added some chili powder and chipotle powder. I thought it might be too hot with all the cayenne seasoning and the hot peppers, but it had a nice heat. I would've never thought to use cinnamon but it added a good flavor. Good healthy meal for this vegetarian here!

Because I forgot some things from the super market, I had to improvise. I used paprika instead of Cayenne pepper, I used a few small fresh tomatoes and two tablespoons of tomato paste. It turned out fantastic!

I have just made this dish for a cold wintry dinner in Melbourne, Australia. I only used 1 can of tomatoes and I added some button mushrooms cut in half...... I served it with brown rice, yoghurt, mashed avocado and fresh basil........D....I...vine!!! Thanks Jamie.... would not have ventured this far with sweet potatoes - so many thanks for your ideas and expertise..... you are my "go to" with any recipe I want to give a try.......

I will vouch for his cookware though. its actually very good! I've had one of his pans for years and I've used it in videos before as well. You get what you pay for. mine is starting to to look a bit ropey now though haha any tips for getting off baked on cack?
