Hello guys! Today I want to explain about Dashi simple & quick. Japanese cuisine was added to Intangible Cultural Heritage in 2013 by UNESCO. Dashi is the soul of Japanese cooking. without that, we cannot cook Japanese food. Hope you kind of get idea of it. I will share some recipes that used with these Dashi soon!
This is the video showing the process of making Katsuobushi

This is the Kayanoya site in the US. You can buy them on online but if you go to Japan, try to go to a store. You can try all these dashi. It will be an amazing experience. I usually go to the one in Roppongi Midtown, Tokyo.

Very interesting!! I live in Tucson, AZ and we only have very few Japanese, Chinese and Taiwan restaurants that are authentic. So, I'm trying to learn how to make my own stuff here at home but Japanese, Chinese, and Taiwan food is so hard to make since there seems to be so many steps.

Hello Ashley! Thank you for your message. Sorry for the way, way belated respond... Japanese cooking base is a bit different from Chinese & Taiwanese cooking so please keep watching my videos ( I am taking a bit of break now...) so you will understand the basic Japanese cooking :) More than you think, Japanese cooking is easy! Nowadays, you can buy most of Japanese ingredients on online so will share the links in the future!

Is it possible to combine all four ingredients? Do the flavors clash?

Happy New Year! Yes, def. you can. You can try individual and see how it taste. Shiitake is pretty strong so it may kill other flavor but we use all together sometimes. It's depends on a dish you make. I am taking a pause to post videos now but one day soon, I will show what and how I use them!
