Dashi is a basic broth of fish or vegetables. It is an important component when cooking Japanese food. Dashi is packed with savory umami, and it becomes the base flavor of a lot of Japanese dishes.
In this video, we will show you how to make Dashi with different ingredients:
1. Katsuo/Katsuobushi (dried bonito flakes)
2. Kombu (dried sea kelp)
3. Niboshi (dried sardine)
4. Shiitake Mushroom
5. Instant dashi
//Ingredients
*Katsuo Dashi
2 cups (480 ml) water
1 handful of Katsuo dried bonito flakes
*Kombu Dashi
2 cups (480 ml) water
8 g Kombu dried sea kelp
*Niboshi Dashi
2 cups (480 ml) water
15 g Niboshi dried sardines
*Shiitake Mushroom Dashi
2 cups (480 ml) water
25 g dried Shiitake mushrooms

Thank you for enlightening me! I always thought dashi was only made from a combination of fish and seaweed. I’m a vegetarian, so now I learned that I can enjoy dashi as well!

Im so glad I clicked on this video! I just found instant dashi at my local store and wanted to see how to use it with soba ramen and somen! I have all the noodles but not sure how to mix instant dashi with the noodles!

Where can I find dried shiitake that is safe? Here in the US all the dried shiitake in the Asian stores near me have a warning on the packages about lead and heavy metals exposure by eating those. There has to be a brand out there that doesn't have contaminated shiitake.

Fresh shiitake is tasty for eating, but only the dried kind is suited for making dashi. The flavor is deeper and and more intense than fresh shiitake.
