Ingrédients :For 4 pieces
2 oignons (240g), finement hachés
350g de viande hachée de bœuf (15% de matière grasse)
2 œufs
20g de ketchup
Sel et poivre, selon le goût
8g de gingembre râpé
2 gousses d'ail (12g), écrasées
30g de chapelure
Une pincée de muscade
Huile, pour la cuisson
Pour la sauce Teriyaki :
100g d'eau
1 cuillère à soupe de vin blanc ou de saké (15g)
4 cuillères à soupe de sucre (48g)
2,5 cuillères à soupe de sauce soja épaisse (45g)

1.thinly slice 1 onion (120g).
2.Sauté the onion in a frying pan over medium heat with a pinch of salt to bring out its sweetness.
3. Add a small amount of salt to bring out the onion's moisture.
4.Sauté the onion over medium-low heat to avoid burning.
5. Chill the sautéed onion in the refrigerator.
6.In a bowl, mix 350g ground beef (15% MG), 2 eggs, 30g breadcrumbs, a pinch of salt and pepper, 8g grated ginger and 2 crushed garlic cloves (12g).
7.Let the mixture rest in the fridge for 30 minutes.
8.Shape the hamburg steaks, taking care to eliminate excess air.
9.Heat a little oil in a frying pan over medium-low heat.
10. Cook the hamburg steaks for about 4 to 5 minutes on each side.
11. Turn the burgers over, reduce the heat and cover the pan for 3 minutes.
12.Check for doneness by pressing lightly on the burgers. When they bounce slightly, remove them from the pan.
13.Use the same pan to prepare the sauce. Add 100g water, 1 tablespoon white wine or sake (15g), 4 tablespoons sugar (48g) and 2.5 tablespoons thick soy sauce (45g).
14Let the sauce simmer until slightly thickened.
15.return the hamburg steaks to the pan with the sauce and reheat them, coating them with the sauce.
16Once the sauce has reached the desired consistency, the steak burgers are ready to eat.
