He is not obsessed with wok, because Fried rice is truly better cooking with wok. And almost the asian people also cook it with wok.

The reason Uncle Roger doesn't care about the egg part is different Asian communities do it differently. Some scrabble before doing the stir fry, some while, and other ways.

My personal taste, I add Tabasco hot sauce enough to add a little spice kick but not enough to overpower the flavor of the eggs and rice.

6:02 Agreed. Mixed eggs go in early after garlic and aromatic vegetables. Then rice. I'm white as snow and I care enough about this dish to know that.

Jamie Oliver should never be let anywhere near egg fried rice. Or any Asian dishes whatsoever. Supposedly he made some serious enemies according to a video from last year and I'm sure one of those enemies now is Uncle Roger.

Chili JAm is actually from Hungary ( they love everything sweet, even the salad). It is made of a special type of bell peppers, so called Cherry Peppers, which are already sweet but not hot at all. They cook jam of the cherry peppers and spice it up with real hot chilis. It is used for seasoning BBQ meat but also as a dip with sheep cheese. But I agree, I would never use it to make Egg fried rice. Obviously Oliver mistaken this with Thai sweet chili sauce for Chicken ..... maybe also thinking "hhmm... whats typical Asia? I know! Spicey-Sweet-Sour-Sauce! Where do I get that now? Oh, just take some Chili Jam." ... if any white dude would have made this video ... okay... they do not know it better. But one think one could expect more of a professional chef

Chilli jam may be from Hungary, although I am Hungarian and have never heard of it. We have piros arany ("red gold", AKA paprika sauce) and gulyás krém ("goulash creme", seasoned sauce from paprika), neither of them are gelatine-like or sweet. I disagree that cherry pepper is not spicy. Not as spicy as habanero or really spicy chilli, but I gave someone from the Netherlands regular Hungarian hot paprika that is far below cherry pepper's spiciness and they almost shat themselves on the spot.

I've watch many chinese food shows and they appear to prefer well cooked eggs. I've seen them add well cooked eggs to soup. I think it's a difference in cooking preference.

I think Jamie soaked the rice with water because he burned the rice with the olive oil. Olive oil burns too quickly to be used in that type of cooking.

I would never ever do what Jamie does. My ancestors would come back from the dead, disown me then go die again. I love fried rice too much to disrespect it like what Jamie did. To be honest if anyone gave me anything like that I would take my chopsticks and stick them in the rice standing upright and leave it for the dead. Then go straight to the nearest temple and ask my ancestors for forgiveness, not even the dead should be offered such an offensive plate as that.

Rice, Potatoe, noodles would be the side dish. But a finished dish like egg fried rice is a main dish for me. And I am not an asian. Noodles side dish. Spagethi bolognese = Main dish. Potatoes side dish. Farmers Breakfast = Main dish. It allways depends what dish you are making. But mostly a SALAT is the real side dish. Jamey Oliver, a professional cook fucked up with egg fried rice. Alone with sizzling the spring onions. those which I put in the pan are white onions. I wouldn't even sizzle the red onions, because of their special flavor and spicyness. I am not a professional cook, mostly I cook noodles or frozen stuff, because its easy. Still before I try to cook anything new I get INFORMATION how to cook it, fuck up a few times and try again.

Usually, you cook the egg first finely scrambled! You add the rice in immediately and get coated golden fluffy rice! Some people take them out, depends on preference though.

So I stayed up all night to watch all asian and some non asian who does know how to cook proper egg fried rice reaction of uncle roger to jamie oliver and this is the last video i will watch for today. I conclude two things, we can be reunited by rice and the next one is that, we all said what when he put water to it wjile cooking and got shocked when the tofu is broken

I agree fried rice can be done without wok not too much of a big deal but i think the wok comment also has to do with the overall authenticity. For example, I’m Japanese and when i went to the US 6 years ago i went to a Japanese ramen restaurant that served miso ramen. The “miso ramen” they got me was basically miso soup with ramen noodles in it. This is disrespecting culture. Thats why authenticity is important.

Yes you are not totaly wrong but in chinese culture you usually cook fried rice with wok in general for some reason like uncle roger explain in that video and yes that is called authenticity
