@@donb7519 yeah, thats why you need a different oil, but not only that, cold water isnt good, as it cools off everything, i believe, i forgot the exact thing as i saw it on a diff reaction, but if youre cooking you need to add hot water to hot food if youre gonna add water at all, but you shouldnt, cold water for cold food, hot water for hot food (iirc)

Some other reactor had said that it was because the chilli jam which has lots of sugar started to caramelise so Jamie had to save it by adding water.

I live in Surabaya, whether Chinese or not they always start with smashed and chopped garlic. So that's why I can relate Uncle Roger. No water during cooking and tofu which contain some water in it definitely make Jamie's fried rice so wet. If he fried the tofu first and put into the fried rice than I can accept that but wet and uncooked tofu just a disaster. I wonder if Jamie actually knew about it. I ever saw someone cook fried rice even worst than Jamie, it was a young woman put every ingredients into the wok, all at once, and then light on the stove and started making fried rice. Gee.. I'll never eat whatever she cook in the kitchen

I think this video is really funny and Uncle Roger is spot on! If I’m being honest though, I’d say that Jamie Oliver was trying to adapt the recipe for the average English person who has English ingredients on hand in their kitchen. He basically white washed the recipe! Lol I’m American and I only know about chili jam because a British friend had me try it on cheese and crackers. It was disgusting!

Egg fried rice most important is garlic fried first to give that fragrant.. I don’t know any Chinese do not use garlic in fried rice.. if u don’t like the garlic then just use little but must have!!

I obviously don’t know 1.4b people in China, But I’m in the f&b business and have been around long enough to say I’ve learnt to like garlic, in a lot of southern china/Asian people I know recommends the use of Garlic in all egg fried rice I have not seen otherwise! I can’t say everyone but most I have seen do use. I’m a British Born Chinese grew up and worked around Chinese take aways and restaurants during the late 80s/90s on and off to present.. experienced travelling in a few asian populated countries/cities like Malaysia, Taiwan, Thailand, HongKong, Macau and of course China.. food is somewhat a part of our culture so the taste of Chinese cuisine is on top of my experiences. I respect that there are some which dislikes Garlic but most oriental people enjoy food with Garlic and especially in egg fried rice. Garlic is one of the most important ingredients in Chinese dishes!!..

I am from Singapore and have watched Japanese and Korean reacting to Uncle Roger's videos. And today, yours :) The main thing I have noticed is that all Asians are proud of our egg fried rice regardless which country you are from! It is the quintessential comfort food. Fluffy white rice fried with bits of savoury meat and vegetables - served pipping hot and delicious. It tastes like home.

I like this reaction video because when added to other reaction videos from people in Asia I feel like Nigel Ng's caricature has created an Asian community cooking school I can consult for tips on making egg fried rice. I was a little worried about laughing about some things thinking that some people might be offended by Uncle Roger, but so far, everyone seems to understand that it's a comedy act.

Uncle Roger is just a character based on an exaggerated version of an older Asian person to get some laughs. But he really is highlighting how ridiculous it is for westerners to take recipes like this that have been perfected over literally thousands of years and think they can do them better. I find him hilarious but also really love learning about so many different Asian cultures from the people who react to his videos. Thanks for yours!

Egg fried rice wasn't perfected over literally thousands of years. Most recipes are very modern.

They invented it and have been making it and perfecting it for thousands of years.

Here in Phillippines , yes , we also start with mince garlic :) and when its golden brown we put the left over rice , so when you eat the rice there is this crunchy texture to it :) No Tofu, No water tho haha

I'm about as white as sour cream, and even I won't touch pre-cooked packet rice. I did once, out of a misplaced sense of curiosity. It had a foul odor to it, and the flavor was just dire. Scarred for life. Never again. I'm also convinced that Jamie Oliver has never heard of sesame oil for flavoring, and that's truly unfortunate. I love watching these reviews of Uncle Roger's reactions, though, because the added perspectives and information are so interesting.

Jamie Oliver learned cooking from Italian chefs (Antonio Carluccio and Genaro Contaldo). Looking at this video, I'd say Jamie missed the point of egg fried rice, and kept too many risotto ideas in.

As far as I know the only appropriate use of chili jam is on a cheese plate to go with some soft cows-milk and goat cheeses, I'm still horrified every time I watch Jamie Oliver put in in fried rice.

@@WE_reviews yup..totally agree..we also do fried garlic for flavor on the dish especially rice, steam fish, yam rice, "bah kut teh rice", etc love to watch your video on the garlic hack..haha. for us, we will blender the garlic and put some oil in it and keep it in the refrigerator for longer lasting and whenever wanting to use it will just scoop it. our family uses garlic on mostly everything and plenty of it too...haha btw keep the video up!

@@WE_reviews omg..that is way too expensive. Do believe is the transportation cost from China but then again AUD29/kg is like a luxury food rather than spices. Here it's hovering around RM8-RM15...all depend on the weather and the harvest from China too. No wonder the Aussie uses less garlic, can't blame them...haha

Chef I love how you tried to backup Jamie, but my favorite part was when you saw the tofu being added. That face scream unease. Good reaction. I’m all for saving the environment, but it’s not the plastics that’s the problem. It’s how people dispose of it. If they use plasma gasification we could reuse the plastics as a different materials. Still I love we your mind at. Thanks for sharing

Indonesian here. Uncle Roger's character is South East Asian Chinese. Yeah we put garlic in fried rice. Our special fried rice, nasi goreng jawa (javanese fried rice) even have specialties with shallot and sweet soy sauce

Sriracha its not sweet its vinegary/tangy hot (medium level) not sweet , you must be thinking of Thai mae ploy's sweet chili sauce which is sweet and slightly spicy.

Smoke point olive oil is different between extra-virgin (cold-pressed) and regular (blended). Cold-pressed goes best with salads / cold dishes... but I guess each recipe has it's "best flavour" / original ingredients. Jamie recipes are often far removed from the original so far that you can actually wonder if it;s still the same dish.

Different or not, both of them are still ranking low on the smoke point scale. Learnt that the bad way. Where I'm from we have lots of olive oil (mostly regular) and I tried to replicate a couple of dishes from S.Korea with it, but failed miserably. On the other hand, he uses a frying pan instead of a wok, so it's not too much of a problem in this case, though completely agree, there's no real semblance to any of the asian versions.

Flavor aside, which is a very important aspect, olive oil's smoke point is also not ideal. Great that that was mentioned. Haven't seen anyone else mention that before in these reactions, so that's a really good thing to mention.

I only like Jamie Oliver for his salad recipes. The rest are mostly terrible. Gordon Ramsay is so much better and actually respects the culture behind each food.

Come on you shouldn't focus on the plastic packaging of the tofu and focus on correcting the vid on what kind of tofu to use which is the fried type. And as for juicebox tofu yeah it's biodegradeable but what local tofu place do you know of would make decent fresh tofu and put it in a box like that. It's either in a refrigerated water filled container, in a tub of water for you to fish out and put in a plastic bag, or pre fried and packaged.

I agree about the packaging. A lot of his comments are supposed to be comedic in nature. His style is that he takes observations and passes them off as the weird opinions of the caricature asian uncle. Same way he talks about it not being a side dish by saying his mother would have beaten him to death if he had asked for sth more.

There was speculation from chefs that the reason Jamie added the water was because the jam was caramelizing _very_ fast and was about to burn, so he needed to cool the pan as quickly as possible while also diluting the jam enough to keep cooking. Notice how briskly he walks to the sink; also, the fact that he had to go the sink at all. If the water was planned from the beginning. he would have had it next to him while cooking so that he wouldn't have to turn his back to the camera.

being asian, and knowing many of us have our own version of fried rice. he did a lot wrong, and it is horrible. have you seen the other ones?, one of them is so good!! also i assume you know, but this is nigel's character uncle roger. oh man when i first saw this, i was so annoyed; and i don't think he toasted him but instead uncle roger roasted him to a burnt crisp in his point/arguement of how bad he cooked fried rice. also i agree we need to lessen the amount of plastic that we use, and to some extents help our world heal from climate change.

also also, you don't need water to keep it semi moist; instead the oil should fry the fried rice while keeping it moist.

@@WE_reviews i live in the states, but if you want to make it right; then do it right. if they said "fried rice" on its own, then i can assume it will be any type even the westernized versions. its a disrespectful to the culture, if you say egg fried rice; but you do it that way he did it. i don't mind that you change it or make it your own, but when you specify i expect it to be it. in general, if they are a chef or work in a company like bbc; you would expect them to do it authentically. unless they aren't as specific. also in general the way it is in the most basic sense is wrong, if you can't as a chef broadcasting how to make fried rice.

@@WE_reviews ok that i will agree, if it is for general public such as Americanized food chain like panda express; or made at home then that is ok. although if you want the good stuff cook it the right way, or order at the local asian resturants that authentic or at least closer than these mess ups. on live tv, when you mess up someones dish many will be pissed. if they messed up my asian dishes i would be out raged, because it won't taste right; but if you are asian who knows the understanding of the original dish then you can start to go outside the box etc.

Jamie Oliver is just a very bad cook not deserving that title. He is an experimental home cook, not a chef. No wonder his Restaurants closed down years ago, heard from different people how bad the food was. Also he claims on MANY things, that they are authentic, by messing them up so much, that people get offended and raise a successfull case against him. Also he "tried" to introduce healthy food to shools, every shool went back to other food, after he left, as everyone said that was disgusting as fuck and not even healthy. I read through some of his books on a book store and am just surprised on HOW anyone could change recipes that way and still call it that way, if not declaring it "experimental fusion home cooking" by an amateur cook. Everyone having relations to restaurant work, catering, professional cooking, who I know, just HATES Jamie Oliver and is offended, when he speaks of himself as a "professional" cook, or even chef.

If it's not good it's bad you can't give proper critique if you're trying to be overly polite. This fried rice recipe is garbage. Go ahead and cook this recipe and tell us all how "okay" it tastes.
