It would be better if they gave the head a good wack right before or after tossing it in the bucket. So I know it's not still suffering in the bucket. I don't remember if it's squid or something else but there's a technique where you wack it between the eyes to kill it and you can see the color changing cells immediately turn off.

Input from a biologist - the squid isn't dead the moment the chef cuts the thing up. What he rips from the middle is the oral aperture, countaining the beak and mouthparts (it's a bulb-like structure than you can pull out). The brain itself resides between the eyes. Even as he cuts through the mantle, the brain is still largely intact. A squid has a comparable nervous capacity to a dog, but whether or not the squid is aware or feels pain during the process we're not entirely certain. As for the dancing part, personally i can't tell whether it's still alive at that point. One has to remember that the argument that this is all a postmortem response (as frog legs twitch when sprinkled with salt) is difficult to justify when the other tentacles move, even when not directly in contact with the sauce. It's homologous to pouring salt on a right frog leg and the left moves as well (there could be the argument that it is a collective reflex response from a secondary central nervous system governing tentacles in cephalopods, as it is theorised that cephalopods have a secondary 'brain' only for the tentacles, but this implies the animal has a still largely intact nervous system at this point - hence 'alive'). One also has to remember that even humans, entirely dependent on the head for survival, may still be alive, conscious, and somewhat responsive several minutes after decapitation. Ultimately i am not one to judge on how this is done, regardless of the status of the animal upon cutting. There's always some form of 'cruelty' over animals around the world, heck even cruelty within our own species. But i suppose 'cruelty' is subjective. I would still love to try one of these someday.

To those that say the squid is conscious, a squid's brain is located wrapped around it throat basically. when the chef tore off the beak, he tore the brain out with it, or at least caused enough physical damage to render it inoperable as an organ, pretty instantaneous. The squid's basically brain-dead as soon as he removes the beak. That being said, the cells in the squid's body are very much still alive hence the movement and twitching, it's just going on pure reflex now instead of any purposefully directed movement. The big shiny organ that was removed and cut up was the egg sack, everything in the body of the squid is basically reproductive organs, heart, and digestive track.

Also, squids use up the MOST oxygen compared to some other sea critters. Lmao. They can also regulate their oxygen depending on their environment. But realistically they'll die within a couple minutes to an hour IN TACT. Now if you remove everything from the squid, much less so. Probably a couple seconds. If that. Not rocket science. If you feel bad for the squid, this might help you feel better. It was a quick kill, it still moves only because its fresh, the biochemistry still functions. There are sources of unused energy (ATP) stored in the muscles . The salt in soy sauce activate an action potential, therefore they can still contract until the ATP is used up :)

The squid was long dead before it hit the plate. After the chef cut off the two front tentacles, which are not directly connected to the brain and thus the squid felt no pain, or wouldn't for a couple of hours until after it was cut off, he tore out the beak which includes the brain. It was dead before it knew what happened.

Calyx Frost true. But one fact is wrong. It doesnt react to the sauce. They have no veins, or sustem to signal what is going on. Thats why, things like squid still move after they are killed. They basically dont have any system to say, IM DEAD! Stop moving around. But good job explaiming!

To all the people complaining about the squid "suffering as it's being eaten alive"...it's not. It's already dead by the time they serve it to you. It's just common science behind the "dancing" nature of the dish. The squid is dead, but still served very fresh, and therefore still has a lot of moisture in its body. Soy sauce is very salty and has a high sodium concentration. Sodium tends to draw out moisture so when you pour the very salty sauce on the moisture filled body, it starts to twitch and "dance" as the soy sauce is drawing the moisture out. Also, the color pigments in the skin can still change and pulse some time after they are dead due to just how complex their body systems are. The same thing can sometimes happen in Cajun cuisine and frog legs. Sometimes when they are preparing frog legs, the removed legs will twitch and kick when salt or something salty is put on them.

I think this is incorrect… it literally comes from sea and ocean which is also very salty…. These organisms have a decentralised nervous system as far as I remember and it’s the neurons which are actually sensing the soy sauce and thus the movements… don’t need the brain for all movements….you cannot say it’s alive or dead as their nervous system is different from ours
