Although finding a cup of hot tea is not quite as easy as it should be. I drink both hot tea and coffee having been to Europe quite a bit especially England in my youth. Plus my mother's side were scottish mixed and my father's side are of Welsh descent. Tea was popular in my parents home.

@@wpeale71341 I used to drink green tea fairly regularly growing up, but these days it's now something I really only drink (while eating a teaspoon of honey with it) if I happen to be sick and one of the symptoms is a bad sore throat (and hot green tea with honey legitimately does help a sore throat, not enough to make it go away completely, but it still helps)....and the last time that was the case it turned out that I was sick with the Flu, despite me having gotten a Flu shot about a month prior. That was not a fun experience, I can tell you that much. Even worse, both of my parents were sick with the Flu at the same time I was....and I stayed sick the longest out of the three of us.

Southern food is notoriously good every American knows that….. along with the hospitality….. the fact that you actually stop the video to comment and then rewind slightly before you go on shows the respect you have for what you’re watching, too many talk over the video and others don’t even bother to rewind slightly….. I like your style you’re a very pleasant person and you now have a new subscriber…. Jolly is one of my favorites.

Jono, as a Southerner the secret to good fried chicken is marinate it overnight in buttermilk, the coating is all purpose seasoned flour, and either fry it in a cast iron skillet with cooking oil half way up the skillet, or deep fry after tapping the excess flour off in 350F cooking oil for 15 minutes for thick pieces, and 12 minutes for thinner pieces.

South Carolina here. I marinate the chicken in a brine of water, vinegar, salt and sugar. The brine tenderizes the chicken and gives it flavor. Then too cook it I dip it in buttermilk, then seasoned flour before frying.

@@ritayprice3510 that's one way to do it, but if you have blood pressure issues, salt water isn't good for you. i find buttermilk softens and keeps the chicken moist.

My aunts always used finely ground cornmeal for fish. I use buttermilk for the brine and the wet dip.

I was born and raised in The South.. Atlanta Georgia. My parents and grandparents were born and grew up in Mississippi.. Southern Fried chicken is the best down there! My second favorite style of fried chicken is Korean style fried chicken wings. Koreans double fry or twice fry their chicken making their chicken wings extra crispy! Japanese style fried chicken is also very delicious! Grits are ground hominy similar to ground corn meal or Italian polenta.. I like butter and broken up bacon in my grits. Cheese grits and shrimp (prawns) and grits is also a popular Southern American dish!

😂I said the same, but with a lot more words. I wasn’t sure if I should mention hominy because I’m not sure if people still eat it out of the can the way we used to but if you’re familiar with it then grits makes more sense when describing the hominy first. As soon as I put bacon or sausage crumbles into my grits, I couldn’t go back to eating them plain. I had a stay at home Mom that cooked us full breakfast, lunch and dinners. On The weekends we would eat cinnamon rolls, cereal, pop tarts or toaster strudel if we didn’t want a full cooked plate like Dad was having. She cooked for taste and nutritional value so we had to clean our plates regardless of how long we sat there with the items we didn’t want or like to eat. She fooled us a few times like swearing that she could make liver (yuck) taste like a sirloin. We had to beg her to take it off the dinner menu at home. She cooked mostly for my Dad’s tastes so he was an over-riding factor on meals and he liked everything salted twice and cooked in flavor (butter, fat, oil). His average breakfast included bacon, sausage (link or patty), scrambled or fried eggs, salty buttered grits, hash browns, toast (used as a ladle to get all of the runny parts off the plate, sausage grease mixed with egg yolk mixed with grits), orange juice, coffee (and sometimes coke). High protein, high starch, high fat, high flavor but low sugar and low acidity. Apologies, a I’m rambling again 😂

It is in the kale group (acephala) but is brassica oleracea v. viridis. Same species as cabbage and broccoli. It's called collard due to a medieval English word for brassica plants (colewort). In South Africa, I believe it's called muriwo or Umbhida.

Southerners can be so friendly. Not all of course, but you'll run across those that do everything they can to make you feel welcome and "at home". Yes, she's a server and they work for tips, but I bet she's just that nice off the job. Oh, and grits are made from ground hominy (a processed corn - its soaked in lye to remove the husk then dried). I'm moving to NE Florida in October. Savannah is a 3 hour drive north of there and I'm definitely going to that restaurant.

Lived in Savannah for two years. St. Paddy's Day there is either a can't miss event, or something to be avoided like the plague, depending on your attitude towards city-wide drinking festivals. They have the New Orleans "drink on the street" law there, some bars lock their doors and serve drinks out the window, at night you can trade cheap plastic beads for public nudity, it's a second, smaller, more restrained version of Mardi Gras.

I live in South Georgia, I'm gonna do you a favor. There is a restaurant in Montezuma Georgia, that you have to experience. If you like southern comfort food, go to Yoder's Deitsch Haus. It is in a Mennonite village, and all the food is grown right there. SO, SO GOOD!!!!! Your welcome. 😂😂

Collards are a very tough green and there are two basic ways of cooking it. Where they are likes the short cooking method which leaves the greens tough and bitter. In the deep south it is cooked for a very long time leaving the greens tender and yummy. It is usually cooked with bacon or sausage or Ham hocks. In my opinion beet greens are the best. Cut the greens of the beet (stem and all) and lightly boil in water, butter and salt to taste. It only takes a minute or two. Just pick it up by the stem and dangle it in you mouth, stem and all. They are so tender and tasty.

My family always had mustard greens and spinach. We would sow them together in the garden, harvest them together, then cook them with some bacon grease.

I ain’t no country boy, but I’ve never had bad collard greens. They’re usually delicious. And as another poster said, I’ve NEVER heard of lemon being used. This restaurant must prepare it in its unique regional way.

I love collard greens but not if their sour. We don't eat them like that in California. I have heard that there are a lot of ways to make them. I don't like them sweet or anything like that, but that sour vinegary, or lemony taste was not the way my mom made them.

Yeah I think that's why they didn't like it. It seems they put lemon to embrace that natural bitterness of the greens. When I make collard greens I use apple cider vinegar to balance out the bitterness.

Louisiana here. I'm from the mecca of southern food. (Yes I'm bragging) We all love our food and it's a huge part of our heritage and our proudest. I'm a truck driver and after spending a month away from home, it's like Christmas being able to come home and eat some good food.

That maize-meal ball dipped in chutney sounds just like our cornmeal hushpuppy which is a ball of cornmeal batter deep fried to a nice crispy outer shell. Most will dip in catsup yet other sauces work great, goes wonderfully well with fried fish.

We add onions and jalapeño peppers to our hush puppies as well. I think they originated at mom and pop fish restaurants along the gulf coast because most people in the mid Atlantic and northern coast don’t do cornmeal very often. West Coast doesn’t do much in the way of corn at all except for Mexican fare. By the way grits or corn made by soaking the kernels in lye which is then ground to a porridge consistency and cooked as a breakfast dish like oatmeal. They are very bland but become the king of the table when mixed with fried eggs and bacon or ham especially with butter and cheese added. Many Southerners liked them as a comfort food in the winter time with salt and butter and maybe some bacon crushed into the mix.

To answer your question, yes, collard greens are very similar to kale. In the grocery produce section, you buy big bags of them, right next to the turnip greens, mustard greens, and kale greens. All basically the same thing, and all cooked similarly. That is, with some form of pork. Usually bacon, ham, or a hamhock, a leg bone from a slaughtered pig.

I'm a Southern Gentleman, and we "bread" fish, not batter them. A good starter breading mix is, 1 c wheat flour, 1 c (+/-) corn meal (maize) not corn flour, s&p. Add your seafood spice and mix it. You can flour and egg the fish before breading but we never have. Some breading will fall of while cooking but we'd dip out some crumbs and hot fish grease and pour it over cooked rice. Sizzle!

I had a friend who lived in Georgia and it was always a treat to visit and eat great southern food. I’m in Illinois, we have great food in the Midwest too. Just different great food. Banana pudding rocks.

Josh and Ollie are pretty cool. Ollie can be a tad childish with some of his food reactions, as you noted, but they have some really entertaining content. When I was a kid, we lived in North Carolina for about 6 months, for my father's work. We had such a great experience, enjoying the hospitality and the amazing food.

The secret to good fried chicken in using Crisco for the oil! You are right on the mark with collard greens! They are a tough bitter green that has to be cooked forever to get the love out of them.

"She's so friendly" That is the US service industry and for the most part, people in general here. I guess it can come across as a bit overbearing to people visiting at times, but I would much rather have a bit too involved and friendly than a waiter/tress that forgets about you and is rude haha.

And I do admit we have some things here that aren’t in everyone’s taste. Like grits. Grits isn’t for me. No way. LOL. Sorry! 😂 I’ve been a chef for 14+ years and I’ve worked in restaurants where I have to cook the food according to a recipe that’s been a part of that restaurant for years that I personally don’t like. But I still have to make it. I even tried asking if I could tween it a little but they wouldn’t let me. But anyhoo… that’s alright. I don’t work there anymore. Southerners will smile and chat with you, when they hear your accent they'll want to know where you're from, they'll immediately give you directions to the best local restaurants, the best hotels to stay in, how to get around the city, local sites to see, the history of the area, everything! We will also make it our personal mission to pop the buckle off your belt and have you going home with a waist two sizes larger. If you haven't gained 5 kilos by the time you've left, we've failed in our duty of hospitality!

The refill thing in the US is very, very, common and many folks, not from the US remark on it. Two things that you will find almost anywhere in the US are, ice in your drinks, and free refills. That tea though... that is Southern "Sweet Tea"... which redefines the relationship between the words "Tea" and "Sweet".

At 6:10, collard greens are usually more bitter during spring and summer. Collard greens harvested in the wintertime are palatable to most people. But in the spring and summer, it is a bit of an acquired taste. In addition to the US, it is commonly eaten in Brazil, Eastern Europe, Pakistan/Northern India, parts of East Africa and Southern Africa (especially in Zimbabwe... though I don't know about South Africa itself).

I always have my greens with beans and rice. Every bite I almost lose my mind. A new variety of sweet potato popped up from Louisiana about 2 years ago. It's called Bayou Belle. If you find it, try it. It will flip your wig.

Grits and polenta are very similar. Just different grinds and perhaps different species of corn. But they can be treated pretty much the same in the kitchen.

Grits are ground up hominey corn. I don’t like my collards bitter, I cook mine in chicken broth with a smoked turkey leg and chili pepper flakes and other seasoning with a dollop of white vinegar to give it a slight tang. I could eat them every day that way.

Collard Greens should not be too vinegary. It's just takes a little bit of vinegar to take the bitterness away. Collard greens are fantastic. Sweet potatoes or yams are great if prepared correctly. We use corn meal on our catfish. Those look like bread & butter pickles.

Yeah, grits would feel totally familiar to you. Grits are coarse ground Hominy, which is dried corn (maize) processed with slaked lime. It has the same texture as boiled corn meal, with a slightly different flavor.

Me with the mad comments as I watch the video! You know what Italians call grits? Polenta. It's the exact same thing. It's cornmeal boiled into a porridge. Over here, shrimp & grits is a southern specialty. In general, grits are a breakfast starch, you have them with butter and maybe syrup alongside your bacon & eggs.

Yes, Collard Greens are in the Kale family. They are often cooked in a chicken broth with either ham or turkey or another form of pork. With bacon, oil or butter, onions, garlic and plenty of pepper, red pepper flakes, salt & more!

Catfish looked like it had a cornmeal breading. Classic American Fish Fry will be spicy and a little sweet because of the corn with a thin, crispy crust. I think most people are here for your reaction and opinions. If we weren't, we'd only watch the original.

the chicken is coated in a flour mixture for fried chicken the fish is coated in a corn mixture the grits are a corn based porridge as well

The server forgot something essential with the collard greens... sprinkle it with vinegar. It removes the bitterness. You got the grits close. It is ground up hominy which is a cousin to corn. Very similar to polenta.

Old Southern recipe , from my Aunt Sarah. Mix flour , onion powder, garlic powder in a bowl, salt and pepper. In another bowl , whisk eggs. butter milk or milk. Dip raw cutup chicken in flour mix first, then in egg mix , then back in flour, REPEAT. Back in egg, then press into flour again. Put about 2 inches oil in a frying pan , heat to about 325'. Vinegar and salt on those greens- also fry up in either olive oil if want kind of healthy or grease if not- my momma use to fry it in a iron skillet in bacon grease - so good

To get that crumbly crunch on the catfish is easy. From what I know, fish and chips uses a beer batter. Depending on who makes it, cornmeal is used for catfish. A mixture of flour, cornmeal, milk (or buttermilk), seasonings. I like to put a little bit of Texas Pete or Tabasco sauce in my wet mix, depending on if I'm in a spicy mood. Also, here in the South (South Carolina for me) it's almost sacrilege to not include peach somewhere. We have peach tea, peach syrup, peaches in savory dishes, sour peach candy. It. Is. Everywhere.

Collard greens are one of several cultivars of a Brassica. Others include broccoli, caulifower, Brussels Sprouts, kohlrabi, kale, and cabbage.

Collard greens are a bit of a staple in the south. Though they act as more of a palate refresher, like ginger, for me. They are bitter and astringent, a big contrast to anything else your eating lol. Lets you taste the rest of the food fresh "for the first time" again. Best not to think of them as a food on their own lol.

We use cornmeal with salt and black pepper in the cornmeal, then put the cornmeal in a bag, then put your fish in the bag and then shake it,put it in the fryer.

Collard green, mustard greens and kale are all in the same family. Collards can be very bitter if not cooked properly, cook with some type of pork (bacon, ham hocks) along with some onion, garlic, pepper flakes, salt & pepper. They have to cook for a while to soften up but when they're done they shouldn't be bitter at all. Lots of fiber and nutrients. Grits are made from a type of corn called Hominy.

Collard greens are usually cooked with some sort of pork; ham hocks (smoked or not, your choice), smoked turkey or salt pork. Though it can be mixed with mustard and/or turnip greens.

We cook fried fish with a flour and cornmeal mixture. The crust is not thick but holds in the moisture, making the fish light and flaky.

The Collards at Sweet Potatoes are cooked with lemon, which is not typical but very good. Often they are cooked with ham or bacon. Try the Banana pudding even if you don't generally do that sort of thing. Definitely come visit and try it all. The tea is constantly refilled and they will ask you if you want a to go cup for more tea.

Grits are made of the large-kerneled hominy, which is a white corn. It's an Indigenous food and used also in Central American cuisine. It is like polenta. I make my fish and chips with bread crumbs. I like cod, halibut, flounder when I prepare fish and chips. The texture and consistency is great.

Everyone loves my breaded chicken tenders. I don’t do anything special but they rave about them. Some chicken (slice it how you want but I just buy the fresh tenders already cut) Italian seasoned bread crumbs and flour (about 2/3 bread crumbs to 1/3 flour mixed together) I add in more Italian seasoning, garlic powder and a little bit of onion powder. Whip up some eggs. Put the chickens in the egg and then the bread crumbs and fry in some vegetable oil. That simple.

Collards are usually boiled with a 1/3 cup of vinegar & 3 cups water b most southern Cook's will add smoked turkey leg bones or some (1/4 lb smoked bacon ) vinegar tends to draw a out the bitterness. You can spritz lemon juice right before serving.

One thing a southerner that was raised right will do...feed you. We will keep offering food and drinks til you accept something, so just give in and eat. My mawmaw made the best fried chicken, an iron skillet is a must. All the best to you and yours!

I usually will try a meal I never had before, except seafood. I'm highly allergic to it. An ex boyfriend brought me a meal one time that his mom cooked specially for me. He wouldn't tell me what kind of meat I was eating. It looked delicious. Had lots of nice brown gravy on the potatoes. I knew from the first bite that I never ate that before. One month later he told me what I was eating. It was Possum. I got so mad at him. He knew I would never eat it had he told me from the beginning what it was. We don't eat creatures like that in Germany. At least not to my knowledge. After he had told me, I actually got sick to my stomach. I couldn't stop vomiting. Americans pulled stuff like that on me quite often. I never understood why they done it. When I got to vomiting, they were screeching with laughter. Guess that amused them, but it sure didn't me. I thought it was very rude. After that, I refused to eat unless they told me what it was. I absolutely didn't trust any of them anymore and I would polity refuse the invite. They all promised me that they wouldn't do that to me anymore. I still would not trust them and stayed away from them.

The collards are from the kale family. The catfish is a bit stronger flavor than other fish. It was rolled in a corn meal batter. or just corn meal.

Grits is a porridge of ground hominy, not regular cornmeal. On its own it really doesn’t have a flavor, but it absorbs the flavor of the other ingredients.

Texas recipe for Sweet Hot Pickles (if anyone is interested) Drain the pickle juice from a 1 gallon jar of sliced pickles. In the jar with the pickles, add a bottle (5 oz) of hot sauce, an entire (4 to 5 pound) bag of sugar and 4 whole cloves of garlic. Put the lid back on and shake, to mix. Leave closed for 7 days. Every day shake and flip jar. Enjoy! 😊

Southerner here, collards ARE in the kale/brassica family and frankly, if grown correctly and cooked correctly, they shouldn't be sour or bitter. That's my only complaint with this video. Greens like cooler weather like Spring and Fall in the South because heat makes them get bitter. Also, you cook them with a ham bone or smoked turkey necks and THAT is how you make actual Southern greens. Some restaurants try to get fancy with it or change things up, but I promise, they don't need it. A small note on a word they used- homely. In the US, homely means someone not very attractive. The word we use to describe something that's like a dish your mom makes/comfort food/cozy is HOMEY. That's what he meant when he described Sweet Potato Pie, which is actually delicious, even if you aren't a sweet potato fan. It's very much a custard type pie and very smooth.
