Queso = Cheese in Spanish. In Tex-Mex it specifically refers to Melted Cheese which is usually a Blanco (White) Cheese. As much as you loved the Texas BBQ video, and you say you haven't had Tacos before your first trip to the U.S. should be to here in Texas! Austin for the BBQ, San Antonio for the Tacos/Tex-Mex, and then here to Houston to dive in to the Seafood, and Cajun/Creole food! BTW I had Enchiladas yesterday for lunch, and Tamales this morning for Breakfast.

Simple, idiot-proof starter queso recipe, available almost in *any* country. You'll need: 1 block of processed cheese. Velveeta or its equivalent. White or orange, doesn't matter much. 1 can of Rotel. (Or canned tomatoes and some diced, pickled jalapeno slices) Milk. Thats it. Cube the cheese, add a bit of milk, and heat on low til the cheese melts. Add the rotel. Adjust the thickness by adding more cheese or milk, and you're done. It should be a bit runny hot, and a bit gelatinous cold. Thats the consistency sweet-spot.

There are several types of mole (pronounced mole-aye) sauces, each complex and delicious in it's own right. Mole's can be so sacred there are families who have been passing down the last bit of each mole to start the next one (much like a baker uses sourdough starter to make the next batch) for over a century. Edit: When Josh was talking about the mole being a chocolaty sauce, he just picked up on the one ingredient that people don't expect to be in it unless they know. Mole Negro (one of the many types) is made with peppers, spices, tomatoes, nuts, fruits and seeds as well as a small amount of dark chocolate. Several chilis in the USA are also made with a small amount of dark chocolate.

i was born in Texas, and raised in a Tejano community. Tejanos are people of Mexican (or mixed Mexican/Native) descent who have lived in the Texas area for hundreds of years. many still speak spanish at home. the first person to hold me other than a doctor, nurse or parents was Abuelita Riojas. i tell you all this for a reason... this food (i refer to it as "Texican") is my comfort food. when i am feeling sick or homesick, this is what i crave." it's not simply a cuisine. it's a community, a mindset, a way of life. but the food itself is a good way -- a first step -- to begin understanding the people better and open doors for better communication.

The green sauce (salsa verde) is made from tomatillos and is delicious. Here's the Wiki first paragraph: The tomatillo (Physalis philadelphica and Physalis ixocarpa), also known as the Mexican husk tomato, is a plant of the nightshade family bearing small, spherical, and green or green-purple fruit of the same name.[1] Tomatillos originated in Mexico and were cultivated in the pre-Columbian era.[2] A staple of Mexican cuisine, they are eaten raw and cooked in a variety of dishes, particularly salsa verde. The tomatillo is a perennial plant but is generally grown for agriculture each year as if it were an annual.

there is really 4 sub genres of Americanized Mexican food. Obviously you have Tex Mex, then there is New Mexican which is from New Mexico my mom was from Albuquerque so I am really familiar with New Mexican, which is really heavily influenced by The Hopi/Zuni/Navajo and other four corners indigenous peoples. Then there is Sonoran, which is more Arizonan and then southern Cali/Baja more of seafood based aka fish tacos. They are ALL good and now I want some Enchiladas Chile Rellenos and some Sopapillas right now

Seafood based Mexican food is a fraction of the Mexican food culture in CA. Yes, the idea for fish tacos was brought to San Diego by way of Baja California (south of the Mexico border) in the 1980's by a SDSU student, Ralph Rubio, who had them while on Spring Break in Baja, CA. The first Rubio's Grill was located near where I live. There are other well known Mexican seafood dishes that are also popular as well. However, Californians have been eating Mexican food long before the 1980's. My history goes back to the 60's. My parents even further back. Mexican food from different regions of Mexico has always been the standard in CA. Restaurant owners come from all over Mexico. Baja is one small region. Interestingly, you would be hard pressed to find ground beef served in any Mexican restaurant in any area of the state. I have eaten in hundreds of Mexican eateries in my numerous travels up and down the state. I've only seen it on two menus, one up in Northern CA by the Oregon border and one in SD shown only on the kids menu about 40 years ago. lol. In 60+ years I have also never seen a Mexican eatery owned, operated or staffed by anyone other than Hispanics. And, in all those years of eating Mexican food numerous times per week in both the U.S. and Mexico, I have never once seen anyone order or be served a glass of milk. Not even kids. I also find the salsas in CA spicier too. I'm a high level heat person, never came close in TX. I haven't been to New Mexico (only flyovers) but would certainly like to try their style though.

Being originally from south Texas I like my enchiladas Tex Mex. They are beefy, cheesy, with lots of onions. There’s got to be some grease on the plate. Tex Mex has slowly vanished as too many people are coming from California and other places and bringing their style in which is milder. Tacos and hamburgers are my favorite. I’d kill for a Whataburger. The guys have a video of eating there.

I grew up in San Diego and I think what I grew up eating was mostly authentic Mexican food and some Tex-Mex. I have mixed feelings about Tex-Mex restaurants because some are very cheap with using fresh ingredients obviously to keep their prices low but I can taste the difference. Depending on the dish sometimes I like Tex-Mex better other times authentic better. I also noticed I don’t see items like pozole and menudo on the menus as much in Tex Mex places. In all I prefer what either I or my friends make at home.

@@anndeecosita3586 Lots of ground beef which you don't find in CA restaurants. I'll pass on any Mexican dish made with ground beef. I find most TexMex food and salsas more tame but it might be due to preferring a high level of spice and heat. I do like some of the sauces though. But it's standard for Mexican places wherever they are located to have variations in their recipes. Just as you would find in Italian, Chinese, Indian, etc. restaurants. Just as you would find in family recipes. Every restaurant and family has their own recipe. Many of which are great and many of which are downright bad. Just need to watch KZfaq videos to see the difference, lol.

Fish tacos are my thing. Steamed or grilled soft white corn tortilla, usually two, a big greasy piece of grilled or fried ocean white fish, finely shredded raw cabagge, thinly diced raw onion, cilantro leaves, fresh chopped tomatoes or tomatillo salsa, squeeze of lime, avacado, if you like, hot sauce, sure, lots of options. I'm not too fussy. At a stand here, one and a can of soda for $5, three and a bottle of soda for $10. I like one to walk, or three to take home. So good, but I can barely eat three.

Queso is just Spanish for cheese. Generally, when they say queso in a restaurant, it's generally a melted cheese dip made with some milky white cheese and little bits of finely chopped pickled jalapeno. A mole is a sauce that takes a long time and many ingredients to do well. There are many types of mole depending on the region where they originated. One of the main mole sauces from Oaxaca (they have seven!) is rather sweet in a raisin-y sort of way. The mole from Puebla is based around mild but tasty poblano peppers. Mole blanco, or white mole, is made mostly from various nuts and is quite sneaky spicy. Some of them have chocolate melted into the sauce. Some use seeds, some use tomatillos, some use different kinds of chilis. All of them have very complex flavor.

I guarantee those green enchiladas were unbelievable, if I could have one item it would be them, but also everything they ate looked top-notch. The green sauce comes from tomatillos, which are native to Mexico, and they're often roasted and blended with peppers to make an unbelievable salsa which you see in enchiladas or on tacos. Tex-Mex is great, it's one of my favorite comfort meals. Chips, queso, and guacamole for appetizer, combo platter with green enchiladas, beans, and rice, with a margarita. Oh yea

Tacos are really easy to make and there are a thousand you tube videos showing how to make tortillas, salsa, guac, beans and rice, and how to spice the meat. Sometimes I'll buy a pork shoulder or a beef roast and cook it slowly in the crockpot and shred it and I'll have meat for tacos, nachos, whatever for a while. If you do cook tex-mex record it so we can watch. 🤘

Queso is the Spanish word for cheese... but it is also used to describe a cheese sauce or dip. Mole (I should have an accent mark on that "e") is a chocolate based sauce - think more of a spicy cocoa powder, rather than a sweet chocolate. Some moles can be very spicy - but the cocoa tends to "soften" the "mouth heat", so the flavor is excellent, but you may find yourself perspiring. The milder green sauces are often made with Tomatillos - which are related to tomatoes (nightshade), but remain green when ripe. They make an excellent and savory Salsa Verde (Green Sauce). As they show you with this video - there are very hot green chiles... if you are every in New Mexico, this is important to remember.

If you come to Texas and get the chance to go south, Austin or lower, I invite you to try some tacos from a food truck. A lot of the taco trucks around here will have incredible food and some amazing drinks! And they tend to set up in parking lots and then have their own tables and chairs, so families or groups of friends can hang out and enjoy each other and the food. And I've always felt like it was ok to ask what things were and what the cook recommended. People here open up when you're curious about food. And more often than not they'll serve you something extraordinary.

Make some tacos, my friend. They are an absolute cake walk to make. A pound of ground beef, and either some flour (not corn) soft tortillas or some crunchy hard shells. A shredded cheese of your choice (shredded cheddar is probably the easiest to get a hold of), lettuce, tomato, onions, and maybe some sour cream. Salsa is a must. My favorite is Pace Picante sauce. The seasoning isn't hard. If you can just buy some taco or fajita powder from your local grocery store that would be easiest. If not... 1/2 c. chili powder 1/4 c. ground cumin 2 tbsp. smoked paprika 4 tsp. freshly ground black pepper 4 tsp. garlic powder 4 tsp. kosher salt 4 tsp. onion powder 2 tsp. dried oregano There are other methods, obviously, but this is a good one. You can use ground beef, chicken, pork (called carnitas), or chorizo (which is a type of pork that has been fermented and smoked). Seriously, once you have the seasoning, just brown the meat and add the powder and stir until it's done as you LIGHTLY toast the soft tortillas. Toast them too hard and they won't bend and will crack. Anyway, once the tortillas are warm, add the meat and top with lettuce, onions (preferrably green/scallions), tomatoes and salsa and sour cream and enjoy😊 I HIGHLY suggest putting the sour cream on the tortilla first to avoid getting meat/grease on the spoon and putting it back in the container😒 Hope this helps. You HAVE to try tacos as soon as possible. They can be super cheap and quick if you can just buy the seasoning, or super expensive and take forever if you have to make the seasoning and the tortillas. If you have to make the tortillas, you'll need to make or buy masa which is an entirely different animal akin to making pancakes or waffles😒 You can also put black olives on them😋

When trying hot sauces for the first time, do not scoop up a lot of sauce at once. Dip only a corner of your chip into the sauce to test it’s hotness. Too much of a very hot sauce can really burn your tongue, your mouth and your throat.

When you come to the US, come to Texas! The variety of foods is unbelievable, all rich and well seasoned! Food explanations below: Texas chili is a rich, most commonly, beef based stew. It is 1 of the best things to eat when it is cold and/or rainy outside! It can range from mild to nuclear spice level, but when dive right very flavorful! Enchiladas are rolled corn tortillas (tor-tee-yas) filled with nearly anything, but most common is ground beef, shredded chicken, or melted cheese. They are then generally covered with a sauce: queso (k-so), chili, salsa verde (green sauce), or molé are the most common.

I love visiting new grocery stores that come to my city and they all have different highlights (Harris teeter for produce, Food Lion for the staples and Publix for the bakery, deli sandwiches, and the international aisle.

One thing about both Tex-Mex and barbecue here… I actually argue in favor of the big bite. It’s a better way to get the full mix of flavors and textures. But on great veggies or seafood, small bites is definitely the way to go. Edit: You’re also right, I think Tex-Mex doesn’t have the same visual appeal as barbecue, but to we who know it, it’s beautiful. The thing that sets it apart for me is that, like when they were talking about enchiladas, every dish combines flavors in a rich and delicious way that you really don’t find anywhere else. And not everyone likes everything; I am not a fan of mole or of “red” enchilada sauces, but I’m crazy for a good salsa verde or a sort of sour cream-based sauce some places do (which is often combined with salsa verde or used on seafood enchiladas). And I could eat Tex-Mex every day, because I can get a different flavor every meal, but I couldn’t eat barbecue every meal even as much as I love it.

A lot of those fruit that only grow in certain areas can/do come with a price.....RATS! My Uncle lives in Vacaville, CA. and has quite a few fruit trees in his backyard. He and his neighbors have to take extra measures to make sure that limbs come nowhere near their homes because the rats climb the trees for fruit and can enter your home via rooftop ventilation pipes.
