Kay, just as a tip (or two) for the future. If you shred the carrots or finely dice them (probably harder on your wrist, so maybe use a box grater to shred them) they’ll cook faster and more completely and will blend better with the mince and if you cook the onions at the sides of the pan, over low-to-medium heat, they’ll sautée better because onions do have a surprising amount of sugar in them that will caramelise if given time, which adds a nice breadth of complexity to the flavour. Finally, the best piece of advice I can give from watching many videos is to “not overcrowd your pan” as my father (who was a cook) taught me as a child. Your food won’t cook properly if it’s steaming and not frying or sautéeing.

I'm still teaching myself to not overcrowd the pan. It's so easy to do when you're just trying to cook efficiently (i.e. making enough for leftovers). But cooking ingredients separately when they need actual frying has been a game changer. It's the difference between savory maillard-reaction vs. everything steamed.

Chicken Bolognese sounds like a proper unusual dish, but it is always good to try something new and unusual now and again as it does make a nice change. Like, this morning on my way to work I treated myself to a Mega McMuffin from the McDonald's. I was in a right bad mood until I had that and it was my first time trying one and probably will have it a again. Fumbs up.

Chicken mince bolognese is tasty, also pork mince too. Makes a wee change from beef. All of them are very versatile and can be used for curries, chilli, pie fillings etc just chuck in whatever you feel like, veggies different beans...chickpeas etc. I like to do a chicken mince and potato curry, indian style.Was good to see you try your own food and give it the good ol' thumbs up Kay! Hope you enjoy yourself over the festive season!

Kay, I always put chicken stock in my bolognese sauce, whether tis beef or chicken bolognese. It gives the dish extra flavour the mince doesn't have. Chicken bolognese is lighter than lamb or beef.. it's so good. I totally agree :) keep cooking, Kay xo

I grew up like you with only salt and pepper. My Mum hated onions so we didn't even get them as a flavouring. Another great video. Glad you enjoyed the end result. Will you make this a regular for your family?

Always keep a bottle of white wine a side... Helps clean the pan and evaporates the water quicker! Good job Kay! Hope You two enjoyed the dinner. 🙂

We’re in 2024 and I find these videos nice because life back when these meals were made, was so much better than it is now. Anyone new commenting being horrible, when you realise our world is SO much more awful compared to seven years ago, you’ll find watching Kay’s cooking quite nice 👍

Hi Kay! This is the first chance I had to view your video and I'm so glad I didn't miss out. I really enjoyed the random and funny commentary throughout. Oh, and Lee in the background, lol. hello Kay, I am a huge fan. You don't know me but I know you very well (day 1 subscriber). I recently become a professional chef and I'm not too proud to say I've learnt mostly everything from you and your videos, I now use Oregano on literally everything now. Medium rare Chicken with salt and pepper is the only ingredients I ever need. I've never been violently sick with it. I also agree, never add the stock. Much love xx
