I have this system and I love it. It’s so quick. I’m not picky with having a perfect sharpening job. I would like to get into freehand one day and learn how to sharpen the way you do Jared. You are badass!! This system is great for quickly sharpening cheap kitchen knives. Some people complain about how difficult super steels are to sharpen and they spend like an hour on their fixed angle system. I’m not trying to spend an hour sharpening a knife.
@NeevesKnives

And thats awesome, not everyone wants to or can spend the time to sharpen and this makes easy work out of getting a sharp knife, usually it only takes an hor to sharpen what your reprofiling or taking out a massive chip, when your using the right stones 20-30 min can get you a fine edge, also the thickness of the knife makes a difference if its thin it's very quick. But i think the work sharp is a great system especially with the attachment

You can buy a leather belt for the grindiner attachment. It works great for stripping. Slap compound on it put the machine on low rpm and it will polish the heck out of your blade. The more you use this machine the better you get

Instructions say low speed with 1 inch per second strokes and stop on the tip releasing the trigger on the system to stop the belt as not to round off the tip..plus there is a chart for which belts to use..i.e. heavy grit for re profile or medium to fine grit for touch up ,and hone..,but saying and doing are two very different things I plan on testing this system out as well.

Did you profile the edge as well? or did you just sharpen the edge? If you did both then you did a good job. In my opinion a good sharp knife needs to do more than just cut through paper. It has to cut through paper with a good amount of ease to where you can hear the sound. It sounds different than other knifes and it is also able to cut in any direction such as curves into the paper without any hang ups.

The problems you’re having could have all been avoided by reading the instructions. Place the knife on the belt where you want the grind to start, turn on the machine, turn off the machine when your tip is at the mid-point of the belt. Just use your left hand to turn it on and off instead of using the trigger lock.

I actually do 17° on most of my knives, my folders are mostly all freehand sharpened. But between folders and kitchen, it does a n d doesn't, depending on what it's being used for, for instance a chopper I'd go with 20° but a good chef knife I'd go 17 or 15, but if I know IL be tough on it then between 17 and 20, if it's steak knives I'd keep it around 17 per side, but it just depends

With the blade grinder attachment if you use an Allen key you can move the back wheel to the hole that is just in front of back wheel This will make it a little firmer in sharping area. I did that and Reprofiled one of my knives to 22.5 degrees with firm belt set. It made it much easier to do. I shaved some hair and a little bit of skin on my arm to test sharpness. If got a t8 and super easy to get razor sharp with just the standard wheel set to 1000 grit. If you are freehanding the honing wheel you'll be rounding the edge probably. Also, tormek gives more of a concave than convex edge, so good for some applications, not for others.

With what I have seen you are supposed to press the on trigger when the knife is placed in and then off when the knife tip is in the middle of the belt, this stops any chance of side scratching and helps the whole sharpening, I'm no expert just what i have seen in other material about this sharpener, Great video though, Thank you

The part near the choil is a problem. However, in regards to the tip. You place the blade first, then you start the belt. You pull back about 1 inch per second. Then you stop pulling when the tip is halfway through belt, and stop the belt. Dont remove the blade, stop the belt with tip halfway and you will always have a nice tip. Once belt is stopped then you can of course take the blade out for the next pass.

The motor is fine When the spindle spins but when you try to put the attachment back together it won’t stay on…..its loose cause of the black plastic is almost sheared off. Very dissapointed

Do you think you could grind primary bevels with the attachment? I've watched a lot of videos about this unit now, nobody seems to cover this area, their marketing ploy suggests that this is a machine knifemakers could use, Would be interested to know your thoughts as I"ve just purchased the base model but can now see that the attachment is kind of a neccessity.. @@NeevesKnives … they do have the stiff belts which do deliver a flatter more V edge but it is still somewhat convex. For quality EDC folders I only use this to profile or work out chips, then go to the Precision Sharpener. Otherwise it takes all day. I wish I had your free-hand ability. I do sharpen kitchen knives on this. Fillet plus other working knives I sharpen freehand on dia-sharp plates. The lifespan of the electric motor is not mentioned. I've been searching on Google. I've watched all the reviews on KZfaq. I know on the other models the lifespan is only 30 hours wich is ridiculous in my opinion. I am working in a electric motors factory and our motors are coming back after few years just to repaint them. I just ordered this model on amazon and I hope for the best. Thanks for review.

I'm looking for a sharpener I can use to set the angle then use my Mitsumoto Sakari sharpening stone to finish. I'm a professional chef that need to keep my 50 + year old carbon steel sharp. The group I use regularly are my Japanese sushi, veg knifes and my carbon steel American knifes are valued at $3500.00 for the set. The last thing I need is brunt or a bur edge left by most power tools on one of my 500 dollar beveled edge nakiri or Yanagiba. I might give this a shot for my cheaper stainless henckels and wusthof knives you can buy today first. The only thing I didn't like is you are distorting the belt as you pull through and this would round the angle over dulling it.

Having used both parts of the Ken onion edition....I can say that your method for the blade grinding attachment was spot on...but you were way off with the standard attachment. First off you are supposed to place the knife in guide them power and pull as soon as you trigger.....if not after several sharpenings you will begin to develop a recurve...secondly you are not supposed to pull the blade fully through...you learned the hard way by rounding your tips....had you fully read the provided materials this would have been avoided. All in all it was a very good presentation on what I consider a very versatile system. I'm not saying it's the end all be all....but it's a very handy tool in ones sharpening arsenal.
@NeevesKnives
@NeevesKnives 3 жыл бұрын
I agree, also i didnt have an issue with recurving the knife but i definitely learned the hard way with the tip, however the attachment makes it very easy and its a great system for many tools and blades, my biggest issue with the basic guided system was getting to the choil, which was only possible when not using the guides, I appreciate you watching and giving some feedback

@@NeevesKnives your very welcome. I like the content so I subbed. We are a small tight knit community.....if we can't help each other what's the point. For the record, I was able to make the critique because I learned the hard way....in typical guy fashion....instructions...who reads instructions....lol Then I learned. There are so many that bash this system....if they can only take off the blinders...they can see a very useful tool. There are pros and cons to every system....some are great at a certain thing, and not so much in other areas. I once told the owner of a very popular system that I look at it this way....they are tools...it's better to have a tool and not always use it, then to need said specific tool for a job and not have it.

Thankyou we have this available in England from Amazon £225 , its a lot of money and the belts are not cheap. I agree completely with you in that if you can hand sharpen you dont need this except for the speed you can remove material. I have got a £28 silverline powerfile with 60 to 400 grit belts, which I use to get meat off knives that I want to reprofile , its good for machettes axes, everything I need to remove metal fast, then finish with stones and stropping. The beauty of a powerfile is that you can use it for many other things, sanding wood , cleaning rust and welds up, the belts are cheap and many grits available, I would love you to get one and do a review, with your knowlege and great style I think you could convert a few people and save them some money

You keep saying static is picking up the shavings. I would think that the static could easily be discharged. Is it possible the moving shavings still on the belt are aligning the magnetic poles of the iron within the knife turning it into a slight magnet? I'm not sure that made sense, but I hope you get what I'm saying. Cheers.

I personally think freehand, if your going to doit the way it should be then its two different kinds, its a convex on the tip and a v grind on the hollowed portion, but if your just trying to get it sharp and looking for a system the probably a kme but i reccomend sending it to a professional that knows how to sharpen knives like that, if your not worried about the front end being convexed and are ok with it being a vgrind then the kme will work fine
