Kogi BBQ recipe rip-off: Korean kalbi tacos

Recipe for kalbi tacos with Korean BBQ sauce and slaw.
This will yield 12-15 tacos if using normal sized corn tortillas. With mini corn tortillas (like I used in the video), it would yield about twice as many. This should easily serve 4, especially if there is at least one side dish.
Kalbi:
2 lbs. flanken ribs
1 kiwi
3/4 cup soy sauce
2 tbsp sugar
2 tbsp honey
2 tbsp sesame oil
5 cloves garlic, chopped
5 green onions, green part only
1 tbsp toasted sesame seeds
BBQ sauce:
3 tbsp sugar
2 tbsp gochujang
2 tbsp soy sauce
2 tsp sesame oil
1 tsp rice vinegar
Slaw:
2 cups Napa cabbage
3 cups romaine lettuce
1-1/2 tbsp soy sauce
1/2 tbsp rice vinegar
1 clove garlic, chopped
2 serrano peppers, seeded and chopped
2 tsp minced ginger
1/4 cup cilantro
5 green onions (white parts only)
2 tbsp toasted sesame seeds

I’ve made these several times and they always come out great. I add pickled red onions on top of each taco - tastes better than the original!

These came out perrrfect👌Just like Kogi. I didn’t have a Kiwi or Pear and ended up using an Orange for the marinade, also only let it marinade for about 7 hours, but it came out amazing. Thanks for the recipe👍

Fantastic recipe! I made this for a group of 35 friends last year and they were begging for more. Looked the recipe up again so I could make it for a Cub Scout family camp out tonight.

Great recipes! As a pan-Asian cook, over the years I've gotten quite picky with what soy sauces I use. For the most part I always use an organic tamari. It's rich and full of flavor that will definitely enhance any recipe calling for soy. It's more expensive but you'll taste where the money went. Also a tiny bit of sherry or wine will add that little extra flavor. :) Happy cooking!

this recipe looks pretty good! I'm not sure i'll deviate from my recipe though lol. 2 things that i use is brown sugar instead of white and i use ginger. The bbq sauce recipe sounds awesome as does the slaw. I WILL be making these very soon!! thanks for taking the time to make the video!

@FastJohnnyNardGard I'm glad to hear you've had success with this recipe. As far as the gochujang goes, the kind I have is really salty, and it can make the sauce a little too intense. After I made this video, I found a product at Whole Foods called Annie Chun's Go-Chu-Jang sauce. It's pretty much exactly like the prepared barbecue sauce in this recipe, and I'd actually recommend that people use it instead of buying a tub of gochujang paste.

@Christinew8 Good question. The Annie Chun sauce can be used in place of the entire BBQ sauce recipe. Quite honestly, unless you have a tub of gochujang paste on hand, I would recommend you go the easy way and use the Annie Chun sauce instead of making the BBQ sauce recipe I showed here. They taste pretty similar.

Just made this recipe for the second time a few hours ago for a work bbq. They turned out fucking amazing and they were the first thing gone. When making it, be sure to taste and adjust the flavors of the marinade and barbecue sauce. The flavor of the barbecue sauce can vary a lot depending on what kind of gochujang you're using. Some gochujang is extremely salty (avoid these) and some is hot and slightly sweet.

@ksgregerous I did a search for "Kogi spicy pork recipe," and one of the top results was a recipe for the Blackjack Quesadillas, which includes a recipe for the pork. It's a pretty interesting recipe (a QUART of gochujang??), but I'm sure it would turn out great.

@typingcomments Good question! If you use normal corn tortillas, it would make around 12-15 tacos. With little tortillas like I used in the video, it would probably be close to 30. With a side dish or two, this would definitely be enough for 4 people.

This is basically a Bulgogi-style marinade, could make this with thin-sliced beef (maybe use flank or bavette.) That is if you don't want the delicious short ribs fat! Another idea...

Gochu is the Korean equivalent of weiner... It's slang for penis, but it means pepper. Made me giggle hearing you say gochu.

@omyang Yeah, right after I made the video I watched something else and realized that I had mispronounced it. It probably comes from bulgogi/bul kogi/etc. I suppose I should have done 2 minutes worth of research before making my video, but whatever. My friends in LA called it "Koji," so I assumed that was how it was pronounced.
