Oiive Oil has low smoke point so if you use it to fry, it will smoke and burn. Sesame and Peanut oil has very high smoke point so its best for frying.

Well, in Mediterranean countries they do use it for deep frying, but yes, you have to watch the temperature. Extra virgin olive oil is most preferable if using olive oil for deep frying.

We have a wok but we only use it for the bigger meals lol. Omg jam in rice??? Splash rice with water?? Omgg I still can't believe he added water lmaoo

Hahaha wok would be ideal for that. I know that sounds sooo weird to me 😿 even though it’s chilli jam my mind keeps thinking it’ll taste somewhat sweet. 😂😂 it was congee with jam at that point

Usually fried rice need high heat, and most iron wok can withstand high heat, so some Chinese chef will added a bit of water or "Seasoned water" such as chicken stock etc. But if use pan at home there's not much heat & the ingredients like soft tofu already too wet so it's not so authentic. it's like stir fried rice.

That wet tofu probably didn't do wonders for the moisture content. Plus what was the point of adding oil to the serving bowl...? Just makes the rice slippery and fatty.

Olive oil has a very heavy, distinctive flavor, which makes it less versatile for cooking, although I suppose in his dish you wouldn't taste much anyway over the packaged brown rice and uncooked tofu. A lot of people cook with extra virgin olive oil, which you actually shouldn't do at all because the olive mass in it will burn and taste terrible.

It’s not an absolute rule, but since olives taste different depending where they grow you need to know what you’re cooking. Definitely not easy mode though. Good on salads because leaves taste boring.

many people in uk doesn't really like jamie oliver because he's a celebrity chef or what we call here pedestrian chef who only do something when there is something in it for himself and that's why gordon ramsay hate him

Packet Rice is not excusable he's a professional chef and he can recommend using pocket rice if you don't have a rice cooker but as a world renowned chef making you own rice is kind of a must

Oooh another reaction vid! My family uses a wok! I think it's definitely more of a Chinese cookware haha. The dish was definitely not an Asian dish lol. I can see it being Asian-inspired like you said though!

I no like wok. My copper cookware so superior. Wok too thin. Garlic burn to easy. Thick copper Williams Sonoma kick your thin bad heat conductor wok in bad place. Sort of kidding. Wok I like. But Willams Sonoma copper is just spectacular.

Olive oil is not traditional for Asian cooking. It doesn't really have a neutral flavor. This is coming from someone who has bought 50 usd bottles from Spain. More importantly it doesn't have the high smoke point which I bad for stir frying. There is a RoK YTer who said some women in rural areas use woks. I'm from the US, not Asian, and will date how old I am. I have used woks since 1980. Makes stir fry so much easier. Chili jam is literally red pepper jam. My mom's family was from Mexico but I really don't know what chili jam would be used for.

Interesting, interesting! Thank you for your insight! HahHa 50usd is quite a bit! Hahaha, that’s a long time using woks - I must invest in one soon 😂 Haha! Until I saw the video I didn’t know that chilli jam existed! Maybe I’ll see more of it around since I know about it, haha.

Cynthia Cho BTW I think you're right about rice cookers. I can't justify the investment, although I used a friends. I just use a small pot. It's not the difficult if you do everything consistent. Also for many dishes from Latin America you toast your rice before cooking it. Not sure how you'd do that in a cooker.

I have tasted chili jam once on toast its actually good, my co-worker shared it with everyone but that was like five years ago unfortunately the company got sold and they layoff the production departments and others except engineering and accounting

I'm Viet...and I have 3 woks of different sizes. I even have a tiny one, like 8 in/20cm,...but I usually use it as a pot. It's actually too small for the wok hay...but it was cute, so I bought it. 😆

Olive oil is not made for high heat as it burns. It is a terrible choice for stir fry.

here in Norway we mostly use butter for frying everything :P we have those boil-in-bag rice, but i hate them, i ALLWAYS use propper rice in a pot and boil it, i allso mesure the water using the finger method my mother taught me to do it when i was very young, and her mother taught her, not sure why it's seen as a white people thing to not know it :P i think that modern people in the west in general doesn't know how to cook in general. when i lived at the dormatories at school i used to get paid by other students to bake and cook for them, mostly the girls wanted me to make them things, the other boys just wanted to pay me to do cleaning, washing cloths, ironing, hoovering and dusting, long story short, i made allot of money at school :D

I'm American and not a famous chef like this guy and even I know how to prepare this dish, and I have a wok too! Not like Gordon Ramsey though, who Uncle Roger calls "wok fuck boy" because he has 2 woks hahaha :)

Wok cooking is high temperature and olive oil can burn and taste bitter. Peanut oil has a high temp smoke point and won;'t scorch when cooking with a wok. ....Breaking up tofu is some imaginary hip Asian fusion rubbish. It is just so White...Kamsahamnida!

Hey Cynthia, just to tell you, a wok is somewhat a more rounded version of the saucepan. Many Asians, especially the chinese likes to use the wok because it makes it more easier for the chefs using it to toss the food more easily

If you camp with a wok and are slightly out of range you can use it as a parabolic antenna. Just put phone on speaker and place about 4 inches from the wok and aim at the tower.

Olive oil is not supposed to be used for high temp cooking due to lower smoking point. So for stir frying you'll typically see vegetable oil or sunflower, peanut, sesame and so on. Btw I heard from a japanese guy that adding tofu is also not a good idea. Apart from breaking it up, tofu will add extra moisture to the rice which is the last thing you want for egg fried rice.

I'm outside Seattle so I'm sure this is NOT traditional. For tofu in fried rice I'd microwave extra firm tofu then fry the tofu. Or that pack of deep fried tofu sliced as shown in the video. Either case they would be last step. The water step can be defended as we are talking about day old rice. But not packet rice. But 100% on the oil issue. On my counter I have 3 bottles of oil. You have the fine olive oil, and the seasoned olive oil (dried garlic, oregano, onion, parsley). Then we have the coconut or avocado oil. I have many more put away but many recipes call for "vegetable oil" which is just a way of saying high temp oil.

@@mattzukowski1207 In the end you can do whatever you want with your food, the issue with JO was that he's a chef and he implies this is the asian dish but doesn't specify he's doing his own thing to it, no matter how weird that is. I've only ever had tofu in stews, but frying it is still way better than leaving it moist from the juice box as in the video. What do you mean the water step can be defended? You're not supposed to put in water while it's stir frying, and the whole point of using day old rice is that it's almost dry. Did I misunderstand?

@@mattzukowski1207 Hmm interesting. I wonder if this is supposed to act like when you make Nurungji(korean). You sprinkle water to make the rice that sticks to the pot harden quickly making a crust. Considering restaurants use woks and high temps, this water probably has a short term effect, but this def won't work with a regular pan and olive oil.

Gen Z in wealthier countries in asia (Mostly east asia countries like Korea, China, Japanese, Vietnam, etc.) grew up with rice cooker. They had never cook with a pot their entire life. But cooking with pot is completely normal. Just that cooking with rice cooker is way more convinient. put rice + water in, press button, go do something else done.

Lol have watched so many reactions to this, and to me you might as well throw it with peanut butter to make it Americanized after he put that jam!!! As an Asian person he, and hersha’s was the most horrible; yet to me hersha’s was better minus the way the it was cooked/washed if after for the rice. Jam, breaking tofu the wrong way (MIGHT work if he fried it on the side in cubes), cooked the onion, wetting the rice as it was frying, using instant rice aka packet rice, olive oil (vegetable oil or any other is better), and so forth is just so bad.

@@CynthiaCho Use Takamaki Gold California Rice after rinsing a dozen times.Use Zoroshi rice cooker. Rice cannot have milky color in water. You so correct. Sprinkle MSG. Recipe is 1.1 cups of water to one cup of rice. That ok but not perfect. Let dried Shitake mushrooms sit in water for a long time. When water dark brown use that for the 0.1 cups of water. Make sure rice is rinsed at least 8 times. Water needs to be totally clear. I Wushu kick you if you use cloudy water. Let stand overnight. Chop baby bamboo shoots. Diagonal cut Chinese Cabbage with green onion (do not worry green onion also used as garnish). Mince bacon. So wrong, but bear with me. Render your bacon in your wok, when the wok gets very greasy drop in chopped garlic and ginger. With some red pepper. Take pinch of white pepper and sprinkle. One drop fish sauce with big spash of Tamari with a tablespoon of potato starch in measuring cup. But do not use it yet. Drop your cold Takamaki Gold Rice from yesterday in a hot wok, with cold Rice bran oil to complement bacon fat. Cold oil and hot pan does not make food stick. This bald dude on Top Chef taught me that one. Omit carrot. Seems like all fried rice has carrot but it totally sucks. Another pinch of MSG. And another Umami in a tiny amount. I will not tell you what Bonito is. If you use katshuobushi you are very brave. But possibly tasty.
