If you have a LOT of leftover egg whites, make financiers. If you have just 1 or 2 egg whites, make Langue de Chat ("cat's tongue“), a French cookie that looks like it came out of a fancy European bakery - and tastes like one too! Just one egg white makes a whole tray!
These buttery thin cookies are great for entertaining and impressing your guests. They'll never guess how cheap and easy to make these are! Sandwich them with some melted chocolate, and you have copycat Milano cookies!

Ingredients:
1 egg white (~30g)
30g sugar (2 tbsp)
30g butter, melted (2tbsp)
15g flour (2 tbsp)
15g ground almond (2tbsp)
1/2 tsp vanilla paste or extract
Instruction:
Mix everything together until fully combined. Pipe the batter out to any shape you like. Bake at 375F for 9~10 minutes.
Cookies are soft and bendable just out of the oven. You can shape them and let them cool & harden.
