Hi Crafting This ! Yes it can, but it depends on the kind of pie you want to bake .For instance if you want to go for a strawbery pie with custard underneath ( we bake some pies this way in France) that recipe might probably not be the best as the cookies may absorb the water from the custard . Yet if you want to bake an apple pie or apple cookies, simply add some apple slices on top , you can add a little sugar and very little butter or ghee and it is delicious. All this to say that this recipe is a bit more spongy than regular pie crust so beware of all kinds of toppings containing too much water . If you want to use juicy pears, you can roast them a bit in advance for the water to evaporate before baking the pie properly speaking . Those cookies can taste good with jam on top . You spread a tea or a table spoon (at your taste ) of jam or marmelade on top of the cookies ( or pie, and in that case a table spoon won't be enough of course!!! ) before baking , and then , straight into the oven.

To make your own SR flour add 2 tsp of baking powder for every 150 g of plain flour.

These look gorgeous! I tried making custard shortbread biscuits the other day.. When you'd take a bite it felt like your mouth filled with sand.. Don't get me wrong I loved eating sand when I was a kid but it was definitely not the right consistency I was looking for Definitely going to give these a shot though!
