I'm Japanese who resides in Idaho. It's so hard to try foreign and exotic domestic food here. I always thought loco moco gravy was Teriyaki type, never had an idea it was beef based brown gravy till I tried loco moco in Japan. I loved it and so did my son!!! Thanks for posting. My next destination is Hawaiian cooking. I've tried so many different nations' cooking recipes.

Not Kaua'i. Garden Island BBQ and Chinese Restaurant serves the best. Hamburger, egg, secret gravy accompanied by two scoop rice and mac salad or Kim chee. Husband waits each year for our return for #1!

Add diced onions to gravy. First person (other then me) that has a “egg only” pan (spent extra for a really good one). Aloha ❤️🤙🏼🤠

I cook the burger slower and cover. It keeps the burger more moist. Just a tip. Use you burger oil in tha gravey.

You have cooking stock and FOND. All you need to do is mix some cornstarch with some of the extra stock and bring to a boil...reduce and that's all the flavor you need. Don't add all those chemicals and preservatives from the 'envelope' of gravy DUDE!!!! What a waste of that good beef and other ingredients when you use 'envelopes'.

Oh, and stock is more potent than simple broth so you have the best there too. Then you say the 'nice' thing about the envelope is to add more if it's not thickening enough. DUDE, add more cornstarch mixed with the leftover stock...just as simple without adding chemicals and preservatives.

also look at the ingredients, so many gravy mixes have INSANE, UNNECESSARY, and UNHEALTHY salt content.

Using great beef - but then make a gravy with "gravy mix"? Are you kidding me? Why not reducing the beef stock [maybe with some mirepoix or even only golden fried onions] and then thickening it either way with corn starch slurry or even with a brown roux?

+Dominik MJ (opinionated alchemist) Don't be a snob, bro. This is blue collar comfort food, not haute cuisine. Sometimes, the oversalty imitation stuff just works in a dish.

testodude I don't get it... First: homemade stock - or at least liquid stock (and not powders) have nothing to do with haute cuisine... it is just honest and good cooking. And if you use great ingredients, I believe, that you should also "cook properly" or just a bit more simple.

Dominik MJ Sure, what you describe is "good cooking", but it takes HOURS to make stocks, labor to make roux, etc. These are "plate lunch" or "diner" dishes, probably with an 8 dollar price point. Many of the instant products are reconstituted, but they aren't terrible. How much better is basic brown gravy from scratch-- it's beef drippings, seasoning, flour, corn starch, water. How many folks make a stock for a basic American style brown gravy? Is it THAT much better than McCormick? Mine isn't. This might sound weird, but the Hawaiian palate seems very similar to the Mainland deep south palate--- lots of salt and fat seems to make them happy -- I'm a southerner, and I know that makes ME happy. :) SPAM is huge there, for pete's sake. Maybe the customers expect that kit gravy taste :). I know they sell the heck out of loco moco in hole in the wall restaurants-- I wonder if a certain gravy kit is part of the "pat" recipe. Peace

testodude I do understand where you are coming from. Yet - I just won't do this. You might want to ask yourself why Americans have the most civilisations ailments, are the most overweight etc. Off course, there are sodas - but this is not the only reason. Another part is the culinary part. Yes - this convenience products are engineered to be acceptable for the masses - however it also changes taste perception. Personally I pull of a roux in minutes and if I don't have stock on hand (I won't use cubes), I will help myself with salt, pepper and other spices to improve things. It can be just simpler... but it taste "natural and homemade".

Really dumb question..... Do people in Hawaii realise that the literal spanish translation of "loco moco" is "CRAZY SNOT"??? I'm sorry, but I just cannot get the imageout of my head of a 400 pound sweaty Samoan Sheff blowing his nose on your "loco moco".
