Here is a tip/shortcut. If you have a pressure cooker, throw the vegetables in whole for 5-10 minutes (depends on size). This helps peel them and you won't have to par boil them. It's a win/win situation.

double frying is exactly right. My mum owned a fish and chip shop when I was a kid. She always said that it really was the only way to cook the chips. It also made it faster when you were cooking it in front of the customer. My mum would par cook a huge batch of chips (not french fries LOL) and leave them on butchers paper in a pile to drain she would cover them too. SHe said it prevented them from going brown as well. Then at lunch time when the crowd came in she cooked them up at when she needed them. We alway had freshly cut potato chips when I was a kid.

I miss fish n chip shops as well as pie shops in the UK so much. My mum used to take us to get mushy peas and fish pie all the time. I was born in England and grew up in the EU, but I've lived a ton of years in the US. I'm a US citizen, but I sure miss England. I have family there, and they said it's not the same. Yup, unless you have allergy or some other dire health condition, there is nothing stopping you from eating some actual potatoes once in a while. Also, rock on! Both of these channels are great. It's funny watching this video, I'm from Denmark and we grew up learning British English in school. Americans borrow a lot of names for vegetables and other common ingredients from other languages like Spanish, which makes it extra confusing to follow recipes (Coriander/Cilantro as an example off the top of my head).

Rutabagas I’m an expert at cutting rutabagas. Use your knife just rock back-and-forth gently just to get it started inside the rutabaga then get a meat tenderizer hammer thing and slightly hit the top of it down to cut through that saves you a lot of muscle.

Of all the days to lose our electricity! A storm knocked our power out Sunday night, and we just got it back this afternoon. Imagine my delight when I found a new video from my favorite "carb"-i-ologist! You've outdone yourself again, Wes. The steam, the oven heat, placing your favorite fingers in harm's way...and as always, I SO appreciate all your hard work! I took the time to read all your adoring comments, and got the idea that maybe to achieve keto fry nirvana, you could marry several of their suggestions? I don't own an Air Fryer, but it sounds like the optimal way to bake these? What I like to do is always bake mine on metal cooling racks; which allows the air to circulate around the fries. I think what I'll try, is cut them very thinly, microwave them briefly; then bake them on a rack at a blistering hot temp? Course, that probably doesn't sound very appealing down South where it's still very warm, lol! So thanks again for all the research, baking til the sun went down, and changing the keto world; one fry at a time

Hey there! Long time viewer, first time commenter (I think?). Let me tell you about an experiment root vegetable fries that worked pretty well for me. It also sort of cuts down on the prep-time (not technically, but you'll see what I mean.) After you parboil, throw them in a dehydrator if you have one. Now, obviously, this does not cut down on time--but it does allow you to prepare a large volume that (after it has been partially dehydrated) can be refrigerated or frozen for later use. Then, whenever you want fries you take a serving out of the freezer, get it up to room temperature, oil&season, then bake. My jicama fries came out nice and crispy, no need to fry.

I commend to you roasted okra fries. Trim the stem, wash and dry throughly, oil and salt and stick them under the broiler for 20 minutes or so. Nutritional yeast flakes add umami and will improve all of these. Okra ends up crunchy and roasty on the outside with a soft interior. Their texture is very fry-like, if not the actual taste. Net carbs is like 2.5 grams per 100 grams. Remember to get the young ones so they aren’t woody.

Jan Myers Hope you enjoy it. I should point out that my broiler is a toaster oven so a full size broiler may run hotter than mine. Keep a close eye on these the first few times. That being said, don’t be afraid to aggressively roast these. Mine usually look burnt or close to it but they aren’t.

I do this alot. I also use a similar method with cut-up okra and they are amazing. After coating in oil, onion powder, paprika, garlic salt or powder, usually nutritional yeast, and salt and pepper on a baking sheet, I bake at @ 375° and sometimes finish with broiling if I'm in a hurry. So much like fried okra! Of course, this has nothing to do with French fries, but a great easy treat for okra lovers!!
@ladyflimflam
@ladyflimflam 6 жыл бұрын
Ann Parker I think of them as fries because it’s what my husband always wants with his hamburger. Also, roasting them whole gives them a crunchy on the outside, soft and fluffy on the inside texture that is much like the best French fries. Frankly, take pretty much any veg, oil it up or stir it in bacon grease, season and stick it in a rippin hot oven until it’s nearly burned and anyone who complains about this yumminess doesn’t deserve a seat at your table.

of all things I've tried cohlrabi makes the best fries substitute. I cook them in an airfrier (medium heat) with lots of ghi butter. They are not so crispy as I used to like my french fries but pretty similar to home fried potatoes :)

Hi, Wes. Another great video, so bravo!!! I'm also now a non-Keto subscriber. Unfortunately, I've been diagnosed with gastroparesis (partial paralysis of my vagus nerve). Weight loss is now actually a big problem for me. Man, I never thought I would say that! I've tried to stay keto with this disease, mainly for the cancer prevention benefits, but it just isn't working, and I'd rather eat non-Keto than to get a feeding tube, so I'm living vicariously through you and the rest of the low carb community. Please keep on making us smile! :)

Thank you so much for doing this battle! I think I would pre salt , especially the zucchini, to draw moisture out , then pat dry. Like you indicated, the best part of “Fries “ is the crunchy texture! Will certainly give them all a try! Again thanks! Another Georgian!

A bread knife can work on hard vegetables. It won't be getting much use for bread on keto. When I made fried potatoes,I would cook them first for a bit in the microwave.Then fry them in the hot oil.It sure saved time,and trouble.I think it could work for these type of root vegetables too.You'd have to experiment with the timing.Peel,slice,put it in a dish with a little water? Micro,then fry.

Same comment here. My Hungarian gramma straight from the old country salted cucumbers to get bitterness out and so cucumber salad didn’t swim in juice. Mmmmmm, Hungarian cucumber salad is a favorite except I don’t tolerate garlic anymore 😭.

I love your honesty in the way you present your videos and the credit you give to people who provide the recipes, oh and here in Scotland the rutabaga is called a turnip or "neep" posh folk call them swede and they're especially eaten on Burns night, haggis, tatties and neeps lol 😂 don't knock it till you've tried it, all the best Carol x

I made the zucchini fries, I used “low carb love” improved recipe. She dredged the zucchini in lupin flour, then the egg wash (no cream) then the ground pork rinds with Parmesan cheese and Italian seasoning. I made “Outback Steakhouse” Blooming Onion, dipping sauce. I used 2 tsp no sugar added ketchup, 2 Tablespoons prepared horseradish, 1/4 tsp paprika, 1/4 tsp salt, 1/8 tsp garlic powder, 1/8 tsp dried oregano, 1/8 tsp black pepper, 1/8 tsp cayenne pepper and 1/2 cup Mayonnaise light. Combine all ingredients in a bowl and mix well. Cover and place in refrigerator for at least 30 minutes before serving. Makes 4 servings. Each serving is a generous, almost 2oz. My app told me the macros for a serving were, 88 calories and 3.6g net carbs. It really made the zucchini fries even better. The lupin flour made them crispy. They baked at 425° for 10-12 minutes.

I've started finishing things off in the broiler ever since I read an article on the best way to cook a frozen pizza (basically cook in the oven & crisp in the broiler)...whatever you make in the oven, finish it off in the broiler for anywhere from 1-3 min (check it OFTEN & do not do something else while you wait! It can go from perfect to burnt in the blink of an eye). It makes everything more crispy...cheeses get bubbly, browning gets a crisp edge. I used to just store cast iron skillets in the bottom broiler drawer. Now I set my pan right on top of them. Try it!

Try using Kohlrabi. I add it to my homemade veggie soup and it comes out just like a potato. Theyr'e pretty small on they're own so after slicing into fry shapes it'll have the appearance of getting more bang for your buck. Side note: Google has 100g of Jicama at 4.1 net carbs, 100g of Rutabaga at 6.7 net carbs, and 100g of Kohlrabi at only 2.4 net carbs!! I should note that I've only used Kohlrabi in veggie soup but I've met people who enjoy it raw too.

There is a cheat way to get around the sogginess! Par-cook in the microwave instead of parboiling, with no water added. When they come out of the microwave, pat them very dry with paper towels, toss with oil and salt and pepper. Also key: Preheat your sheet pan in the oven at 425 degrees, then toss the oiled fries directly on the hot sheet pan (no parchment paper) and straight back into the oven to roast. They will sizzle and this greatly improves the crispiness.

The zucchini fries are great dipped in some kind of buttermilk or yogurt dill dip or ranch dip, the Hidden Valley Ranch brand that I get from Costco is delicious with them and it's 1g Carb. per Tbsp. The turnip fries or jicama would be good with a keto garlic aioli which you could also push further in flavour by adding a bit of cayenne, chill powder and a touch of cumin..

Here where I live, in Nova Scotia Canada, they sell rutabaga in the stores as turnip. I honestly hadn't seen one of those little purple guys until about 3 years ago in a specialty fruit& veggie store . I love it. We would add a bit of sugar to the water when boiling it, cubed, and mash it together with carrots. Of course thats off the table now that I'm low carb. I love jicama but its almost impossible to find here and the last one I did find I paid $8 for one about the same size that you had there.

When I do my jicama fries I boil for 20 mins, then bake at 400 for 20 mins (flip em half way), the fry them in beef tallow or lard till they crisp up. Because I put them in the oven, it helps dry them out and they don’t make the oil splatter. They also stay firmer longer
